RIDICULOUSLY EASY QUESO FRESCO "DIP"
On a recent trip to the local Costco®, I ended up purchasing a huge thing of queso fresco, or Mexican white cheese. Not sure what to do with it, I created this modified dip that goes perfectly with any Mexican-themed meal! It's so ridiculously easy, and looks much more refined than classic chile con queso. Serve with tortilla chips and enjoy! Reheat as needed.

Steps:
- Slice queso fresco in half horizontally, creating 2 rounds. Transfer to a shallow microwave-safe baking dish.
- Spread salsa evenly over queso fresco and pour any residual juices around the dish for the queso fresco to marinate in. Top with cilantro, jalapeno, and hot sauce. Cover with plastic wrap and let marinate, at least 2 hours, preferably longer.
- Heat queso fresco in the microwave until slightly softened, about 3 minutes.

QUESO BLANCO MEXICAN WHITE CHEESE DIP
This is a white dipping sauce served in many restaurants with chips or hot flour tortillas for dipping. This is a basic recipe that uses '"jack" for the Tex-Mex version and chihuahua and/or asadero for the more traditional Mexican version.

WHITE QUESO DIP
Have you ever been to a mexican restaurant or burrito joint and tried that tasty white cheese dip? After much experimentation, I finally have a recipe that is on par with the cheese dip you can get there, and you're sure to love it too. This beats anything you can buy prepackaged in a store! If you do not have a double boiler, you can improvise by using a metal mixing bowl over a saucepan.

- In a double boiler on low heat (enough to keep a gentle boil), add the cheese and some of the half and half.
- Stir mixture until cheese begins to evenly melt, adding half and half to result in the consistency you desire. (It should be thin enough to flow well, but thick enough to stay on a chip).
- Add diced jalapenos to mixture, according to your preference. If they are from a jar, add a teaspoon or two of the juice as well.
- Begin to add the spices. Start with the cumin and black pepper. Add red pepper gradually, tasting along the way. A little goes a long way, so be sure you don't make it too hot. I use a bit more than 1/4 tsp, you may use more or less.
- Add a pinch of chili powder, and serve hot with tortillas or chips.
- Leftovers can be microwaved (add more half and half or water to keep consistency). Don't worry about yellowing from day to day (due to spices/cheese), it will be good for 4-5 days.

- Transfer the queso dip to a warm serving dish. Top with cilantro, jalapeno and red onions. Serve with tortilla chips.
WHITE CHEESE DIP (QUESO BLANCA)
My husband and I had this incredible cheese dip at a local mexican restaurant. We asked what ingredients were in the dip and they would only tell us a few. So, we made this up...it's almost exactly the same! SO GOOD!! Don't skip the jalapeno juice, it doesn't add any heat in this ratio, just taste--it tastes so much better with it than without it.

- In a large sauce pan, combine cream cheese, mozzarella and quesadilla cheese. Add whipping cream.
- On medium low heat, melt cheeses until smooth.
- Add sour cream, parmesan and jalapeno juice. Stir until combined and completely smooth.
- Remove from heat, store in an airtight container in the refrigerator (it will need to be reheated in the microwave and stirred to combine again if left in the refrigerator before eating).
- Delicious with chips, quesadillas, pizza, or macaroni and cheese!
