VEGAN CHOCOLATE - ORANGE TORTE

Adapted from Vegan Chocolate by Fran Costigan, this torte is full of orange, fruity olive oil, almond and chocolate notes that will satisfy any chocoholic - not to mention it's egg-free, dairy free and a source of whole grains! The chocolate-orange ganache on it's own is to die for too, especially if you're a Terry's fan :-)

Vegan Chocolate - Orange Torte image

Steps:

  • Preheat to 350°F and line a 9" springform pan with parchment.
  • Whisk together flour, cocoa, sugar, baking soda, salt, baking powder and ground almonds.
  • In a separate bowl, whisk together the orange juice concentrate, oil, zest, vinegar, vanilla and almond extracts.
  • Pour into the dry mixture and whisk until the batter is smooth.
  • Pour the batter into the prepared pan.
  • Rotate the pan to level the batter and tap it lightly on the counter. Bake for 43 to 45 minutes.
  • Cool in the pan for 10 minutes, then invert onto a rack.
  • Sprinkle cake with 1 tbsp ground almonds and cool completely.
  • When cool, sprinkle serving plate with remaining almonds and invert cake onto it. Set aside while preparing glaze.
  • Glaze / Topping:.
  • Combine orange zest, orange juice concentrate and chocolate in a small saucepan and melt gently over low heat.
  • Stir in oil, flavoured stevia and salt.
  • Pour into a bowl and let sit 15-20 minutes to thicken before use.
  • Pour glaze over the cake and sprinkle generously with flaked almonds.

VEGAN CHOCOLATE TART

A slice of this rich, vegan chocolate tart is the perfect way to end a meal. This indulgent dessert is easy to make with just a handful of ingredients

Steps:

  • To make the pastry, whizz the flour, cocoa and icing sugar in a food processor with a pinch of salt until uniform in colour. Pour in the melted coconut oil and pulse until the mixture looks like rubble. Add 2-3 tbsp ice-cold water and pulse again until the pastry just comes together. Knead briefly on a work surface, then wrap and chill for 30 mins.
  • Roll out the pastry in between two sheets of baking parchment and use to line an 18-20cm tart tin. Chill for 10 mins in the tin while you heat the oven to 200C/180C fan/gas 6.
  • Put a scrunched-up sheet of parchment over the pastry and fill with baking beans. Bake for 15 mins, remove the parchment and beans, and bake for another 10 mins until crisp and cooked through. Leave to cool in the tin, then trim the edges with a serrated knife.
  • Measure out 100ml Elmlea Double Plant Cream Alternative and chill for later. Heat the remainder in a saucepan over a low heat until just steaming. Put the finely chopped chocolate into a bowl and pour over the hot liquid. Leave for 2 mins, then stir well to melt all the chocolate and make a smooth, shiny ganache. Add a pinch of salt.
  • Pour the ganache evenly into the tart tin, then chill for 2 hrs until set. Whisk the reserved plant cream until thickened and softly whipped. Serve the tart in slices topped with the raspberries, a dusting of icing sugar and a dollop of whipped plant cream to serve.

  • Whizz the biscuits in a food processor until they resemble sand (alternatively place them in a sealed bag and bash with a rolling pin). Transfer to a mixing bowl.
  • Gently melt the vegetable spread/vegan butter in a saucepan. Pour into the mixing bowl with the biscuit crumbs and stir through until thoroughly combined. Transfer to the tin and press down firmly using the back of a metal spoon. Place in the fridge while you prepare the chocolate.
  • Heat the cream in a medium size saucepan. When it starts to boil, remove from the heat. Stir in the vanilla extract and the chocolate. Continue stirring until the chocolate has fully melted. Taste test and add a touch more extract or some liquid sweetener, if needed.
