KEY LIME CREAM PIE

- In a small bowl, mix crushed cookies and butter. Press onto bottom and up sides of a greased 9-in. deep-dish pie plate. In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and extract; beat until stiff peaks form. In another large bowl, beat cream cheese, condensed milk and lime juice until blended. Fold in 2 cups whipped cream. Spoon into prepared crust., Top with remaining whipped cream; sprinkle with toasted coconut. Refrigerate until serving, at least 4 hours. If desired, garnish with cherries and limes.

This is an Amish recipe which comes from 'Wanda E. Brunsetter's Amish Friends Cookbook', by Wanda E. Brunsetter; and it was submitted by Mollie Stolzfusof Charlotte Hall, MD.

Steps:
- 1. To make the crust: Preheat oven to 350 F.
- 2. Combine graham cracker crumbs and melted butter; press mixture against sides and bottom of a 9-inch pie pan.
- 3. Bake for 5 minutes; cool completely.
- 4. To make the filling: Beat egg yolks until thick, about 4 minutes.
- 5. Beat in condensed milk, lime juice and lime zest; pour into cooled graham cracker crust.
- 6. Cover and refrigerate for at least 4 hours.
- 7. Before serving, beat heavy whipping cream until stiff (do not sweeten) and spoon over pie.
