Chocolate Cake with Caramel Irish Cream Buttercream and Dark Chocolate Ganache image

Steps:

  • For the chocolate cake layers: Preheat the oven to 350 degrees F. Line two 8-inch round cake pans with parchment, then spray with nonstick baking spray.
  • In the bowl of an electric mixer fitted with the whisk attachment, sift together the flour, sugar, cocoa, baking powder, baking soda and salt. Add the butter and coffee and mix on low speed until the butter "grabs" a lot of the dry ingredients--otherwise you will have a poof of cocoa powder and flour to contend with! Turn the speed up to medium and mix until well blended, about 1 1/2 minutes. Scrape down the sides of the bowl. Turn the mixer to low and add the eggs one at a time, mixing just until each one gets incorporated. Scrape down the bowl, add the vanilla and mix a little longer, 10 to 15 seconds.
  • Pour the batter into the prepared pans. Bake until a toothpick inserted in the centers comes out clean, about 40 minutes. Cool on racks for 10 to 15 minutes, then invert onto plastic wrap and wrap well. Place in the freezer for 8 hours or overnight. When ready to use, thaw at room temperature, still wrapped, for 1 hour before cutting.
  • For the caramel Irish cream buttercream: Place the egg whites and sugar in a metal bowl and set over simmering water. Whisk constantly until the sugar dissolves and the mixture is very thin and warm. Remove from the heat and pour the sugar mixture into the bowl of a stand mixer. Whip on high speed until stiff peaks form, about 5 minutes. Turn to low speed and continue to whip until the bowl is cool to the touch.
  • Turn the speed to medium and beat in the chunks of butter. (The mixture may appear curdled at first, but continue beating and it will come together.) Add the vanilla extract, then the liqueur and a little bit of the dulce de leche until it achieves a creamy texture.
  • (If your buttercream has sat for a while and lost its creamy texture, re-beat it before using.)
  • For the dark chocolate ganache: Place the chopped chocolate and cream in a medium microwave-safe bowl. Microwave on high power for 1 minute. Stir thoroughly with a fork or whisk, then microwave on 50-percent power for 1 minute; stir again. If there are some chunks in there, allow to sit for a few minutes, then re-stir. If necessary, continue with one or two more 15-second intervals at 50-percent power, being careful not to overheat the mixture. Add the vanilla if using.
  • Spray a piece of plastic wrap with nonstick spray, then cover the bowl, with the sprayed portion pressed directly against the surface of the ganache to prevent a skin from forming. Allow to sit until completely cool and set.
  • Assemble the cake: Use a serrated knife to cut the cake layers horizontally into 4 layers total. Smear a little buttercream on a serving plate, then top with a cake layer. Spread some ganache on the first layer, then spread some buttercream about 1/4-inch-thick on top of the ganache. Spread some buttercream on a second cake layer, then invert it to top the cake layer on the serving plate (buttercream will face buttercream). Repeat with the remaining layers of cake, topping each layer with ganache and then buttercream, and covering with a layer spread with buttercream, buttercream-side down. Once you have topped the cake with the last cake layer, use an offset spatula to smooth out any icing squishing out of the sides of the cake. Coat the entire cake with a thin layer of ganache for a "crumb coat." Place the cake in the refrigerator for about 20 minutes to firm up. Ice the cake with the remainder of the buttercream. Serve right away, or keep chilled. Allow the cake to come to room temperature before serving.

