MOM'S TURKEY MEATLOAF

Steps:
- Preheat the oven to 350 degrees F.
- In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
- Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
- Remove from the oven and let rest for 10 to 15 minutes before slicing.
TURKEY MEATLOAF

- Preheat the oven to 350 degrees F.
- Heat 1 tablespoon oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and brown, about 6 minutes. Add the parsley and cook for another minute. Set aside.
- In a large mixing bowl, combine the turkey with the breadcrumbs, egg, 1/4 cup of the ketchup, cooked onion mixture, salt and pepper. Mix until fully combined. Form into a loaf and transfer to a 9-by-5-inch loaf pan. Using a pastry brush or the back of a spoon, brush the remaining 3 tablespoons of ketchup over the loaf.
- Evenly scatter the sliced onions over the loaf, drizzle with the remaining tablespoon of oil and sprinkle with salt and pepper. Bake until the meatloaf is cooked through, 55 to 60 minutes.
GROUND TURKEY MEATLOAF

TURKEY MEATLOAF WITH KETCHUP GLAZE
The original recipe for this came from Joan Lunden's Healthy Cooking. I've changed a couple things to our tastes. This is a very moist,delicious meat loaf. Its my favorite. I leave the topping off as my family doesn't care for it.

- Preheat oven to 350 degrees.
- Place oatmeal, milk and turkey in a large bowl. Mix well.
- Add egg white, onion, garlic, bell pepper ( I use both kinds), ketchup, oregano, cumin and salt and pepper.
- Mix well.
- Place mixture in a 9 x 5 loaf pan. Press into pan and smooth the top.
- Bake in the preheated oven for 40 minutes.
- While it is baking, mix topping.
- In a small bowl, stir together the brown sugar, ketchup and dry mustard.
- Remove the meatloaf from the oven after 40 minutes.
- Drain off some of the liquid that has accumulated. You can save it to use as a gravy if you wish.
- Spread topping over the meatloaf. Bake for an additional 20 minutes or until done.
- Let stand 5 minutes before slicing.

GLUTEN-FREE TURKEY MEATLOAF WITH OATS
This is my take on a family favorite of Swedish meatballs but usually made only at the holidays. With this, it can be like that delicious taste, but any day you desire! This flavor resembles that of a beef and pork recipe somewhat and is ever so good!

- Spray a 9x5-inch loaf pan with nonstick spray.
- Melt butter in a saute pan over medium heat. Add onion and garlic and cook until translucent, about 5 minutes. Stir in Worcestershire sauce, steak sauce, and beef base. Set aside to cool a little.
- Combine turkey, turkey sausage, eggs, allspice, parsley, and stevia in a large mixing bowl. Add oats and cooled onion mixture. Mix by hand until well combined and transfer to the prepared loaf pan. Cover and refrigerate for 1 to 2 hours.
- Preheat the oven to 350 degrees F (175 degrees C). Remove meatloaf from the refrigerator.
- Bake, uncovered, in the preheated oven until no longer pink in the center, draining any liquid as it builds up, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- When the meatloaf has been cooking for about 1 hour, whisk water and gravy mix together in a small saucepan over medium heat. Add lemon juice and bay leaf and stir frequently until boiling. Reduce heat and simmer for 1 minute. Remove from the heat and let thicken, 3 to 5 minutes. Discard bay leaf and pour gravy over the meatloaf during the last 15 to 20 minutes of baking.

MOM'S BEST EVER TURKEY MEATLOAF
This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

Steps:
- Spray 9 x 5 loaf pan with cooking spray.
- Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
- Add more egg if too dry, or add more oatmeal crumbs if too wet.
- Press turkey mixture into pan.
- Bake at 375°F for 45 minutes.
- Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
- Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
- Return to oven for an additional 15- 20 minutes.
- If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
- If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

- Preheat oven to 350 degrees. In a large skillet, heat oil over medium-high. Cook bacon, stirring, until almost crisp, about 4 minutes.
