APPENZOLLER ROSTI (PAN-FRIED POTATOES WITH BACON)
From A Taste of Switzerland. Definitely comfort food! Potatoes, cheese,and bacon- who could ask for more! The original recipe calls for Rass cheese, which is a very pungent semi hard cheese. If you can't find it, use another semi hard cheese.

Steps:
- Cook the unpeeled potatoes in boiling salted water until just tender. Drain, cool, and refrigerate overnight (or for several hours). Peel and grate the potatoes on a coarse grater. Season the potato shreds with salt and pepper.
- Fry the bacon in a large heavy skillet until the fat renders. If needed, add enough oil to coat the bottom of the pan.
- Add the potatoes, and mix to combine with the bacon. Gently press the mixture into the pan to form a cake.
- Cook for 20 minutes over medium heat until the bottom is golden and crusty. Invert a plate over the pan, and turn out the rosti.
- Add a little more oil to the pan, and slide the rosti back in, cooked side up. Cook until the other side is golden, about 10 minutes. Sprinkle with the grated cheese, cover, and let sit for about 2 minutes, until the cheese is melted.
POTATO ROESTI
Steps:
- Combine potatoes and onions in a tea towel. Squeeze as much liquid as possible from the mixture. In a large mixing bowl, combine this mixture with the oil and divide into four equal parts.
- In a 10-inch non-stick saute pan melt 1/2 a tablespoon of butter. Season one part of potato mixture with salt and pepper and spread into a thin layer in the pan. Brown for 5 to 7 minutes. Invert the roesti onto pan lid and remove pan from heat. Add additional 1/2 tablespoon of butter to the preheated pan. Slide roesti into pan raw side down and brown for an additional 5 to 7 minutes. Remove to a rack and hold in a warm oven. Repeat previous steps for remaining potato mixture.
CRISPY POTATOES WITH BACON, GARLIC, AND PARSLEY

- Put the potatoes and salt in a medium saucepan and cover with cold water. Bring to a boil over high heat and simmer for 1 minute, then drain. Pat dry.
- Meanwhile, put the bacon in a well-seasoned cast iron skillet or a saute pan over medium-low heat, and cook until nearly all the fat has rendered and the bacon is crispy, aromatic, and browned, about 5 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel lined plate.
- Add the 1 to 2 tablespoons of butter or oil to the remaining bacon fat. Increase the heat to medium. Add the potatoes, positioning them in the pan so the cut sides get nice and brown. Cook turning only as needed until the potatoes are golden brown, about 15 minutes. Stir in the parsley, garlic, and bacon and stir until fragrant and lightly browned. Season with 1 teaspoon of salt and pepper. Serve.
ROSTI WITH MUSHROOMS

- In saucepan, cover potatoes with cold water, bring to boil, reduce heat, cover and simmer until potatoes are tender yet still firm in centre (about 15 minutes).
- Drain and cool; peel and refrigerate until chilled.
- Meanwhile, in skillet, melt 2 tbsp of the butter and cook onion & mushrooms until lightly browned.
- Transfer to bowl; refrigerate until chilled.
- Grate potatoes into large bowl; add mushroom mixture, rosemary and salt & pepper to taste.
- In 8 inch nonstick skillet, heat about 1 tbsp of remaining butter and 1 tbsp of the oil over medium-high heat; press half the potato mixture evenly over skillet.
- Reduce heat to medium; cook until underside is golden (5 to 7 minutes); invert onto plate.
- Heat about 1 tbsp butter in skillet; slide uncooked side of rosti into skillet; cook until golden (5 to 7 minutes).
- Repeat with remaining potato mixture.
- Garnish with parsley.

- Preheat oven to 400 degrees. Shred potatoes on the large holes of a box grater. Wrap potatoes in a clean kitchen towel; squeeze out liquid. Place in a medium bowl; toss with salt and pepper.
- Heat half the butter in a 9- or 10-inch ovenproof nonstick saute pan over medium-low heat. Spread potatoes in pan evenly; press down with a spatula to flatten cake. Cook until bottom is golden and turning crisp, about 18 minutes.
- Remove pan from heat. Invert cake onto a plate; slide back into pan. Return to heat, and spoon remaining butter around edges of pan. Cook until other side begins to get crisp, about 10 minutes, shaking pan several times to loosen.
- Transfer to oven until cooked through and tender in the center, about 12 minutes. Cut into wedges, and serve.

- Place an oven rack in the bottom third of the oven and preheat oven to 450 degrees F (230 degrees C).
- Place potatoes in a large pot and cover with cold water and salt. Bring to a boil; reduce heat to medium and simmer until potatoes are just tender when pierced with a fork, about 12 minutes. Drain.
- Return potatoes to the pot; cover with a lid and shake pot vigorously, about 1 minute. Uncover and cool potatoes until easily handled, about 10 minutes. Peel potatoes and cut them crosswise into chunks.
- Place bacon in a skillet and cook over medium-high heat, turning occasionally, until most of the fat has melted and bacon is tender, 5 to 7 minutes. Drain bacon slices on paper towels, reserving bacon fat in the skillet.
- Brush the bottom of a shallow 10x15-inch baking pan with half of the bacon fat and olive oil. Sprinkle salt and pepper over potatoes and arrange in the baking pan.
- Roast potatoes in the preheated oven until golden brown on the bottom, about 30 minutes. Remove potatoes from oven and reduce oven temperature to 375 degrees F (190 degrees C).
- Turn potatoes over in baking pan. Top with bacon pieces, Parmigiano-Reggiano cheese, and garlic. Drizzle remaining bacon fat on top.
- Return to the preheated oven and continue roasting until Parmigiano-Reggiano cheese is melted, about 15 minutes. Sprinkle with parsley and serve.

- Add potatoes, salt, and paprika (there should be enough to make potatoes almost orange).
- Fry, covered, over medium heat until soft and tender.
- If it starts sticking and forming a crust on the bottom, turn the heat down and add a little water.
