2-INGREDIENT ICE CREAM
This is the easiest recipe for ice cream I have found. Add any extra ingredients (chocolate chips, caramel, vanilla bean, etc.) before freezing!

Steps:
- Beat heavy cream in a bowl using an electric mixer until soft peaks form; add sweetened condensed milk and beat until thick and well combined.
- Transfer mixture to a shallow container and cover with plastic wrap; freeze until solid, about 6 hours.

When I found out my heavy cream was spoiled I came up with this recipe. Who knew 2 ingredients would make such a tasty frozen treat!

Steps:
- Combine sweetened condensed milk and coconut milk in a bowl and whisk to combine. Chill in the refrigerator for 1 hour.
- Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

COCONUT ICE CREAM
Steps:
- Bring milk, heavy cream, coconut milk, and coconut flakes to simmer in heavy saucepan for a few minutes. Allow to steep for 10 minutes.
- Whisk the egg yolks, sugar, and salt together, long enough to dissolve the sugar.
- Temper hot liquid into egg mixture. Return all back into saucepan over low heat, stirring all the while, until mixture starts to thicken. Strain through a chinois. Chill immediately over ice bath.
- Churn in a standard ice cream machine.
COCONUT ICE CREAM

- In a saucepan, combine the milk, sugar and salt; cook, stirring frequently, over medium heat just until mixture begins to boil. Stir in 1/2 cup coconut. Remove from the heat; let stand for 30 minutes. , Strain, discarding coconut. Place milk mixture in a large bowl; add cream, vanilla and remaining coconut. Cool completely. Freeze in an ice cream freezer according to manufacturer's directions. , Transfer to a 2-qt. freezer container. Cover and freeze for at least 4 hours before serving. Garnish with toasted coconut if desired.

- Empty the contents of other 1 cans of coconut milk into a saucepan. Add the sugar and bring to a simmer, stir once and gently simmer for 30 minutes, or until the milk is thick and has reduced by half (After about 10 minutes, you'll notice that the milk will start to turn a golden color – that's ok and is exactly what's supposed to happen.) Remove from heat and let cool completely.
- Open the 2 cans of chilled coconut milk. The cream should have risen to the top. Carefully scoop the cream into a mixing bowl. (Reserve the water below to use in a smoothie.) With an electric beater, whip up the coconut cream on high speed until it's light and fluffy, 3-4 minutes.

- Add cold heavy cream to a stand mixer and using the whisk attachment, mix on high speed until stiff peaks form.
- Scoop whipped cream into a large bowl. Pour in the cream of coconut and use a large spatula to fold it into the whipped cream until the cream of coconut is completely mixed in. Your whipped cream will lose its stiff peaks but should still look fluffy when you're done. You can see photos of what it should look like here.
- Pour ice cream into a 9 x 5 loaf pan. Use a spatula to smooth and even out the surface. Freeze overnight. If you desire more texture, you can sprinkle some toasted sweetened coconut flakes on top of the ice cream before serving.
