An Aussie variation on an old favorite. Use this to spread on fish, such as halibut or swordfish, before baking.

Vegemite Pesto image

Steps:

  • In a blender or food processor, briefly process the walnuts, Parmesan, parsley, Vegemite and garlic.
  • Add the oil and process until just combined.

1 cup walnuts
1 cup parmesan cheese, shredded
1/2 cup flat leaf parsley, roughly chopped
1 1/2 tablespoons vegemite
2 garlic cloves, peeled and chopped
3/4 cup olive oil

I have not tried this one as yet, but I am going to as soon as the weather gets cooler. I love my Vegemite, as does my family and found this in the Kraft site. Something different that I am going to give a go! It looks so quick and easy!

Steps:

  • Combine butter, Vegemite and tomato paste in a saucepan over medium-low heat until butter melts.
  • Add hot pasta and mix well until combined. Serve topped with parmesan cheese.
  • VARIATION:
  • Cook chopped bacon and or sliced mushrooms until golden, stir through pasta with fresh herbs.
