AMBROSIA SALAD

During last-minute menu planning, I often include this classic ambrosia salad recipe because I keep the ingredients on hand. -Judi Bringegar, Liberty, North Carolina

Steps:

  • In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.

1 can (8 ounces) pineapple tidbits, drained
1 cup miniature marshmallows
1 cup sweetened shredded coconut
1 cup sour cream

EASY EASY EASY. If you like maraschino cherries you can use them, if not remember there are maraschino cherries in your fruit cocktail. Also, a little juice from the maraschino cherries will color your fruit salad a festive red.

Ambrosia Fruit Salad image

Steps:

  • In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries, nutmeg and cinnamon. Mix together well and refrigerate for 30 to 45 minutes.

1 (8 ounce) container frozen whipped topping, thawed
2 ½ cups shredded coconut
½ cup chopped walnuts
1 (8 ounce) can fruit cocktail, drained
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

  • 1. Drain fruit cocktail, reserving 2 tablespoons of the syrup. Place fruit cocktail in a medium bowl. Set fruit and syrup aside.2. Peel orange and cut into bite-size pieces. Add to fruit cocktail. Stir in 1/2 cup coconut until blended. Chill until ready to serve.3. In a small bowl, mix mayonnaise and 2 tablespoons reserved syrup until blended. Set mayonnaise mixture aside until ready to serve.4. To serve, place salad greens in a salad bowl. Add well-drained fruit mixture and mayonnaise mixture toss lightly until all ingredients are lightly coated.5. Garnish with additional coconut.Serve with roast beef sandwiches, hot dogs or spaghetti with meatballs.
