PAN-FRIED POTATOES (BRATKARTOFFELN)
A quick German favorite from leftover potatoes. The tricks to sucess are cold potatoes, a good non-stick pan and PATIENCE. - Make it a main dish by using onion and bacon or a side with potatoes only. Good with fried meat. Best use firm potatoes, others might cook to mush.

Steps:
- Cut potatoes into evenly thick slices (about 3/16 in ).
- Use a large pan that will hold potatoes in a single layer or use two pans.
- Heat oil over medium high heat.
- If using bacon and onion fry together until onion is translucent.
- Add potatoes, stir once to mix and then be patient!
- DON'T stir until potatoes are nicely golden brown on the bottom, 3-5 minutes, only check for color occasionally.
- Sprinkle with half the salt. Use less salt when using bacon.
- Turn and fry the same way on the other side until nicely gold-brown.
- You might need to add a little more oil to the pan if all the oil is soaked up by the potatoes.
- Taste with salt and pepper.
- Serve sprinkled with parsley.
VEGETARIAN BRATKARTOFFELN (GERMAN FRIED POTATOES) W/ FETA CHEESE
My vegetarian German friends gave me this recipe. I cooked this today and really loved it, though I didn't have any feta on hand so I used a little mozzarella. Still, I love feta and I'm positive the feta can only make the recipe taste even better! The vegetarian sausages, hot dogs, or vegetarian bacon are optional, but it really make the potatoes taste more authentic and gives it great flavor. You can also add Baco bits which are vegetarian. Serve with a fresh green side salad.

Steps:
- Boil potatoes in their skins until they are cooked, but not too soft (about 10-15 minutes), then peel and dice them.
- In a skillet fry the onions in oil for a minute then add the vegetarian sausages or bacon if using it. Remove the sausages and onions from the skillet and set aside.
- Fry the diced potatoes by laying the potatoes flat against the pan (you may need to use two pans if yours isn't large enough for all of them to lay flat and touch the pan) with oil and let them stand without mixing until they turn golden brown which should be after 3 or more minutes. After they turn golden brown flip the potatoes to the other side to do the same thing.
- Once both sides are golden brown, add the onions and veggie sausage or vege bacon if using it, mix and then add the feta cheese stirring only once carefully.
- Once the cheese has melted you are finished cooking the Bratkartoffeln.

GERMAN BRATKARTOFFELN RECIPE BY TASTY
Here's what you need: bacon, yellow onion, vegetable oil, yukon gold potatoes, salt, pepper, fresh parsley

- Sauté the bacon in a large pan over medium heat until golden brown, about 10 minutes. Remove the bacon from the pan with a slotted spoon, leaving as much grease as possible in the pan, and set aside to drain on paper towels.
- In the pan with the bacon fat, sauté the onions until translucent, for about 5 minutes.
- Remove the onions from the pan, leaving behind any remaining bacon fat.
- Add the vegetable oil to the bacon fat and heat over medium-high heat.
- Add the potatoes to the pan. Season with salt and pepper and sauté the potatoes until they begin to get a golden crust, 15-20 minutes.
- Return the bacon and cooked onions to the pan and toss gently with the potatoes. Sauté for another 5 minutes, until everything is heated through and golden brown.
- Transfer to a serving bowl and garnish with parsley.
- Enjoy!

GERMAN FRIED POTATOES
This is my family's favorite way to fix potatoes. My mom used to make these with steaks and a salad. Delicious!

Steps:
- Wash potatoes.
- Sometimes I peel the potatoes and sometimes I don't. It's good with skins off or on.
- Slice the potatoes into 1/8 inch thick slices.
- I take frozen bacon because it's easier to cut and cut strips with kitchen shears to get my one-inch pieces.
- Put enough olive oil in a large deep skillet (cast iron is good) to cover bottom of pan about 1/4 inch deep.
- Add all of the potatoes to the pan, along with cut up bacon which hasn't been cooked yet; diced onions, parsley and salt and pepper.
- Cook on Medium high heat, stirring and watching so that potatoes don't burn -- because they will stick to the bottom of pan as they are cooking and you will need to scrape them up as they are browning.
- You can cover the pan for the first 20 minutes of cooking and cook on low and then turn up the heat for the last 15 minutes or so in order to brown some of the potatoes.
