- Preheat oven to 350 degrees F (175 degrees C).
- Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain. Transfer drained sweet potatoes to a baking sheet.
- Bake sweet potatoes in the preheated oven until dried, 3 to 4 minutes; transfer to a mixing bowl.
- Mash sweet potatoes with a potato masher until no large lumps remain; add sugar, allspice, and cinnamon. Continue mashing potatoes until evenly seasoned; spoon into a casserole dish. Spread miniature marshmallows in an even layer over the sweet potato mixture.
- Bake in oven until marshmallows just begin to brown, 10 to 15 minutes.

Steps:
- Preheat the oven to 350 degrees.
- Lightly coat a 10 x 6 x 2 inch (1 1/2 quart) glass baking dish with nonstick cooking spray and set aside.
- Combine the sweet potatoes with 1/4 cup of the melted butter along with the brown sugar, cinnamon, nutmeg and salt in a mixing bowl and beat until very well blended.
- Add 1 cup of the marshmallows and blend.
- Transfer the mixture to the baking dish smoothing out the top with a spatula.
- Put the remaining marshmallows over the top.
- Bake for about 20 minutes or until the potatoes are very hot and the topping is golden brown.
- Remove from oven and serve immediately.

SWEET POTATOES AND MARSHMALLOWS

- Heat oven to 350 degrees F.
- In a large pot melt 2 tablespoons butter. Stir in brown sugar and water. Bring to a boil, then lower and simmer while stirring until reduced and thickened, about 10 minutes.
- Peel potatoes and cut lengthwise, then again making long quarters. Cut these into 1-inch pieces ending up with pie slice-shaped wedges. Place in a separate large pot of boiling water and cook for about 5 minutes. Potatoes should give a bit when poked with a fork.
- Drain the potatoes and arrange in a single layer in a buttered 13 by 9-inch baking dish. Pour the syrup over the potatoes; making sure it covers the potatoes. Place lemon slices on top and bake for 35 minutes, spooning syrup over potatoes twice during that time. Potatoes are done when they are tender to the fork.
- Remove from the oven, remove the lemon slices, and stir in pecans. Arrange the marshmallows evenly on top. Place back in the oven turning it up to 400 degrees F and cook until marshmallows puff up and turn brown, approximately 10 more minutes.

- Preheat the oven to 350 degrees F. Melt the butter in a large pot. Stir in the brown sugar and 1/2 cup water. Bring to a boil, then reduce the heat to medium and simmer, stirring, until reduced and thickened, about 10 minutes.
- Bring a large pot of water to a boil. Meanwhile, peel the potatoes and cut them lengthwise, then lengthwise again, making long quarters. Cut the quarters into 1-inch pieces. Boil the potatoes until they give a bit when poked with a fork, about 5 minutes.
- Drain the potatoes and arrange in a single layer in a buttered 3-quart baking dish. Pour the syrup on top, making sure it covers the potatoes. Place the lemon slices on top and bake 35 minutes, spooning the syrup over the potatoes twice during that time. The potatoes are done when they are fork-tender.
- Remove from the oven, discard the lemon slices and stir in the pecans. Top with the marshmallows. Turn the oven up to 400 degrees F, place the baking dish back in the oven, and cook until the marshmallows puff and turn brown, about 10 more minutes.
WHIPPED SWEET POTATOES

- Preheat the oven to 350 degrees F.
- Prick the sweet potatoes all over with a fork, drizzle with olive oil and season with salt and pepper. Put them in a roasting pan and roast for 45 minutes until they are very soft. Remove the pan from the oven.
- In a small sauce pot, over low heat, heat the cream with the bay leaves, then keep warm until ready to puree potatoes. Discard the bay leaves before adding to potatoes.
- When the potatoes are cool enough to handle, scoop the flesh into the bowl of a food processor. Season with salt, cinnamon, nutmeg, orange zest, and brown sugar. Add cream and 1 tablespoon of butter and puree until super smooth.

- Combine butter, cream, salt, sugar, and sweet potatoes in large saucepan.
- Cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork.
- This will take between 30 to 45 minutes.
- Take off heat and mash sweet potatoes in saucepan with potato masher.
- You can also put potatoes into kitchen aid mixer and mix.
- Stir in salt and pepper to taste.

I usually make these when I have left over mashed sweet potatoes, there quick as you can just make them up and stick them in a freezer bag until ready to use. Plan ahead, as these have to be frozen before baking.

- In a bowl, combine the mashed sweet potatoes with the egg yolks (if using) salt and melted butter; mix thoroughly.
- Divide into 12 portions (each portion will be about 1/3 cup).
- Mold each portion into a circle, and flatten Place 1 marshmallow in the center of each portion.
- Mold the potato batter around the marshmallow, leaving a small opening on top of the ball (to allow the steam from the marshmallow to escape when baking).

TWICE BAKED SWEET POTATOES WITH MINI MARSHMALLOWS
I found this in an article by columnist Pam Anderson in USA Weekend (Nov. 14-16, 2003). I made it for Thanksgiving dinner at my mother's house. Since I have have a fairly large family, I decided to double the recipe. Everyone loved it! I will definitely be making this again. It's not complicated and makes a wonderful alternative to ordinary baked potatoes or mashed potatoes. And it has the rare quality of being better the next day! So now you've got something with a bit of zip to go with all of that left-over turkey! Per Serving: 159 calories, 5g protein, 14g carbohydrates, 9g fat (4g saturated), 2g fiber, 268mg sodium (these were written at the bottom of the recipe).

- Adjust oven rack to low position and heat oven to 400°F.
- Place potatoes on a baking sheet lined with parchment paper or foil.
- Bake until fork tender, about 45 to 60 minutes.
- Let cool slightly.
- Handling the potatoes with a potholder, slice each in half lengthwise and scoop potato flesh into a blender or food processor-- for an especially silky texture, use the blender-- leaving a 1/4-inch border of flesh to support the potato skin.
- Puree scooped-out flesh, along with salt and pepper, until smooth.
- With machine motor running, gradually add both milks through feeder tube.
- Stop machine, add butter, then process until potatoes are silky smooth.
- (Puree and potato shells can be cooled, then refrigerated in an airtight container, up to 2 days. Return to room temperature before proceeding.) Spoon puree back into each shell.
- Just before baking, press marshmallows into potatoes.

- Preheat oven to 475°.
- Prick or puncture the sweet potatoes with a fork and put them each on a piece of foil large enough to wrap them inches.
- Divide the oil between the foil sheets and then rub or turn the sweet potatoes in it and wrap into baggy but well sealed parcels.
- Put them on a baking sheet or two and roast until the potatoes are soft and cooked through, approximately 1-1 1/2 hours.
- When the sweet potatoes are cool enough to handle, strip away the skin and for or squeeze and pick the flesh into a large bowl.
- Pour in any syrupy juices from each of the foil parcels.
- Add all the other ingredients except for the marshmallows, and mix together to make the mash.
- Spoon the sweet potato mash into a 13 x 9 inch baking dish; smooth the top of the mash and cover with the mini marshmallows.
- Bake in the hot oven for 10-15 minutes by which time the marshmallows will have colored on top and melted together, like a rippled, bronzed duvet (watch carefully for overbrowning).
