- 1. Using a pressure cooker....Cook 1 hour...if cooking in Dutch Oven cook 5 hours same if cooking in Crock Pot.
- 2. Sort and beans, place into Pressure Cooker, add all ingredients, fill cooker to about 1 1/2 inch from screws at top of cooker. You have to give it room to swell. You can soak over night if you are cooking other than pressure cooker. Cook 1 Hour...
ANASAZI BEAN DIP

Steps:
- 1. Drain the liquid from the beans. Put beans in a food processor or blender and puree them for 3 seconds. Add the remaining ingredients except for the sour cream and salsa. Puree until the mixture is well blended.
- 2. Pour mixture into a medium bowl and mix in sour cream and salsa. Stir thoroughly.
- 3. Pour dip into a bowl and serve with tortilla chips.
- 4. Enjoy!

- Wash and drain Anasazi beans. Place in a slow cooker with 4 cups water and soak 8 hours to overnight.
- When ready to cook, heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Skim foam off the top of the beans. Add onion-garlic mixture, chicken broth, chile peppers, corn kernels, tomatoes, ham hock, tomato paste, salt, and pepper. Cook on Low until beans are tender, about 8 hours.