  • Break the white chocolate into pieces.
  • Preheat oven to 325°.
  • Lightly butter a 9-inch springform pan with 2 3/4-inch-high sides.
  • Finely grind the graham crackers, pecans and sugar together in processor.
  • Add the butter and blend, using on/off turns.
  • Press mixture on bottom and 2 inches up sides of the pan.
  • Chill for 20 minutes.
  • Prepare the filling: With a electric mixer, beat cream cheese and sugar in large bowl.
  • Beat until smooth.
  • In a medium bowl whisk eggs, Baileys and vanilla extract just until blended.
  • Beat mixture into the cream cheese mixture.
  • Finely chop the white chocolate in processor using on/off turns; add to cheese mixture.
  • Pour filling into crust.
  • Bake until edges of the filling are puffed and dry looking and center is just set, near 50 minutes.
  • Let cake cool on rack.
  • Make topping: Mix sour cream and powdered sugar in small bowl.
  • Spread topping onto cake when cooled; sprinkle chocolate over.
  • Place pecans around edges of cake.
  • Refrigerate until chilled, overnight or 6 hours.

Steps:

  • Turn the heating pad covered with a kitchen towel onto high heat.
  • In a small saucepan, scald the heavy whipping cream. Remove from the heat and add the white chocolate. Stir until all of the chocolate is melted and then add the Irish cream liqueur and stir again. Pour into a piping bag and lay on the heating pad to keep warm.
  • In a microwave-safe container, melt the dark chocolate on high in 30 second increments, stirring in between until the chocolate is completely melted. Pour the chocolate into the candy molds to coat and tip over to drain off the excess chocolate to create a chocolate shell. Place the molds in the freezer for 2 minutes to harden. Remove the molds from the freezer and fill just shy of the top with the white chocolate-Irish cream mixture. Reheat the left over dark chocolate in the microwave until melted and place in a piping bag. Pipe the dark chocolate over the top of the mold and shake or tap to level. Place the molds back into the freezer for 3 minutes. Turn over onto wax paper and pop out the candies from their molds. Store at room temperature.

Irish Cream Chocolate Mousse Cake image

Steps:

  • Mousse:
  • Whisk eggs and sugar in large metal bowl. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water) and whisk constantly until candy thermometer registers 160°F., about 5 minutes. Remove bowl from over water. Using electric mixer, beat egg mixture until cool and very thick, about 10 minutes.
  • Place chocolate in top of double boiler over simmering water; stir until melted and smooth. Remove chocolate from over water. Cool to luke warm.
  • Combine cream and Irish cream liqueur in medium bowl; beat to stiff peaks. Pour luke warm melted chocolate over egg mixture and fold together. Fold in cream mixture. Cover and chill until set, at least 4 hours or overnight.
  • Syrup:
  • Combine sugar and water in small saucepan. Stir over low heat until sugar dissolves. Increase heat and bring to boil. Remove from heat. Mix in whiskey. Cool. (Can be prepared 1 day ahead. Cover and let stand at room temperature.)
  • Cake:
  • Preheat oven to 350°F. Butter 9-inch-diameter springform pan with 2 3/4-inch-high sides. Line bottom with parchment paper. Using electric mixer, beat eggs, sugar, espresso powder and salt in large bowl until mixture thickens and slowly dissolving ribbon forms when beaters are lifted, about 8 minutes. Sift 1/3 of flour over and gently fold into egg mixture. Repeat 2 more times (do not overmix or batter may deflate.)
  • Pour batter into prepared pan. Bake until tester inserted into center comes out clean, about 35 minutes. Cool cake completely in pan on rack.
  • Run small sharp knife around pan sides to loosen cake. Release pan sides. Turn out cake. Remove pan bottom. Peel off parchment. (Can be prepared 1 day ahead. Wrap cake in plastic and chill.)
  • Assembly:
  • Using serrated knife, cut cake horizontally into 3 layers. Place bottom cake layer on platter. Brush with 3 tablespoons syrup. Spread 2 cups mousse over. Top with second cake layer. Brush with 3 tablespoons syrup. Spread 2 cups mousse over. Top with third cake layer, cut side down. Brush with 3 tablespoons syrup. Spread remaining mousse over top and sides of cake. Refrigerate cake while preparing chocolate bands.
  • Chocolate Bands:
  • Line large baking sheet with foil and set aside. Place another large sheet of foil on work surface; top with waxed paper strips, spacing apart. Stir chopped semisweet chocolate and vegetable shortening in heavy small saucepan over low heat until melted and smooth. Pour half of melted chocolate down center of each waxed paper strip. Using metal icing spatula, spread chocolate to cover strips evenly and completely, allowing some chocolate to extend beyond edges of paper strips. Using fingertips, lift strips and place on clean foil-lined baking sheet. Refrigerate just until chocolate begins to set but is still very flexible, about 2 minutes.
  • Remove chocolate bands from refrigerator. Using fingertips, lift 1 band from foil. With chocolate side next to cake, place band around side of cake; press gently to adhere (band will be higher than cake). Repeat with second chocolate band, pressing onto uncovered side of cake so that ends of chocolate bands just meet (if ends overlap, use scissors to trim any excess paper and chocolate). Refrigerate until chocolate sets, about 5 minutes. Gently peel off paper. Refrigerate cake.
  • Chocolate curls:
  • Line baking sheet with foil. Unwrap 1 square of chocolate. Place chocolate on its paper wrapper in microwave. Cook on High just until chocolate begins to soften slightly, about 1 minute (time will vary depending on power of microwave). Turn chocolate square onto 1 side and hold in hand. Working over foil-lined sheet, pull vegetable peeler along sides of chocolate, allowing chocolate curls to fall gently onto foil. Form as many curls as possible. Repeat process with remaining chocolate squares. Place curls decoratively atop cake, mounding slightly. (Can be prepared 1 day ahead. Refrigerate cake.)
  • Sift powdered sugar over chocolate curls before serving cake.

