COPYCAT CHILI'S INSTANT POT BABY BACK RIBS RECIPE BY TASTY

Juicy, tender ribs in less than 30 minutes? It sounds impossible, but with the help of a pressure cooker, you'll have perfect, fall-of-the-bone ribs in no time. We replicated the flavors of Chili's famous ribs by incorporating liquid smoke in the cooking process. We also created a cheater's BBQ sauce by upgrading good-quality store-bought BBQ sauce with chipotle in adobo, orange juice, and chili powder.

Copycat Chili's Instant Pot Baby Back Ribs Recipe by Tasty image

Steps:

  • Make the ribs: In a small bowl, combine the salt, black pepper, chili powder, cayenne, garlic powder, onion powder, sugar, and white pepper. Whisk to combine.
  • Season both sides of the baby back ribs with some of the dry rub, reserving the rest for another use.
  • Add the water, liquid smoke, and apple cider vinegar to the basin of an Instant Pot. Place the rack insert in the bottom and set the ribs on the rack on their sides, spiraling around the inside of the pot.
  • Close the lid of the Instant Pot, making sure the vent is set to sealing. Select manual pressure and set the pressure to high. Set the timer for 25 minutes. When the timer goes off, turn the machine to venting to release the pressure.
  • Meanwhile, make the barbecue sauce: In a medium bowl, stir together the barbecue sauce, chipotle in adobo, chili powder and orange juice. Set aside.
  • When the ribs have about 10 minutes of cook time left, arrange an oven rack in the upper third of the oven and turn the broiler to high. Line a baking sheet with foil.
  • Transfer the ribs to the prepared baking sheet. Brush liberally with the barbecue sauce.
  • Broil the ribs for 2-4 minutes, until the sauce begins to caramelize.
  • Enjoy!

Steps:

  • Make the smoke bombs: Add the wood chips to a bowl and cover with water. Let soak for 1 hour, then drain. Place 1 cup of the damp wood chips on a piece of aluminum foil and fold into a packet. Poke multiple holes in the top with a toothpick or fork. Repeat with the remaining wood chips, creating 4 packets total.
  • Make the sauce: Add the ketchup, brown sugar, molasses, apple cider vinegar, Worcestershire, salt, pepper, and smoked paprika to a small pot over medium heat, whisking to combine. Once the sauce begins to boil, reduce heat to low and simmer for 15 minutes. Remove from the heat and let cool to room temperature.
  • Make the rub: In a medium bowl, whisk together the brown sugar, salt, pepper, cumin, onion powder, paprika, cayenne, ground mustard, and garlic powder.
  • On a large cutting board, pat the ribs dry with paper towels. If necessary, remove the membrane on the bone-side of the ribs by using a paring knife to gently loosen and pulling it up in one sheet.
  • Generously season the ribs all over with the dry rub.
  • Wrap the ribs in aluminum foil until completely covered.
  • Preheat the grill to 300°F (150°C) with the lid closed.
  • Place the foil-wrapped ribs over indirect heat and close the lid. Cook for 2½ hours, until the meat is tender and starting to pull away from the bone, flipping every 30 minutes.
  • Remove the ribs from the grill and let rest for 10 minutes. Meanwhile, carefully remove the grates and place the smoke bombs over the flames. Close the lid and let smoke build up for 10 minutes.
  • Unwrap the ribs and discard the foil.
  • Baste one side of the ribs with the sauce and place directly on the grill, sauce side down. Baste the other side, now facing up. Continue to flip and baste every 5 minutes for 15 minutes total.
  • Remove the ribs from the grill and serve with extra barbecue sauce.
  • Enjoy!

  • Preheat oven to 275˚F (140˚C).
  • Season the ribs with salt, black pepper, paprika, cayenne pepper, oregano, and brown sugar. Rub in the seasonings evenly on both sides.

Steps:

  • Preheat the oven to 300˚F (150°C). Arrange a rack in the center of the oven.
  • Using a paring knife, cut a small slit in the membrane of the ribs. Slide the blade underneath the membrane and over the bone. Lift the membrane with the knife until it tears away from the bone. Grip the released membrane with a paper towel or kitchen towel and pull away to remove.
  • Line a baking sheet with aluminum foil and arrange the ribs in the center. Season the ribs on both sides with the smoky spice blend and salt. Tightly wrap the ribs in foil.
  • Transfer the ribs to the oven and cook for 2 hours and 40 minutes to 3 hours, until the meat is tender and falling off the bone.
  • While the ribs are cooking, make the smoky barbecue sauce: In the bowl of a food processor, combine the ketchup, honey, Dijon, Worcestershire sauce, apple cider vinegar, onion, and smoky spice blend. Process on high speed for 45-60 seconds, until the onion is completely broken down. Transfer the sauce to a bowl and refrigerate until ready to use.
  • Remove the ribs from the oven and turn the broiler on high.
  • Unwrap the ribs and generously baste the tops with the barbecue sauce. Return the ribs to the oven and broil for 1-2 minutes, until the sauce is beginning to caramelize.
  • Remove the ribs from the oven and baste again with more barbecue sauce.
  • Serve the ribs with more barbecue sauce on the side.

  • Use a butter knife to cut into an edge of the rib racks. Use a paper towel to grab and lift off the silvery membranes.
  • Combine brown sugar, garlic salt, chili powder, black pepper, and cayenne pepper in bowl. Coat the ribs generously with the dry rub.

  • Combine all dry ingredients for the ribs in a medium bowl and mix well. Peel away the thin membrane from the back of the ribs (some ribs come with this already removed - see notes for more details on this). Using your hands, coat each rack of ribs thoroughly with the dry rub. Cut rack of ribs into 3-rib sections.
  • Pour chicken stock, garlic powder, and salt in the Instant Pot. Place the wire rack insert in the bottom of the pot. Arrange ribs standing on their ends in the pot. Start by placing them around the outer edge then the inner area. Turn the pressure valve to SEALED. Set the IP to Meat/Stew and set the timer for 30 minutes
  • Meanwhile, put all the BBQ Sauce ingredients into a sauce pan and bring to a boil. Turn down the heat slightly to a high simmer for 10 minutes. Remove from heat and set aside. (You can skip this step if you want to use your favorite bottled variety of BBQ sauce.)
  • When the time is up, manually release the pressure valve on the Instant Pot. Carefully remove ribs with tongs and set on a Baking sheet, meat side up. Brush the sauce on all sides of the ribs and broil for 4-5 minutes. All broilers are different so be sure to watch the ribs while they’re in the oven to ensure they do not burn. Serve with more sauce and enjoy!
