VANILLA PUDDING SIX WAYS
Making pudding is super easy. Whip up a batch and give it one of these tasty twists.

Steps:
- Combine 1/2 cup sugar, 2 tablespoons cornstarch and teaspoon salt in a medium bowl; slowly whisk in 1 cup milk, then whisk in 1 large egg. Meanwhile, bring another 1 cup milk to a boil in a medium saucepan over medium heat. Remove from the heat and whisk in the sugar mixture. Return to medium-low heat and simmer, whisking, until thick and creamy, 5 to 7 minutes. Remove from the heat and whisk in 1 tablespoon each vanilla and unsalted butter until smooth. Add stir-ins (see below). Divide among ramekins. Cover with plastic wrap and refrigerate until set, about 2 hours.
- Mix-In Ideas:
- Gingerbread cookie:Stir in 1/4 cup cookie butter and layer with crumbled gingersnaps
- Double chocolate chip:Stir in 1/2 cup milk chocolate chips and layer with crumbled chocolate chip cookies
- Chocolate-Mint: Stir in 1/2 cup mint baking chips and layer with crumbled chocolate sandwich cookies
- Caramel crunch: Stir in 1/2 cup dulce de leche and layer with broken pretzels
- Pumpkin pie: Stir in 1/2 cup pumpkin puree and layer with crushed graham crackers
- Chocolate peanut butter: Stir in 1/2 cup semisweet chocolate chips and layer with crumbled peanut butter cookies
VANILLA PUDDING
Our smooth and creamy pudding is spiked with scraped vanilla beans and topped off with shaved milk chocolate.

- Prepare an ice bath; set aside. In a small bowl, combine cornstarch, 2 tablespoons sugar, and salt. Whisk eggs in a separate bowl until smooth; whisk in cornstarch mixture.
- Combine milk, remaining sugar, and vanilla-bean scrapings in a medium saucepan. Bring to a boil over medium-high heat. Slowly pour milk into egg mixture, whisking constantly.
- Return mixture to saucepan set over medium-high heat. Bring to a boil, whisking constantly, until thickened, about 2 minutes. Remove pan from heat, and transfer mixture to a medium heat-proof bowl.
- Whisk in butter and vanilla extract. Set bowl in ice bath, stirring occasionally, until chilled. Serve pudding with chocolate shavings on top, if desired.

Steps:
- In medium double boiler, cook sugar, cornstarch, milk and salt. When mixture begins to thicken, add part of mixture to egg yolks; mix well, then pour egg mixture back into mixture in double boiler.
- Cook until thick; take off stove, then add butter and vanilla.
- You can use as pudding and top with Cool Whip or use pudding with bananas for banana pudding You can also add 2 unsweetened chocolate squares at the beginning and make a chocolate pie or pudding.
- For butterscotch pie or pudding, use 3/4 cup light brown sugar firmly packed and 1/4 cup sugar instead of 3/4 cup sugar, then cook as directed.
- You can also make a banana plate pie with the vanilla mixture, just cook as directed.
- In baked pie shell, line bottom with bananas; pour a layer of pudding, then a layer of ba nanas, then pudding.
- You can top with Cool Whip or meringue.

VANILLA CHIA PUDDING
Chia seeds are available at health-food stores and online. They're rich in omega-3s, fiber, and antioxidants.

- Place chia seeds and vanilla pod in a medium mixing bowl, and set aside.
- Drain cashews, and rinse well. Add cashews, filtered water, the dates, salt, cinnamon, coconut butter, vanilla extract, and vanilla seeds to a blender. Blend on high speed for 2 minutes, and pour into bowl with chia seeds and vanilla pod; whisk well. Let mixture stand for 10 to 15 minutes, whisking every few minutes to prevent chia seeds from clumping (pudding will thicken quickly). Refrigerate until cold, about 3 hours.
- Discard vanilla pod. Whisk pudding. Divide pudding among 8 bowls. Top each with berries, and drizzle with maple syrup.
VANILLA PUDDING MIX
As hard as I tried I could not find a recipe for Vanilla Pudding mix that I could use as a base for other puddings or to add to other recipe's that I wanted to make, yet didn't want to buy a bunch of packages of pudding for. After 5 (yes I said 5) attempts I came up with one that was creamy enough, and tasty enough to call good. This can be made ahead...then just add a few ingredients and you have pudding. Great for gifting and camping...Higher in Calories yet low in sodium and potassium.*** NOTE*** for those missing the flavor of eggs or having problems with this setting up properly ... I found I liked it better when I added two egg yolks slightly beaten and put some of the hot mix in whipped it and added to the pudding mix as it cooked. You are right it adds to the flavor.

- Combine first 4 ingredients into a large bowl, mixing well with each addition. Pour into a food processor and process until a fine powder.
- At this stage you can put it into a jar with a good seal, label and add a card with the following instructions for gifting, or label it for your own future use.
- Over double boiler, with water to boiling stage, put 1 cup of powdered pudding mix into saucepan, slowly adding milk while you stir (I used a whisk for lighter fluffier pudding) Stir constantly for approximately 10-15 minutes or until pudding comes to thickness of your liking. Remove from double boiler, add vanilla and butter, whisk or stir until throughly blended.
- Pour into individual serving dishes and refrigerate.
- NOTE:.
- Due to DH illness I used reconstituted dry milk for the 2 c milk, this does affect the flavor slightly.

- In a medium heavy-bottomed saucepan, whisk together the sugar, cornstarch and salt. Whisk in the egg and whisk until mixture is smooth. Whisk in the milk a bit at a time.
- Place the saucepan over medium-high heat and whisk until mixture comes up to a boil (will take about 10 to 15 minutes). Let the mixture boil a full minute, still whisking, then remove from the heat.

MILKY WAY PUDDING
Wholesome pudding is enriched with bits of Milky Way bars that melt right into the creamy mixture to give a deliciously caramel and chocolate flavor.

- Cut the Milky Way bars into small pieces and set aside.
- Combine the sugar, cornstarch and salt in a medium saucepan. Slowly whisk in the milk until smooth. Stir over medium-high heat until the mixture comes to a boil.
- Whisk the yolks quickly to blend in a large, heatproof bowl. Slowly stir in half of the hot mixture into the yolks. Stir well and pour the yolk mixture back into the saucepan. Bring back to the boil and stir for 1 minute or until thickened and smooth. Remove from the heat and stir in the butter and vanilla. Reserve ½ cup of the chopped Milky Ways for garnish.
