BAKED ZITI WITH SWEET TURKEY SAUSAGE

Baked Ziti with Sweet Turkey Sausage image

Steps:

  • Preheat oven to 350 degrees F.
  • Cook pasta according to package directions. Drain and set aside. Meanwhile, cook sausage in a hot skillet over medium heat until golden brown on all sides. Add tomatoes, thyme and rosemary and simmer 5 minutes. Remove from heat. In a medium bowl, combine ricotta cheese, mozzarella cheese and garlic powder and mix well. Spoon 1/2 cup of the tomato sauce in the bottom of a 4-quart casserole dish. Top with half of the cooked ziti. Top with half of the cheese mixture. Top with 1 cup of the tomato sauce. Repeat layers (remaining ziti and remaining cheese mixture). Top with remaining tomato sauce. Sprinkle remaining mozzarella and parmesan cheese over top. Cover with foil and bake 30 minutes. Uncover and bake 15 more minutes, until cheese is golden and bubbly.

1 pound ziti noodles
1 pound sweet turkey sausage, cut into 1/2-inch thick slices
2 (28-ounce) cans diced tomatoes with seasonings (green pepper and onion or garlic and oregano, or any flavor you want)
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 (15-ounce) container regular or part-skim ricotta cheese
4 cups grated part-skim mozzarella cheese, reserve 1 cup, for topping
1 teaspoon garlic powder
1/2 cup grated Parmesan

Corny title, but I made this for my hungry (and very picky) boyfriend. He's Italian, and it's hard competing with his mother and grandmother when it comes to good pasta dishes. With this one though, he went for back for THIRDS!

Steps:

  • Bring water to a boil with 1 tsp of the olive oil. Add pasta. Cook 7 minutes, then add broccoli florets and cook another 8-10 minutes.
  • Drain (reserving water)and toss with other tsp olive oil in same pot.
  • In a small saucepan, melt butter at low-medium heat. Add flour and 1/2 of the milk, stirring constantly.
  • Add slices of cheese, one at a time, stirring after each addition.
  • Add remaining milk and seasonings. Stir and keep cooking for another 3-5 minutes. Add reserved water by teaspoons to reach desired consistency (thicker than milk, thinner than pancake batter.).
  • Pour over pasta broccoli mix, stir to coat, and serve.

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Combine 4 cups mozzarella, pasta sauce, ricotta, cream cheese, 2 tablespoons Parmesan, Italian seasoning, garlic powder, and salt in a large mixing bowl. Add cooked ziti and mix well to coat. Transfer to a 9x13-inch glass baking dish. Sprinkle remaining mozzarella and Parmesan over top, along with parsley. Cover with foil.

Baked Ziti With Sweet and Hot Italian Sausages image

Steps:

  • In stockpot, cook the pasta in salted boiling water until it just begins to soften; do not cook completely. It will finish cooking when it bakes in the oven. Drain the pasta and set aside.
  • In a large saucepan, heat the olive oil; Add sausages. If desired, the sausage casings can be removed, but is not required.
  • Cook the sausages until they are evenly browned.
  • Remove the sausage from the pan and slice them thinly.
  • Add garlic to pan and cook over medium heat just until the garlic begins to become golden brown in color.
  • Add tomato sauce to the pan, as well as the sliced sausage, mushrooms, wine and fresh herbs; mix well and bring to a simmer.
  • Cover and simmer for 15-20 minutes, stirring occasionally.
  • Preheat oven to 350°F.
  • In a 13X9-inch greased baking dish, alternate layers of the half-cooked pasta, the tomato sauce-sausage mixture, and ricotta cheese until all the ingredients are used.
  • Sprinkle the grated Parmesan cheese over the top of the dish.
  • Bake for 20-25 minutes or until the sauce is bubbly and the top is golden brown.
