SWEET REVENGE BROWNIES

This recipe came from a co-worker at my previous job in Newmarket. We made them again yesterday and remembered why I had written "Excellent" on the top of the recipe! Sweet Revenge Brownies image

Steps:

  • 1. Preheat oven to 300 degrees Fahrenheit. (Do not bake at a higher temperature, or the brownies will burn.) Generously grease a 9x13" baking pan.
  • 2. Combine the 6 ounces of chocolate and butter in a medium saucepan, (The pan needs to be big enough to stir in the remainder of the ingredients). Melt over medium-low heat, stirring constantly, until the chocolate is nearly melted. Remove from heat and stir until smooth.
  • 3. Whisk in the sugar until blended, followed by the eggs, one at a time. Whisk in the flour and vanilla. Fold in the mini marshmallows and chocolate chips. Pour into the prepared baking pan and smooth evenly.
  • 4. Bake for 53-55 minutes, or until a toothpick inserted in the center comes out clean. Do not over bake. Cool to room temperature and cut into squares. Store at room temperature.
  • 5. NOTE: You will have to adjust cooking time, for your oven. In our old oven it only took 45 minutes, on 300 F, to bake these; in our new oven it took 61 minutes, on 325 F.

Steps:

  • Preheat over to 350 degrees F.
  • Melt the butter, 6 oz of the semi-sweet chocolate and the unsweetened chocolate in a pan set over simmering water. Cool slightly.
  • In a large bowl, stir together (don't beat) eggs, coffee powder, vanilla and sugar. Add melted chocolate mixture and stir gently until well mixed. Cool to room temperature.
  • Sift together flour, salt, baking powder. Add to the chocolate mixture. Toss walnuts and remaining 4 oz semi-sweet chocolate chips together, and stir into batter.
  • Grease and flour a baking pan (9x9" for brownies that are thick, 9x12" for regular sized ones). Spread batter evenly in pan.
  • Bake 20 minutes in top oven shelf. Switch to middle shelf and bake another 10-15 minutes. Allow to cool before serving.

This are the easiest and most delicious brownies that I have ever eaten. They are so moist and super quick and easy to make. For best results, use a Dutch processed cocoa. For less cake-like brownies, use all-purpose flour instead of self rising.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 or 9x9 inch baking pan.
  • In a medium bowl, beat together the butter and sugar. Add eggs, and mix well. Combine the flour, cocoa and salt; stir into the sugar mixture. Mix in the vanilla and stir in walnuts if desired. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, or until edges are firm. Cool before cutting into squares.

Generously grease an 8x12-inch baking pan, or use a foil pan from the supermarket which is great for freezing or presenting the brownies as a gift. 2. Combine chocolate and butter in a medium saucepan. Melt over medium-low heat, stirring constantly, until the chocolate is nearly melted. Remove from heat and stir until smooth. 3. Whisk in the white sugar until blended, followed by the eggs, one at a time, the flour and the vanilla. 4. Fold in the mini-marshmallows and 1 cup of chocolate chips. 5. Pour into the prepared baking pan and smooth evenly. Sprinkle the remaining 1/2 cup chocolate chips on top. 6. Bake for about 53 to 55 minutes, or until a toothpick inserted in the center comes out clean. Do not overbake. Cool to room temperature. Wrap in foil and store at room temperature or freeze.   • Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan or line with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!). Set aside.
  • In a microwave-safe bowl, combine the butter and 2 ounces of chopped chocolate. Melt in 30 second increments, whisking after each, until completely smooth. Whisk in the sugar until completely combined, then whisk in the eggs and vanilla. The batter will be light brown and a little dull looking.
  • Add the cocoa powder, flour, salt, remaining 2 ounces of chopped chocolate and the chocolate chips. Fold it all together with a rubber spatula or wooden spoon. Batter will be very thick. Spread evenly into prepared pan.
  • (See note about how to tell if brownies are done in the post above.) Bake for 30 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My brownies take 31-32 minutes.