For Mousse:

Chocolate Stout Cake with Irish Cream Frosting image

Steps:

  • For the chocolate stout cake: Preheat the oven to 375 degrees F. Grease a 9-inch round cake pan with the room temperature butter, then line it with parchment paper.
  • Whisk together the flour, granulated sugar, cocoa powder, baking soda and salt in a large bowl. Combine the stout, melted butter, vanilla extract and vinegar in a separate large bowl and mix well. Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out with a few crumbs, 30 to 40 minutes. Transfer to a wire rack and let cool completely.
  • For the Irish cream frosting: Beat the cream cheese in a large bowl with an electric mixer until smooth, about 1 minute. Add the confectioners' sugar and mix on low speed until smooth and combined. Add 1 tablespoon of the Irish cream liqueur and mix until smooth and spreadable, 2 to 3 minutes. You can add another tablespoon of liqueur if needed to get the right consistency--it should be smooth but still thick enough to spread.
  • Remove the cake from the pan and spread the frosting on top. Use a vegetable peeler to shave the chocolate over the top. Serve.

  • Cake: Sift dry ingredients together.
  • Beat egg, oil, buttermilk, liqueur, coffee together.
  • Add to the dry ingredients; beat together for about 3 minutes.
  • Pour into greased/floured 10" springform pan or 9x13 pan.
  • Bake at 350 for 35 to 40 minutues for the springform or 25 to 30 minutes for the 9x13- or until done.
  • Cool.
  • Frosting: beat ingredients together until stiff.
  • Turn cake out onto a plate and frost with whipped cream mixture.
  • Sprinkle with chocolate curls.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl, mix together the cookie crumbs, confectioners' sugar and 1/3 cup cocoa. Add melted butter and stir until well mixed. Pat into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes; set aside. Increase oven temperature to 450 degrees F (230 degrees C).
  • In a large bowl, combine cream cheese, white sugar, 1/4 cup cocoa and flour. Beat at medium speed until well blended and smooth. Add eggs one at a time, mixing well after each addition. Blend in the sour cream and Irish cream liqueur; mixing on low speed. Pour filling over baked crust.
  • Bake at 450 degrees F (230 degrees C) for 10 minutes. Reduce oven temperature to 250 degrees F (120 degrees C), and continue baking for 60 minutes.
  • With a knife, loosen cake from rim of pan. Let cool, then remove the rim of pan. Chill before serving. If your cake cracks, a helpful tip is to dampen a spatula and smooth the top, then sprinkle with some chocolate wafer crumbs.

