DEEP DISH LEFTOVER TURKEY POT PIE
You thought you were stuffed on Thanksgiving? Take a look at this overstuffed turkey pot pie! It 's made in a prepared pie crust filled with Thanksgiving leftovers of turkey, mashed potatoes, and gravy for ease during the holiday season. I do add more fresh herbs to this even though all was well seasoned when first served, bringing a freshness to the pie.

Steps:
- Preheat oven to 425 degrees.
- Prepare a deep pie dish by placing a the pie crust into the dish.
- Melt 3 tablespoons of butter in a large skillet and add onion, celery, carrots, mushrooms and garlic. Cook over low heat until softened, about 10 minutes. Stir in turkey, corn, peas and gravy (using enough to coat everything), to the sauteed mixture. Remove from the heat, stir in the fresh parsley and sage.
- Place filling into pie dish.
- Mix leftover mashed potatoes with milk to soften.
- Spread the potatoes over the filling.
- Dot with the remaining butter and sprinkle with seasoned salt or salt and pepper to taste.
- Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 20 - 30 minutes, or until potatoes are golden brown.

Steps:
- Spray counter lightly with non-stick cooking spray.
- Combine rolls and roll into a 10-inch circle.
- Cover with plastic wrap and let rest.
- Press leftover stuffing into a sprayed 9-inch pie plate to make a crust.
- Place peas, carrots, corn and celery in a bowl.
- Cover and microwave for 3 minutes.
- Drain and set aside.
- Melt butter in a skillet.
- Add onion and cook until onion is slightly clear.
- Combine flour, salt, pepper, celery seed, onion powder and Italian seasoning and add to onion and butter.
- Slowly whisk in chicken broth and milk until mixture is thick and simmering.
- Remove from heat. Fold in drained vegetables and turkey until well combined.
- Spoon the mixture onto the stuffing crust.
- Remove plastic wrap from dough and place dough on top of the filled pie.
- Lightly tuck dough under the edge of the pie plate.
- Cut several small slits into the crust to release steam.
- Bake at 375°F 15 minutes or until dough is golden brown.

This is my favorite pot pie to use up those holiday leftovers. I tend to make more stuffing and gravy then I need for the meal so that I can use up the leftover turkey in this way. I love the crispy stuffing crust on the top. The gravy keeps the potpie from being dry.

- Preheat oven to 350 degrees (176 celsius).
- Cook vegetable mix according to package instructions; drain well.
- Mix together turkey, vegetables, garlic powder, sage, salt and pepper in a large bowl.
- If using a bottom pie crust, line a 9 x 13 rectangular cake pan with crust; prick all over and pre-bake until light brown.
- Spoon vegetable and turkey mixture into the 9 x 13 rectangular cake pan.
- Pour gravy over the vegetable/turkey mixture.
- Top with stuffing, spreading evenly over all.
- Bake for 30 minutes or until hot and the stuffing crust is brown and crispy.

