BASIC SWEET PIE CRUST

Steps:
- Sift the flour, sugar and salt into a large bowl. Add the butter and shortening. Rub the fats between your fingertips and thumbs, or use a pastry blender, until the mixture resembles coarse crumbs. One tablespoon at a time, work in enough ice water just until the dough comes together, being careful not to over mix.
- Shape into a smooth ball of dough, flatten into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes, and up to two days.
WALNUT PIE CRUST RECIPE
This crust combines walnuts, cinnamon, and butter. This crust works well with all sorts of pies from vanilla cream to pumpkin. It also works well with fruit pies with precooked fillings. Since it is a crumbly crust, it even works well as a crust for a cheesecake.

Steps:
- Preheat the oven to 350 degrees. You will need one buttered, nine-inch deep-dish pie pan either a light-colored or glass pan.
- Place the flour, sugar, cinnamon, and salt in a small bowl and stir to combine.
- Place the nuts in a food processor or blender and pulse just long enough to chop the nuts finely, not into a paste. Scrape the nuts into the flour mixture and stir to combine.
- Add the melted butter and combine well.
- Press the mixture into the buttered pie pan making certain that the crust is of even thickness.
- Bake for 15 to 18 minutes or until it just starts to brown on the edges. Do not over bake. A light-colored or glass pan will absorb less heat than a dark one and help ensure against over baking.

- Preheat oven to 350 degrees F (175 degrees C)
- Roll out pie crust to 1/8 inch thick. Spread butter or margarine to cover. Sprinkle sugar and cinnamon to completely cover pie crust.
- Using a ravioli cutter, cookie cutter or knife, cut dough into desired shapes.
- Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes or until just browned.

- This will keep in the fridge for up to 5 days and up to 3 months in the freezer. (See blog post section about how to freeze the dough.)
- Place the flour and salt in the bowl of the food processor and pulse a few times. Add the butter and lard and continue to pulse until the mixture breaks down into coarse crumbs. Gradually add in the ice cold water, pulsing a few times after each addition, until the texture is such that if you take a small scoop of crumbs into your hands and pinch them they'll come together to form a dough. Be careful not to add too much water or your crust will be tough and won't be flaky.
- Transfer the crumbly pastry dough to a lightly floured work surface and use floured hands to fold the dough into itself until it's all incorporated and comes together. Work quickly to prevent the ingredients from getting warm.Form the dough into a ball. If you're using the pastry dough to make pies, cut the ball in half and flatten each half into a 1-inch thick disk. Tightly wrap each disk and refrigerate for at least 3 hours until ready to use.If you're using the pastry dough for another purpose you can flatten the whole dough ball into a 1-inch thick disk, wrap and chill for at least 3 hours before using. - This makes enough for two 9-inch pie crusts with enough excess for generous fluting and cutting out a few small shapes if desired.
