ANCHO CHILE HONEY BASTED QUAIL

Ancho Chile Honey Basted Quail image

Steps:

  • Soak ancho chile in 1 cup of hot water for 30 minutes.
  • Preheat grill to medium-high.
  • Place ancho chile and soaking water, garlic, honey, and salt in a blender. Cover and puree until smooth.
  • Place quail, breast side down, on preheated grill for 3 to 4 minutes or until skin is browned. Turn quail over and baste generously with pureed sauce. Cook for another 3 to 4 minutes.
  • Place quail on a cooler part of grill until finished cooking. Turn quail and baste after 1 minute, then turn over and baste again. The quail is finished when its juices run clear.

1 dried ancho chile
1 cup hot water
1 chopped garlic clove
1/8 cup honey
1 teaspoon kosher salt
About 12 semi-boneless quail (1 or 2 per person)

ANCHO CHILI GLAZE

We tried this Ancho Chili Glaze on salmon and it was a big hit in the Test Kitchen. The sweetness from the honey paired really well with the smokiness from the bacon. The ancho chilies were pretty mild. We can't wait to try this on other meats like chicken and pork. Yummy!

Steps:

  • 1. Add all ingredients together, except the honey, and cook in a heavy pot. Cook until it is reduced by half.
  • 2. Let it cool down for about 10 minutes. Then add the honey and blend together with a hand blender until it is blended smooth.
  • 3. Brush on fish, chicken, ribs, steak before or after cooking.

1 3/4 c sugar
5 large ancho chilies (seeded and sliced)
7 Tbsp lime juice
7 oz bacon, uncooked and diced
4 c honey

The Best Honey-Glazed Salmon image

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

Ancho Chile-Honey Glazed Salmon (Mesa Grill) image

Steps:

  • Salmon: Whisk together honey, ancho chili powder and mustard in a small bowl and season with salt and pepper.
  • Preheat nonstick saute pan over high heat. Brush salmon with oil on both sides and season with salt and pepper.
  • Place salmon in the pan, skin-side down and cook until golden brown and a crust has formed, about 2 to 3 minutes. Brush the top of the salmon with some of the ancho glaze, flip over, and continue cooking about 2 minutes longer, until a crust has formed and the salmon is cooked to medium.
  • Remove salmon from the pan, glazed-side up and brush with some more of the ancho glaze. Spoon some of the Spicy Black Bean Sauce onto a plate, drizzle with some of the Roasted Jalapeno Crema and set the salmon in the center, glazed-side up.
  • Black Bean Sauce: Combine the beans, onion, garlic, chipotles and cumin in a medium saucepan; add cold water to cover by an inch. Bring to a boil, reduce heat and simmer until beans are tender. Add more water if the beans appear dry.
  • Using a slotted spoon, transfer mixture to a food processor. Add 1 cup of the cooking liquid and process until almost smooth; sauce should be a little chunky. Season with salt.
  • Roasted Jalapeno Crema: Place crema and jalapenos in a food processor and process until smooth. Season with salt and pepper. Refrigerate for 30 minutes before serving.

Chipotle Mexican Grill Ancho Chile Marinade for Meat Recipe image

Steps:

  • Soak dry chiles in water overnight or until soft. Remove seeds. Add all ingredients except chicken in food processor. Puree until smooth.
  • Spread mixture over chicken breasts and refrigerate at least one hour, up to 24 hours.
  • Heat grill to about 400 degrees F, or if cooking inside, heat small amount of oil in skillet or grill pan over high heat. Salt chicken breasts to taste. Grill chicken breasts about4 minutes per side, depending upon thickness, until done.
  • Serve with rice, black beans, or choice of side dish. Garnish with fresh cilantro.

Steps:

  • Preheat broiler.
  • Scrub potatoes.
  • Halve lengthwise; cut in 1.4-inch slices.
  • Place on greased rack of unheated broiler pan.
  • In bowl combine sugar, salt, cumin, and chili pepper.
  • Coat sweet potatoes with cooking spray; sprinkle both sides with half the spice mixture.
  • Broil 4 inches from heat 10 minutes or until tender; turn once midway through cooking.
  • Meanwhile, rinse salmon; pat dry.

  • Preheat the oven to 375°. Spread the tomatillos on a roasting pan along with half of the onion, the 6 whole garlic cloves and the jalapeños. Toss with 2 tablespoons of the oil and season with salt and pepper. Roast for about 35 minutes, until tender.
  • Transfer the vegetables to a blender and puree until smooth. Add the lime juice, chopped cilantro and 2 tablespoons of the honey and pulse to blend. Season the tomatillo salsa with salt and pepper and transfer to a bowl. Rinse out the blender.
  • In a medium saucepan, heat another 2 tablespoons of the oil. Add the chipotle, cumin, chopped garlic and the remaining onion and cook over moderate heat, stirring occasionally, until the onion is softened, about 5 minutes. Add the beans with their liquid and 1/4 cup of water and cook over low heat for 15 minutes. Transfer the black bean mixture to the blender and puree until smooth. Season the sauce with salt.
  • Light a grill or preheat a grill pan. In a small bowl, combine the remaining 2 tablespoons of honey with the ancho chile powder and mustard and season with salt.