- Preheat oven to 425 degrees F (220 degrees C).
- Melt the butter in a large saucepan over medium heat. Stir in the onions, mushrooms, and garlic; cook until tender, but not browned, about 5 minutes. Stir in the flour, sage, and thyme until blended. Pour in the gravy, water, and milk, stirring to blend. Bring to a boil over medium-high heat; cook 1 to 2 minutes. - Preheat oven to 400 degrees F (200 degrees C). Line 2 pie dishes with prepared pie crusts.
- Stir corn, peas, and carrots together in a microwave-safe glass or ceramic bowl and cover the bowl with plastic wrap. Cook in the microwave until tender, 2 to 6 minutes.
- Stir corn mixture, turkey, gravy, green beans, bacon bits, parsley, sage, thyme, and black pepper together in a large bowl. Divide turkey mixture even between the two prepared pie dishes. - In a bowl, whisk together 2 cups of flour with salt. Using a pastry cutter, cut the vegetable shortening and 6 tablespoons of cold butter into the flour mixture until the butter and shortening are the size of small peas. Sprinkle on cold water, 1 tablespoon at a time, and gently gather the moistened dough together with a fork until it just begins to clean flour from the side of the bowl. Separate the dough into 2 equal-size pieces, form into rounds, and refrigerate until needed.
- Preheat oven to 425 degrees F (220 degrees C).
- Melt 3 tablespoons of butter in a large skillet over medium heat, and cook the carrots, onion, and celery with black pepper until the onions are translucent, about 8 minutes. Transfer the mixture into a bowl; set aside. Place 2 tablespoons of flour into a resealable plastic zipper bag, and toss the cooked turkey meat into the flour; shake the bag to coat. Melt 2 more tablespoons of butter in the same skillet over medium heat, and cook the turkey meat in the butter until the flour coating turns golden brown, about 10 minutes. Pour the chicken broth into the skillet about 1/2 cup at a time, and stir until the broth begins to simmer and thicken, about 5 minutes. Remove the skillet from the heat. Stir in the cooked vegetables, green beans, cream of mushroom soup, cream-style corn, parsley, and thyme until the filling is thoroughly combined.
- Roll out one of the dough pieces on a floured work surface to a circle about 11 inches in diameter, then fit the crust into a 10-inch pie dish. Pour the filling into the bottom crust. - Preheat an oven to 425 degrees F (220 degrees C).
- Place the peas and carrots, green beans, and celery into a saucepan; cover with water, bring to a boil, and simmer over medium-low heat until the celery is tender, about 8 minutes. Drain the vegetables in a colander set in the sink, and set aside.
- Melt the butter in a saucepan over medium heat, and cook the onion until translucent, about 5 minutes. Stir in 2/3 cup of flour, salt, black pepper, celery seed, onion powder, and Italian seasoning; slowly whisk in the chicken broth and milk until the mixture comes to a simmer and thickens. Remove from heat; stir the cooked vegetables and turkey meat into the filling until well combined.
- Fit 2 pie crusts into the bottom of 2 9-inch pie dishes. Spoon half the filling into each pie crust, then top each pie with another crust. Pinch and roll the top and bottom crusts together at the edge of each pie to seal, and cut several small slits into the top of the pies with a sharp knife to release steam.
- Bake in the preheated oven until the crusts are golden brown and the filling is bubbly, 30 to 35 minutes. If the crusts are browning too quickly, cover the pies with aluminum foil after about 15 minutes. Cool for 10 minutes before serving.

TURKEY POT PIE WITH LEFTOVERS
All that leftover Thanksgiving dinner but tired of just leftovers...than try this leftover turkey dinner pot pie. I use a variation of veggies depending on what we have for the big dinner (This year we used carrots, corn and and asparagus). This recipe can be made in small individual size pie pans or in a large pie pan as well. I have taken several recipes and tweaked it to my own liking. This can also be prepared in advance and frozen once assembled and baked at a later day.

- Preheat oven to 400 degrees F.
- Line bottom of pie pan with crust. (Spray with NonStick to prevent sticking).

- Preheat your oven to 475 degrees. Grab an oven safe skillet and place it on an element over medium high heat. Add butter and wait for it to melt. Next, cook onion and celery until tender. No more then 5 minutes. Stir in flour and cook until a light brown color. Around 1 minute or so. Add broth and cream and simmer until it thickens, about 7 minutes. Add shredded chicken or turkey and the peas and carrots. Stir until coated and evenly distributed throughout.
- Combine stuffing with the egg in large bowl. Mix until blended. I usually use my hands to do this. I find it much quicker. Tear off two pieces of parchment paper and place stuffing in between the two sheets. Using a rolling pin flatten the stuffing so it is large enough to cover the top of your skillet. Try and make the stuffing into a circle. Remove top piece of parchment paper and flip on top of your full skillet. Mine is never perfect, just do your best. Feel free to cut stuffing in half and then flip it on top. Whatever you think is easier. Make sure that all of the stuffing is inside your skillet and not hanging over when you are baking it in the oven.
- Turkey pot pie is the perfect dish to make the day after Thanksgiving. It uses both leftover turkey and stuffing, and our Turkey Pot Pie with Stuffing Crust recipe uses just two dishes and cooks up in less than 30 minutes. Although leftover homemade stuffing works best here, one 6-ounce box of stuffing mix, prepared according to package instructions and chilled, will suffice. For this recipe, a 12-inch oven safe skillet is the best choice.
- Bake until stuffing is a beautiful golden brown color and crisp, around 15 minutes. Serve and enjoy!
