JEWISH STYLE SWEET AND SOUR BRISKET

This is the best brisket you will ever taste. No matter who comes for dinner, they always make sure that I'll be making this brisket. It is a very traditional dish for Rosh Hashanah and Passover but it certainly is a winner any time of the year for anyone who loves very tender beef.

Jewish Style Sweet and Sour Brisket image

Steps:

  • Heat brisket in a large skillet or dutch oven over medium-high heat. Cook until browned on all sides. Stir in water, ketchup, vinegar, onions, garlic, brown sugar, and salt. Bring to a boil, then cover and reduce heat to medium-low. Continue simmering until tender, turning brisket occasionally, 2 hours and 30 minutes to 3 hours and 30 minutes.
  • Remove brisket and allow to cool before slicing the meat against the grain. Place brisket slices in a 9x13 inch baking pan or large platter and pour gravy on top. Cover and refrigerate overnight. Remove any excess fat and reheat before serving.

  • Preheat oven to 300 degrees F. Rinse the brisket and pat dry. Rub both sides of the meat with black pepper and salt. Heat a large skillet over a medium flame on the stovetop. Drizzle 2 tbsp of olive oil into the pan. Brown the brisket on both sides—it will take 4-5 minutes per side. A large brisket may overlap the edges of the skillet; you can brown it in stages, letting half the brisket overlap the edge, then adjusting it to brown the other half.
  • While brisket is browning, pour canned tomatoes, garlic, brown sugar, apple cider vinegar, and 1 ½ cups broth into a blender or food processor. Add 2 tsp of salt (or 1 tsp if using a salted kosher cut of brisket) and ¼ tsp of black pepper. Pulse till garlic is chopped small and all ingredients are combined.
  • Drizzle 2 tbsp more olive oil in the pan and add the sliced onions. Saute them over medium high for a few minutes until they begin to soften and shrink in size.

  • Heat olive oil in a large dutch oven or roasting pan on medium high heat. Salt and pepper the brisket and brown it on both sides in the dutch oven - about 5 minutes per side. Remove brisket, turn heat down to medium and add sliced onions to pan. Brown the onions, stirring frequently for about 5 more minutes. Place brisket on onions, then pour beer mixture over brisket. Bring liquid to a boil, turn stove off, cover the pan tightly with lid or aluminum foil, transfer to oven and cook for 2 hours.
  • After 2 hours, take brisket out of the oven and place the brisket on a large cutting board. Let it cool down for a few minutes, then slice it against the grain. (crucial to cut against the grain or it will be tough to chew even if it is cooked properly)
