Steps:
- For the wet mix: Combine the brown sugar, molasses, cinnamon, vanilla, salt and 1 1/2 cups water in a medium saucepan. Bring to a boil and cook for 3 minutes. Set aside to cool.
- For the dry mix: Preheat the oven to 275 degrees F.
- Mix together the rolled oats, coconut, sunflower seeds, walnuts, almonds, peanuts and sesame seeds in a large bowl. Pour in the cooled wet mixture and mix together by hand.
- Spray three 18-by-16-inch rimmed cookie sheets well with nonstick cooking spray. Spread the granola mixture on the sheets and bake for 30 minutes. Then pull out the sheets, flip the granola over and bake for another 30 minutes. Let cool completely until the granola is dried out. Store in airtight containers at room temperature for up to two weeks.
GRANOLA
This is a recipe which believe it or not I got in the 7th grade during home ec. It is a really easy and great snack. I recommend it for all ages and also as a kid-friendly recipe. ** I have made changes to this recipe to make it easier to follow....I apologize for any confusion! Let me know if it happens again!

Steps:
- Pour oatmeal into a glass microwaveable dish and cook for two minutes; stirring once. (YES microwave the oats! I'm not sure why, but this is how I learned to do it in my 7th grade home ec class and it has worked for me every time).
- Combine all other ingredients into a bowl.
- Add in oatmeal.
- Stir until well blended.
- To finish, use either the microwave or oven. Both methods are listed below --
- Microwave method: Pour mixture into a glass dish and microwave on high for 4 minutes or until golden brown.
- Stir every minute.
- Cool on wax paper.
- Enjoy!
- OR --
- Oven method: Pour mixture into a large cake pan and bake at 350 degrees for 20 minutes.
- Stir every 5 minutes.
- Add 1/2 cup of raisins.
- Cool on wax paper.
- Enjoy!
THE BEST GRANOLA
For our best granola, we wanted a crunchy, clustery version that wasn't too sweet. We created this simple but universally likeable recipe that's flavored with vanilla and a blend of brown sugar and maple syrup. We love its pure flavors and balance of salty and sweet. It is the perfect canvas for personalization, so we've included some ideas for mix-ins at the end of the recipe.

- Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
- Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
- Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
- Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.
TRULY HEALTHY GRANOLA
Granola is inherently thought of as "health food" but when you flip over the bag and read the nutritional info, it can actually be very high in calories. This is my slimmed-down version. I use sugar-free maple syrup since that's all I keep in the house, but regular maple syrup would work perfectly fine. Sprinkle the finished product on ice cream, fresh fruit or yogurt.

- Preheat oven to 350 degrees.
- In a small saucepan, heat the juice, honey and maple syrup over medium heat until you can stir the mixture easily, but before it starts to boil. About 5 minutes.
- Place the oats in a large mixing bowl. Pour the honey mixture over the oats and stir quickly to coat.
- Spread the oats in an even layer on a baking sheet. Bake until the granola is crisp and starts to brown. About 15 minutes. Watch it carefully, or the granola may burn.
- Place the baking sheet on a cooling rack and while the granola is still warm, toss in the pecans and dried fruit. Sprinkle with cinnamon and finish cooling on the baking sheet.
- Store in an airtight container.

- Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
- Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well, making sure all ingredients are coated evenly.
- Pour onto prepared baking sheet and distribute in an even layer.
- Bake in the preheated oven for 1 hour, stirring every 10 to 15 minutes lightly with the tines of a fork so mixture toasts evenly and granola is golden brown.
- Pour into a bowl and, while mixture is still hot, mix in currants. Cool. Store in an airtight container until ready to use.

MAPLE-BAKED GRANOLA
This is a good 'blueprint granola' - follow the basic premise then add nuts and dried fruits of your choosing. Will store in an airtight container for two weeks

- Heat oven to 160C/140C fan/gas 3. Line two large roasting tins (or one and cook in batches) with baking parchment. Put the porridge mix and all the flakes, nuts and seeds in a bowl and mix them together.
- Put the maple syrup and oil in a big heavy-bottomed saucepan and gently heat. Add the grain mixture and stir until all the dry ingredients are coated - you are not cooking the mixture, just coating it. Spread the cereal over the parchment (it shouldn't lie in big clumps) and bake for about 20 mins.
- Remove the tins from the oven, turn the temperature up to 180C/160C fan/gas 4, then return to the oven, swapping the tins over. Cook for another 10 mins, but keep an eye on things. You want a golden toasted mixture - you may even start to smell some caramelisation - but don't take it too far.
- Take the tins out of the oven and leave to cool. Break the granola up into small chunks with your hands and add the dried fruit. Will keep well in an airtight container for two weeks. You can 'refresh' it by putting it all in the oven again (at 160C/140C/gas 3) for 15 mins. Eat with milk or yogurt and fresh fruit.