  • Preheat oven to 375°F
  • Grease and line 8-inch cake tins.
  • Sift flour and salt into a mixing bowl. Melt chocolate in a bowl placed over a saucepan of hot water.

  • Heat oven to 350°F (325°F for dark or nonstick pans). Spray 2 (9-inch) round cake pans with cooking spray.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 10-inch fluted tube pan (such as a Bundt®) and coat inside of pan with unsweetened cocoa powder.
  • Beat cream cheese, confectioners' sugar, 1 egg, and Irish cream liqueur in a bowl until smooth and creamy. Set aside.

The cake layers are made with white chocolate and whipped cream and flavored with almond extract. The frosting is a white chocolate buttercream. For an exquisite change of pace, substitute raspberry wine cooler for the water in the frosting.

White Chocolate Cream Cake image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - (8 or 9 inch) round pans.
  • In a double boiler, over lightly simmering water, melt 3 ounces white chocolate, stirring occasionally, until melted; set aside and cool to lukewarm. In a small bowl, mix flour, sugar, baking powder and salt; set aside. In a large chilled bowl, whip heavy cream until stiff peaks form; set aside.
  • In a large bowl, beat eggs or about 5 minutes, or until light and lemon colored. Beat in 1 teaspoon almond flavoring and melted white chocolate. Fold in whipped cream. Fold in flour mixture, about 1/2 cup at a time. Pour batter into prepared pans.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • To make White Chocolate Frosting: In a large bowl, heat 3 ounces white baking chocolate over low heat, stirring occasionally, until melted; cool to lukewarm. In a medium bowl on medium speed, combine melted white chocolate, confectioners' sugar, butter, water and 1/2 teaspoon almond extract. Beat until smooth and of spreading consistency.

Steps:

  • Preheat oven to 450F and lightly butter four (4 oz.) ramekins.
  • Place butter and chocolate in a medium glass bowl; microwave on HIGH for about 2 minutes, stirring twice, until butter and chocolate are melted.
  • Add eggs, sugar and liqueur; beat with electric mixer until foamy.
  • Beat in flour until just combined.
  • Pour equal amounts of batter into ramekins; bake for 8 to 10 minutes or until set around the edges and soft in the middle.
  • Let stand for 5 minutes, then invert onto 4 small plates.
  • Pour 2 Tablespoons liqueur around the edge of each, if you like.

Steps:

  • Cut each sponge cake into small squares.
  • Whip cream and icing sugar together until soft peaks form.
  • Place mascarpone in a large bowl and fold cream lightly through mascarpone until well combined.
  • Line the base of 4-6 serving dishes (or a shallow 1 ltr serving dish) with half the sponge; drizzle with half the Irish cream and spread the mascarpone mixture over sponge.
  • Sprinkle with half the combined white and milk chocolate and half the mixed berries.
  • Repeat layers, cover and chill for 3 hours or overnight.
  • To serve sprinkle trifle with any remaining berries and chocolate curls; accompany with cream if desired.

Guinness® Chocolate Cake with Irish Cream Frosting image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  • Pour stout beer into a large saucepan over medium-low heat. Add 1 cup sliced butter; heat until butter is melted, about 5 minutes. Whisk in white sugar and cocoa powder until dissolved. Remove from heat.
  • Mix sour cream, eggs, and 1 tablespoon vanilla extract together in a bowl. Stir into beer mixture. Whisk flour and baking soda into the beer mixture until batter is smooth; pour into the greased pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 60 minutes. Run a knife around the edge of the cake; cool to room temperature on a wire rack, about 30 minutes. Remove ring and transfer cake to a serving platter.
  • Beat 1/2 cup butter and cream cheese together in a bowl. Add vanilla extract. Mix in confectioners' slowly until icing is smooth. Add Irish cream liqueur 1 tablespoon at a time to thin frosting to a spreading consistency. Spread frosting over cooled cake.
