ALOO (POTATO) PAKORA
I got this recipe from my friend Rupali. It's good for a fast and easy side dish to an indian meal. Also, if it is made with less chilli powder, it is excellent as a snack for kids. They'll eat them right up.

Steps:
- Add water to the Besan.
- Besan has a tendency to be very clumpy, so you should add just a few tablespoons at a time to keep the batter smooth.
- Add the Chilli powder, cumin powder, garlic, ginger, salt and chopped coriander and stir the batter.
- The potatoes should be sliced very thinly.
- No thicker than 1/4 of an inch.
- At this point test one slice of potato in the batter.
- There should just be a thin coat of batter.
- Heat the oil in a pan.
- Use a larger frying pan so that you have more surface area.
- The oil doesn't need to be too deep since the potato slices are very thin.
- Dip the potato slices in the batter and fry them till they are golden brown.
- Remove them from the oil with a slotted spoon and set them on a paper towel for a minute to soak up the excess oil.
VEGETABLE PAKORAS
I like to think of pakoras as the Indian tempura. They're a staple of Indian life, and are the perfect accompaniment to a hot cup of chai or a chilled mug of beer. The superhero ingredient here is Indian chickpea flour. No egg is required to make this batter, so it's perfect for the vegans among you!

- Whisk the besan, rice flour, salt, turmeric, ajwain seeds and baking soda together in a large bowl. Add the ginger, lemon juice and enough water (roughly 1/2 cup) to form a batter. (Consistency-wise, it should be slightly thinner than heavy cream.)
- Warm the oil in a heavy-bottomed pot over medium heat until it registers 375 degrees F on a thermometer. Set a cooling rack over a paper-towel lined baking sheet.
- Drop the onions, kale and cauliflower into the batter. Using tongs or your fingers, knock the excess batter off each piece before dropping into the hot oil. Fry in batches, making sure not to overcrowd the pot. Fry smaller, thinner vegetables like the onions and kale for 1 to 2 minutes. Fry the cauliflower for 3 to 4 minutes.
- Remove the pakoras from the hot oil using a spider. Set on the cooling rack, then quickly sprinkle with salt and the ground black lime. Eat hot!
CRISPY VEGETABLE PAKORAS
These are very yummy, and if any of you have ever had Japanese tempura coated veggies, you'll love this recipe. It's similar, yet it is unique in it's taste. Serve with a chili sauce, mint yogurt sauce, or sweet and sour sauce. Try other vegetables for dipping, such as sweet potatoes, broccoli and asparagus.

- Sift the chickpea flour into a medium bowl. Mix in the coriander, salt, turmeric, chili powder, garam masala and garlic.
- Make a well in the center of the flower. Gradually pour the water into the well and mix to form a thick, smooth batter.
- Over medium high heat in a large, heavy saucepan, heat the oil to 375 degrees F (190 degrees C).
- Coat the cauliflower and onions in the batter and fry them in small batches until golden brown, about 4 to 5 minutes. Drain on paper towels before serving.

Aloo Paratha (Potato paratha) is an Indian recipe and one of the most popular breakfast dishes throughout western, central and northern regions of India.Aloo (potato) stuffed Parathas are basically unleavened dough stuffed with a spiced mixture of mashed potato, which is rolled out and cooked on a hot tawa with butter or ghee. Usually butter or chutney is served with Aloo Paratha and in rural parts of northern and western India

Steps:
- 1. Dough.
- 2. Mix flour, salt ,oil and water together to make soft dough .
- 3. Knead the dough for a few minutes on a lightly greased surface to make smooth and pliable dough.
- 4. Set the dough aside and cover it with a damp cloth. Let the dough rest for at least 1hour.
- 5. Filling.
- 6. Boil 2 medium potatoes with 2 cups of water. After the water comes to a boil, reduce the heat to medium. Let the potatoes cook until they are tender.
- 7. Once tender, remove them from the water and let them cool down.
- 8. After the potatoes are cold enough to handle, peel the skin off and mash the potatoes.
- 9. Take skillet put oil let it warm than add mustard seeds,onions,turmeric powder,chopped green chili,salt fry all of them than add mashed potatoes to it .Fry it for 5 min ,garnish with chopped coriander leaves.
- 10. Making paratha.
- 11. Divide the dough and potato mixture into 6 equal parts. The potato balls should be about 1 1/2 times larger than the dough balls.
- 12. Roll the dough into 3 inch diameter circles. Place the potato balls in the center. Seal by pulling the edges of the rolled dough together to.

- 14. Let them settle for 3 to 4 minutes before rolling them.
- 15. To make it easier to roll the balls, first roll them in dry whole-wheat flour.
- 16. Lightly press the ball on the sealed side and keep it on the topside when rolling. Roll the ball light handed in to 6-inch circles. Whenever the dough sticks to the rolling pin or rolling surface, lightly sprinkle dry whole-wheat flour on both sides of the semi-rolled paratha.
- 17. Place the paratha over the skillet. After a few seconds you will see the.
- 18. paratha change color and puff in different places.
- 19. Then flip the paratha over. You should see some golden-brown spots on the topside. After a few seconds, spread 1 teaspoon of oil on the paratha. Again, flip the paratha and lightly press the puffed areas with a spatula.
- 20. Flip again and press with the spatula making sure the paratha is golden-brown on both sides.
- 21. Serve hot aloo parathas with chutney,sauce,raitha -- of your choice.

- Heat 1 tablespoon oil in a pot over medium-high heat. Saute onion in the hot oil until translucent, 5 to 7 minutes. Add cumin, coriander, cayenne, and turmeric. Add ginger-garlic paste. Mix well.
