- Cook pasta according to package directions. Meanwhile, in large nonstick skillet, saute the mushrooms, carrots, snow peas, yellow pepper, basil and garlic in oil for 2-3 minutes or until crisp-tender. , In a small bowl, combine the cornstarch, broth and salt until smooth; gradually stir into the vegetable mixture. Bring to a boil. Cook and stir for 1-2 minutes or until vegetables are crisp-tender and sauce is thickened., Remove from the heat; stir in tomatoes. Drain pasta; divide among four plates. Top with vegetable mixture; sprinkle with cheese.

DELICIOUS ANGEL HAIR PASTA
Angel hair pasta cooked and served with essentially a hot pasta salad dressing and cheese. I came up with this recipe as I could not find anything to eat, so I went through my spice cabinet and refrigerator, found these ingredients and threw them together. Serve with fresh chopped tomato.

- Bring a pot of lightly salted water to a rolling boil; cook the angel hair pasta in boiling water until the pasta has cooked through yet firm to the bite, 4 to 5 minutes. Drain.
- Heat the olive oil in a skillet over medium-high heat. Add the pimentos, lemon juice, vinegar, sugar, 1 tablespoon parsley, basil, oregano, garlic powder, and onion powder to the oil and stir; cook until the herbs are heated and fragrant. Stir the Parmesan cheese into the mixture. Add the pasta to the skillet and toss to evenly coat with the seasonings. Season with salt and pepper, garnish with remaining parsley, and serve hot.

- 1. Chop all vegetables into big chunks. In a large skillet heat about 4 tablespoons of olive oil. Add the chopped vegetables. Sprinkle with garlic powder, onion powder, garlic salt with parsley, pepper, and paprika. Stir and fry until liquid cooks off and the vegetables are tender. Set aside.
- 2. While vegetables are cooking, heat your favorite spaghetti sauce or marinara. Cook angel hair according to package directions. Drain.
- 3. To serve place a big scoop of cooked pasta on a plate. Top with vegetables and pour sauce over vegetables. Sprinkle with shaved cheese to taste. Enjoy!

- Bring 3 quarts of water to boil in a covered pot.
- Wash, trim and slice mushrooms.
- Wash broccoli and remove tough stems. Cut remaining stems into thin slices and break up the florets.
- Heat the oil in a skillet and cook mushrooms and broccoli, covered, over medium-high heat for 5 minutes.
- Proces cottage cheese and yogurt in food processor until smooth.
- Break up tomatoes with your fingers and add to the vegetables with the oregano and basil. Cover and continue cooking over medium heat until broccoli is softened but still crisp.
- Cook pasta in boiling water for about 30 seconds; drain.
- Remove sauce from heat; stir in cottage-cheese mixture and pour over pasta. Season with black pepper. Serve with grated cheese.

- Heat 1 Tbsp.
- oil in medium skillet over medium heat; add chicken.
- Cook, stirring, until chicken is cooked through, about 5-7 minutes.
- Remove from skillet and drain on paper towel.
- Begin heating water for pasta.
- Heat remaining oil in same skillet and add onion and green pepper.
- Cook for about 3 minutes.
- Add frozen vegetables and garlic.
- Cook, stirring, for 5-7 minutes.
- Cook pasta according to package.
- While pasta is cooking, add chicken broth, basil, salt, pepper, and parmesan cheese to skillet and stir to combine.
- Return chicken to skillet; reduce heat and simmer for 4 minutes.
- Drain pasta and place in large serving bowl.
- Top with chicken and vegetable mixture and serve immediately, with extra parmesan cheese for sprinkling.
ANGEL HAIR PASTA WITH GARDEN VEGETABLES
This recipe is such a yummy way to use up odds and ends from the garden! I almost hate to post it b/c it is basically just a pasta primavera, but it is too yummy to not share and there is nothing better than eating a meal that you helped grow :). It is also nice that this takes about as long to make as boiling pasta. Use any pasta (I always use a "plus" variety to get more protein) and feel free to switch up the veggies as your garden or farmers' market provides. - Cook angle hair pasta in boiling water for 3 to 4 minutes, be careful not to over cook, Keep Warm.
- Heat olive oil to a sizzle in a skillet; when oil is hot, remove the saucepan from the flame and add the roma tomatoes, green onions, garlic, basil, salt, pepper and tomato juice to the skillet, then place back on flame; Mix well too heat through approximately 30 seconds, remove from heat.
- Add cooked drained pasta to the hot skillet, spreading it over the entire veggie mixture; add feta cheese to the pasta and gently fold all ingredients until the cheese is melted.
- With tongs pull the pasta out of the skillet and mound high into bowl, with a rubber spatula, scrape the remaining ingredients on top.
- Sprinkle toasted pine nuts, feta cheese and fresh Parmesan cheese all over the pasta, sprinkle with parsley, serve.
