TUNA BURGERS WITH PINEAPPLE-MUSTARD GLAZE AND GREEN CHILE-PICKLE RELISH
Steps:
- Combine the pineapple juice, vinegar, ginger, soy sauce and brown sugar in a small saucepan and bring to a boil. Reduce the heat to low and simmer until the volume is reduced by half, about 30 minutes. Whisk in 2 tablespoons mustard, remove from the heat, and add the lime juice and white pepper. Let cool.
- Combine the tuna, 2 tablespoons Dijon, chipotle pepper puree, honey, oil, and green onions in a large bowl, and season with salt and pepper. Shape the ground tuna firmly into 8 round uniform patties about 1 1/2-inches thick. Refrigerate for 30 minutes; the burgers must be very cold to hold their shape when cooking. Grill burgers for 3 minutes on each side for medium doneness, basting often with the glaze. Serve the burgers on buns with the watercress and the Green Chile-Pickle Relish.
- Combine all ingredients in a medium bowl and season, to taste, with salt and pepper. Let sit at room temperature for 30 minutes before serving so that flavors meld.
GRILLED YELLOW FIN TUNA WITH GRILLED PINEAPPLE SALSA
Steps:
- Brush the pineapple slices lightly with 1 tablespoon of the olive oil, then place the pineapple slices on the grill and cook, turning occasionally, until softened slightly and nicely marked by the grill, 2 to 3 minutes per side. Remove from the grill and allow to cool to room temperature. Dice the pineapple slices (discard the tough core portions) and place in a medium nonreactive bowl. Add the red onion, bell pepper, vinegar, jalapenos, lime juice, cilantro and minced garlic. Drizzle with 3 tablespoons of the olive oil and stir well to combine. Season with 1/2 teaspoon of the salt and set aside as you prepare the tuna.
- Set a grill pan over medium-high heat. Season the tuna steaks with remaining salt and Essence and brush with the 2 remaining tablespoons of the olive oil. Place steaks on the grill, turning 45 degrees after 2 minutes. Repeat on the other side for an additional 2 minutes or until medium-rare. Remove from heat and set aside. Serve with the Grilled Pineapple Salsa.

A caribbean inspired recipe that goes well with either tuna or swordfish steaks. Perfect for the grill too. Serve with an island style rice pilaf. Prep time does not include marinating time.

- Prepare marinade by combining marinade ingredients in shallow dish.
- Add tuna and coat with marinade.
- Cover and refrigerate at least 1 hr or more, turning occasionally.
- Prepare pineapple sauce by puree in blender until smooth.
- Add bell pepper, vinegar, jalapeno chili, curry powder and ground pepper.
- process until smooth.
- Gradually add olive oil.
- Heat large skillet over high heat.
- Add small amount of peanut oil to skillet so tuna does not stick.
- Remove tuna from marinade, season with salt to taste.
- Add tuna to skillet and cook until brown on each side, about 3 mins per side.
- Spoon sauce on plate.
- Place tuna on top of sauce.
- Serve.
AHI TUNA TACOS WITH PINEAPPLE SALSA

- Mix black pepper, salt, cumin, garlic powder, and cinnamon together in a small bowl. Rub all over tuna steaks. Cover and refrigerate for at least 15 minutes.
- Meanwhile, stir pineapple, red onion, cilantro, lime juice, red pepper, and lime zest for salsa together in a bowl until combined. Cover and refrigerate until needed.
- Heat oil in a cast iron skillet over medium heat. Add tuna steaks and cook to desired doneness, 1 1/2 to 2 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium doneness. Remove from the skillet and slice steaks thinly.
- Spread sour cream in a thin layer over each warmed tortilla. Add tuna slices, top with pineapple salsa, and wrap to seal.

- 1. Peel and core the pineapple; dice the pineapple, reserving juice. Combine the pineapple, pineapple juice, and the next 6 ingredients in a medium bowl; stir well. Cover and let stand at room temperature at least 1 hour.
- 2. Place the steaks in a large, heavy-duty, zip-top plastic bag.
- 3. Combine the vinegar and the next 3 ingredients in a small bowl; stir well. Pour the marinade mixture over steaks. Seal the bag securely; place in a bowl. Marinate in the refrigerator at least 30 minutes or up to 1 hour, turning occasionally.
- 4. Remove the steaks from the marinade. Discard the marinade.
- 5. If using, soak the mesquite wood chips in water for 30 minutes; drain. Heat the coals, and place the wood chips directly on the hot coals. Grill the tuna steaks, covered, over hot coals (400 to 500 degrees) for 3 to 4 minute on each side or until the fish flakes easily when tested with a fork.
- 6. Remove the steaks to a serving platter; keep warm. Stir cilantro into the salsa mixture. Top the steaks with salsa. Garnish with ciilantro sprigs if desired.

- With a sharp knife, cut the tuna into 4 large pieces for appetizer portion, 2 large pieces for dinner portion. Use your judgment on what shape you want to cut your tuna because not all tuna is the same size or shape. However, the shape should somewhat resemble a miniature brick.
- Season the tuna pieces with salt and pepper. Coat lightly on all sides with bread crumbs. Heat olive oil in a large heavy skillet over high heat. The pan should be as hot as you can get it. Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
- Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

- Heat grill (or grill pan) to medium high heat.
- Combine first five ingredients to make the marinade. I love Sriracha, but add slowly, because it is HOT!
- Sprinkle Ahi tuna steaks with cracked pepper. Spray grill with non-stick spray. Grill each steak for 3-4 minutes each side (for a rare to med rare finish). While cooking, brush each side with marinade.
- Towards the end of the grilling time, add pineapple slices and grill each side for 1 minute.
- Meanwhile, heat a separate frying pan to medium high heat. Add olive oil, a splash of the marinade and 1/2 tablespoon of brown sugar. Add green beans and stir fry (7-8 minutes).
- Plate the tuna steaks on top of 1/4 of cooked green beans. Top each steak with a pineapple slice.
- Serve with a swirl of Sriracha on each plate and extra marinade on the side for dipping.
