This is really right on for Amaretto!! It's hard to tell it from the real thing!

Steps:
- Combine water and sugars in a saucepan over medium heat. Heat until the mixture is boiling, and all of the sugar is dissolved. Remove the pan from the heat and let the mixture cool for 10 minutes.
- Stir vodka, almond extract and vanilla extract into the mixture. Store in a sealed bottle.

DRUNKEN PECANS
Whether you plan on making these for Holiday gift giving or as a party appetizer, make more than you need because you cannot eat just one. Just about any kind of nuts can be used in this recipe like walnuts and almonds. All of the liquor cooks out but the alcohol leaves a delicious flavor, so don't be afraid to use it.

- 1. Whisk together maple or Karo syrup and 1 cup of your brown sugar and cinnamon in a large sauce pan. Add the bourbon or Amaretto and the vanilla or almond extract. The alcohol will cook out and just leave the flavor.
- 2. Bring to a boil over medium heat stirring constantly. Add the pecans or whatever kind of nuts you prefer.
- 3. Keep stirring over med heat until the pecans are coated in the sugar mixture.
- 4. Continue to cook, stirring frequently until the liquid becomes thick and starts to solidify on your spoon. It needs to reach a high enough temperature for the sugar mixture to harden when cooled. (at least 240 degrees on candy thermometer)
- 5. Remove from heat and add the remaining cup of brown sugar to the pan, quickly toss until all the nuts are coated with the sugar. Pour out on a sprayed, foil lined cookie sheet to cool and break apart any big pieces that are clumped together.
- 6. Once they are cool they will be hard and crunchy. Technically they will keep for a few weeks in a sealed container, but they're usually gone in a few hours.

- Place raisins in a small bowl. Cover with boiling water; let stand 5 minutes. Place raisins with liquid in a large saucepan. Add peaches and orange zest. Bring to a boil. Reduce heat; cover and simmer 10-15 minutes or until peaches are tender., Stir in orange and lemon juices; return to a boil. Add sugar. Cook, uncovered, over medium heat 25-30 minutes or until thickened, stirring occasionally. Add pecans; cook 5 minutes longer. Remove from heat; stir in amaretto., Carefully ladle hot mixture into five hot sterilized half-pint jars. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

PEACH PECAN & AMARETTO PRESERVES
I have not tried this recipe I am posting it for a request. It sounds marvelous and should make an excellent homemade Holiday gift too

Steps:
- In a heavy, non-reactive saucepot combine raisins and water and let raisins soak until they plump.
- Cut peaches into halves or quarters and combine them with the plumped raisins and water.
- Add zest and heat mixture to simmering until very tender, about 15 minutes.
- Stir in orange and lemon juices and return to a boil.
- Add sugar and cook over medium heat, stirring very frequently with a flat bottom wooden spoon, until thick, about 30 minutes.
- Test Mixture: Put a spoonful on a chilled saucer and let it cool; when saucer is held on edge, the surface of the jam should wrinkle.
- Add the pecans and cook, stirring, about 5 minutes longer.
- Remove from heat and stir in the Amaretto.
- Ladle into hot, clean canning jars, leaving 1/4 inch head space.
- Seal with new two-piece lids according to manufacturer's directions and process for 10 minutes in a boiling water bath.
- Cool, label, and store.
- Best if allowed to mellow in the jars for two weeks before serving.
- Makes great holiday gifts.

Steps:
- Syrup: Melt butter, add nuts: brown lightly: remove nuts.
- Add maple syrup, cinnamon and salt to butter in saucepan.
- Add Amaretto,& apples cover simmer slowly 10 minutes.
- Remove cover simmer about 3 minutes longer.
- Remove from heat, add nuts.
- Replace cover to keep warm while making pancakes.
- Pancakes: Sift together the dry ingredients.
- Combine eggs, buttermilk and butter.
- Fold into dry ingredients.
- Do not over mix.
- Coat the apples with cinnamon and cardamom and fold into batter.
- Cook on hot lightly greased griddle and serve with warm maple syrup.
