I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

Steps:

  • Combine green beans and water in a skillet over medium-high heat. Cover and cook, stirring occasionally, until beans are tender crisp, 4 to 5 minutes. Add ginger, garlic, and sesame oil; cook, stirring frequently, until garlic is lightly browned, 1 to 2 minutes.
  • Mix soy sauce, rice vinegar, sugar, and red pepper flakes together in a small bowl. Pour over beans and cook until sauce thickens enough to coat beans, 3 to 5 minutes.

  • In a Dutch oven, heat oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add tomatoes, garlic and lemon pepper; cook and stir 2 minutes longer., Stir in frozen green beans; cook, covered, until heated through, stirring occasionally, 7-9 minutes. Uncover; cook until liquid is almost evaporated, 2-3 minutes longer.

This is a great dish we have at a local chinese restaurant that I came home and played with. They're an excellent side dish. I store some thai peppers in oil that I use in place of the olive oil but regular olive oil is fine. This recipe is great if you cube up a chicken breast into 1/2" cubes and add it also.

Steps:

  • Wash and cut stems off green beans. Heat up skillet with 2 T olive oil. When hot toss in half the garlic. Just as it starts to pop add sesame oil and green beans and toss until lightly coated. As green beans warm up add soy and pepper flakes. Toss lightly and cover over med-low heat until green beans are tender.
  • When green beans are tender and almost ready, add remaining garlic, salt to taste and continue to cook until garlic is toasty.
  • Remove and serve hot.

  • In a large saute pan, heat the butter or oil over medium-high heat. Add the garlic, peppers, turmeric, cumin, and cayenne, and cook, stirring, until the garlic begins to turn golden, about 2 minutes. Add the green beans, water, salt, and stir well. Cover and cook over medium-low heat, stirring occasionally, until the beans are tender, 4 to 5 minutes. Add the sesame seeds and cook uncovered, stirring, until toasted, 2 to 3 minutes.
  • Remove from the heat and adjust seasoning, to taste.

Roasted Zesty Parmesan Green Beans image

Steps:

  • Preheat your oven to 425°F Line a baking sheet with aluminum foil or parchment paper. Trim the ends off of your green beans, and spread them out evenly on the baking sheet.
  • Grab your olive oil and your drizzle it over the green beans. Shake the pan a couple of times to rotate the green beans to cover them fairly evenly. Add the salt, pepper, garlic powder, and paprika, and shake again to cover them evenly.
  • Pop them in the oven for 10 minutes, shake the pan again to flip them over, and put them back in for another 5 minutes.
  • After removing them from the oven, grate your Parmesan cheese over the top and serve!

Stir-Fried Garlic Green Beans image

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.
