Spanish Rice image

Steps:

  • Melt the butter in a medium, heavy-bottomed saucepan over medium-low heat. Add the rice, onion and green pepper, and saute until the rice is slightly browned and the vegetables are softened, 8 to 10 minutes. Stir in the tomatoes, pimiento, salt, cayenne and hot sauce. Bring to a boil, cover and reduce the heat to low. Simmer for 20 minutes, then fluff with a fork. If the rice is tender but too soupy, cook uncovered for another 5 minutes. If the rice is dry but not yet tender, add 1/2 cup water, cover and continue cooking for another 5 minutes, or until the rice is done.

20 Minute Spanish Rice image

Steps:

  • Boil the chicken stock and taco seasoning in a medium pot.
  • Once mixture comes to a boil add the rice, salsa, corn and beans (or peas if you prefer; stir a bit.
  • Turn heat to low and cover pot.
  • Allow to cook on low, undisturbed, for 20 minutes.
  • After 20 minutes are up, toss the rice a bit, and serve!

  • In medium saucepan, combine all ingredients (I usually mash tomatoes with potato masher or give them a quick spin in food processor).
  • Bring to a boil; reduce heat to low.
  • Cover and simmer 25 minutes or until rice is done. (Unless you like sticky, gooey rice, don't take off the lid and stir at all until it is done).
  • Garnish with green onions and/or cheddar cheese.

Easy Spanish Rice image

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
  • Mix water, tomatoes, onion, cilantro, and bouillon into rice. Bring to a boil. Turn off heat and cover pot tightly with a lid. Leave pot covered on hot burner until rice has absorbed all the liquid, about 20 minutes. Adjust seasonings as needed.

  • In a sauce pan that has a tight fitting cover, melt the butter and sauté the onions until soft.
  • Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.
  • Stir to dissolve the bouillon cubes and bring to a boil.
  • Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.
