Steps:
- Heat a large pot over medium heat and add oil. Add beef and sprinkle with baking powder. Brown beef, stirring to break up into smaller chunks, until no longer pink, 5 to 10 minutes. Using a slotted spoon, remove beef to a bowl.
- Add onions to pot and turn heat down to low. Cook, stirring occasionally, until soft, 8 to 10 minutes. Stir in chile powder, cumin, smoked paprika, cayenne and oregano and cook for another 2 minutes to bloom. Add garlic and saute for 30 more seconds. Add beef stock, demi-glace, tomatoes and beans. Add beef back in along with any reserved juices and simmer, partially covered and stirring frequently, for 2 hours. Season to taste with salt and pepper.
- Garnish with scallions, cilantro, sour cream, pickled jalapenos and aged Cheddar.

Steps:
- Brown the meat: In a large saute pan heat 1 tablespoon of the oil over medium heat. When the oil begins to smoke lightly, add the beef and season with salt. Cook over medium heat, stirring with a wooden spoon, until the meat browns, about 5 minutes. Transfer beef to a large mixing bowl.
- Brown the vegetables: In the same pan, stir in the onions and the remaining oil. Add the garlic, chiles, bell pepper, tomato paste, and a generous pinch of salt. Cook until the vegetables start to brown, about 5 minutes.
- Cook the chili: While the vegetables are cooking, to the slow cooker add the tomatoes, chili powder, bay leaf, cumin, allspice, red pepper flakes, and 2 cups of water; stir to combine. Add the vegetables to the bowl of meat and stir to combine, then add to the slow cooker. Stir in the vinegar. Cover and set the cooker to low; cook for about 8 hours. Check after a couple of hours. Stir and taste for seasoning. Thirty minutes or so before serving, turn the slow cooker to high and stir in the black beans and cook for an additional 30 minutes.
- Serve: Allow it to "rest" for about 15 minutes before serving. Stir in the scallions. Taste for seasoning. Serve with any or all of the following: cheddar, sour cream, avocado, scallions, lime wedges, and tortilla chips.
THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

Steps:
- Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
- After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.
AWARD WINNING CHILI
My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

After years of adjustments I have found a recipe for all to enjoy. Previous ones were either too hot or too mild, this one even was to the liking of my finance who hates chili.

- Keto Chili. It doesn’t matter if you’re following a keto diet or not, because above all else, this chili is plain delicious. It skips the beans, then doubles down on meat with beef and bacon, plus gets an extra-hearty boost from plenty of mushrooms.
- Slow Cooker Black Bean Chili. Unsweetened cocoa powder powers this vegan chili with an extra-rich and hearty flavor, after an all-day simmer in the slow cooker.
- Pumpkin Chili. If there’s one ingredient you’re not adding to your chili, but totally should be, it is pumpkin. Time to add this smoky-sweet chili to your fall and winter bucket list.
- Vegan Chili. The chili gets its heft from red lentils and a duo of beans. As a result, it has a texture so meaty that I have to remind myself that there’s not actually any meat in the pot.
- Chorizo Chicken Chili. Good news! Thirty minutes is all you need to pull off this bold pot of chili — no long simmer necessary. To make sure it’s packed with flavor, start with spicy chorizo and meaty chicken thighs.
- Weeknight White Chicken Chili. To keep this ultra-creamy chili firmly planted in weeknight dinner territory, the chicken is poached right in the pot of chili.
- Slow Cooker Vegan Lentil Chili. Lentils are my favorite thing to mix into a meat-free chili. Their toothsome bite lends a hearty, meaty texture that can’t be beat.
- How To Make One-Pot Chili Mac. Why decide when you can have both? This retro dish of mac and cheese-meets-beef chili is the ultimate comfort food. (Image credit: Joe Lingeman)
- How To Cook Simple & Tasty Slow Cooker Chili. The is the classic beef chili you crave, with just the right amount of spice, tangy tomatoes, and creamy beans.
- Slow Cooker White Chicken Chili. Just like your favorite stovetop version, but with a low, slow cook. The recipe gives you the option for chicken breast or thighs, but I think a combination of the two is the right call.
