SUN-DRIED TOMATO AND PESTO TORTA

You can make this up to three days ahead; be sure to start at least one day in advance.

Sun-Dried Tomato and Pesto Torta image

Steps:

  • Finely chop garlic in processor. Add basil, 1/4 cup pine nuts, oil and lemon juice. Process until well blended. Add 1/3 cup cream cheese and 1/4 cup Parmesan cheese. Using on/off turns, process just until blended. Transfer pesto to medium bowl.
  • Coarsely chop tomatoes in processor. Add tomato paste and process until mixture is almost smooth. Add 1/3 cup cream cheese and blend well.
  • Using electric mixer, beat 2 cups cream cheese and butter in large bowl until fluffy. Season with salt and pepper.
  • Spray 6-cup soufflé dish with nonstick spray. Line with plastic wrap, extending plastic over sides. Spread 3/4 cup cream cheese-butter mixture evenly over bottom of prepared dish. Top with half of tomato mixture, then 1/2 cup cream cheese-butter mixture, then half of pesto mixture. Repeat layering with 1/2 cup cream cheese-butter mixture, remaining tomato mixture, 1/2 cup cream cheese-butter mixture and remaining pesto. Top with remaining cream cheese-butter mixture. Cover and chill overnight. (Can be made 3 days ahead. Keep refrigerated.)
  • Invert torta onto platter. Peel off plastic. Garnish with basil sprigs and toasted pine nuts. Serve with baguette slices.

4 garlic cloves
1 1/2 cups (packed) fresh basil leaves

Steps:

  • In a bowl, beat the cream cheese and butter until smooth. Remove 3-1/2 cups to a small bowl; stir in pepper and set aside. Fold olives into the remaining cream cheese mixture. Spread evenly over the bottom of a 9-in. springform pan; set aside., In another large bowl, beat cheddar cheese, cider and paprika on low speed for 1 minute. Beat on high until almost smooth. Spread half over olive layer. Top with peppered cheese mixture. Top with remaining cheddar mixture. Cover with plastic wrap; refrigerate for 6 hours or until firm., Place on serving plate and remove sides of pan. Press pecans into top; garnish with additional olives or grapes if desired. Serve with crackers.

Cheese Tortes a favorite all the time. I make them for Christmas, New Year's Eve, Superbowl,Church Potlucks, just about anytime and anywhere. Just whip this up and serve with a variety of crackers, and everyone will want the recipe.

Cheese Torte image

Steps:

  • 1. In a mixing bowl, beat cream cheese with sour cream until smooth. Remove 3 1/2 c. to a small bowl, Stir in Pepper and onions. Set aside. Fold ham and horseradish into remaining mixture. Spread evenly in the bottom of a 9" springform pan. Set aside.
  • 2. In a mixing bowl beat cheddar cheese and apple cider vinegar, and paprika beat on low for 1 minute. Beat on High until almost smooth. Stir in bacon bits. Spread Half the mixture over the ham mixture.
  • 3. Top that layer with the onion/pepper mixture. (smoothing each layer as you apply them). Then add the remaining cheddar mixture on top. cover with plastic wrap and chill for 6 hours
  • 4. When ready to serve. Place on a serving platter and remove sides of the springform pan. Press pecans into top; garnish with red and green grapes. Serve with assortment of crackers.

4 pkg cream cheese, room temperature (8oz. each)
1 c sour cream
1 c bacon bits (the soft ones not crunchy)
1 c ham, diced fine
1/2 c onions, diced fine
8 c sharp cheddar cheese, shredded, room temperature
3/4 c apple cider vinegar
2 1/4 tsp paprika
1 tsp horseradish
2 tsp black pepper, coarsely ground
grapes and assorted crackers
1 c pecans, toasted and chopped

SPANISH TORTILLA

The Spanish tortilla has nothing in common with the Mexican variety except its shape and its name. One is just a bread. The other can be an appetizer, a snack, or even a light meal. But the Spanish tortilla has another advantage: because it is better at room temperature than it is hot, it should be made in advance, anywhere from 15 minutes to a few hours. In its most basic form, the tortilla is a potato and egg open-faced omelet that derives most of its flavor from olive oil. Onions or scallions can replace the potato in part or entirely, as can cooked greens like chard. The only hard part is turning the partly formed tortilla, so do it swiftly and carefully (using a nonstick skillet makes it much easier). The worst that will happen is that a little potato and egg will be left behind when you return the cake to the skillet. If you can't bring yourself to risk the flip, just slide the pan into a 375-degree oven until the eggs are completely set, but not overcooked.

Spanish Tortilla image

Steps:

  • Peel and thinly slice potatoes and onions; it's easiest if you use a mandoline. Meanwhile, heat oil in an 8- or 10-inch nonstick skillet over medium heat. After 3 or 4 minutes, drop in a potato slice. When tiny bubbles appear around its edges, add potatoes, onions, a good pinch of salt and a liberal sprinkling of pepper. Gently turn mixture in oil with a wooden spoon, and adjust heat so oil bubbles lazily.
  • Cook, turning potatoes gently every few minutes, until they are tender when pierced with a small knife. Adjust the heat so they do not brown. If potatoes begin to break, they are overdone; stop cooking immediately. As potatoes cook, beat eggs with some salt and pepper in a large bowl.
  • Drain potatoes in a colander, reserving oil. Wipe out skillet, and heat over a medium flame for a minute. Add 2 tablespoons oil. Gently mix warm potatoes with eggs, and add to skillet. As soon as edges firm up, after a minute or so, reduce heat to medium-low. Cook 5 minutes.
  • Insert a rubber spatula all around edges of tortilla to make sure it will slide from pan. The top will still be runny. Carefully slide out onto a plate. Cover with another plate, and holding plates tightly, invert them. Add another tablespoon oil to skillet, and use the spatula to coax tortilla back in. Cook 5 minutes, then slide from skillet onto a clean plate. Serve warm (not hot), or at room temperature. Do not refrigerate.

Steps:

  • 1. Stir together first 4 ingredients; stir in chilies and cheeses.
  • 2. Spoon mixture into a lightly greased 11 x 17 inch baking dish.
  • 3. Bake at 350 degrees F. for 45 minutes or until set. Cool and cut into squares.

I have had many requests for this recipe, and nobody can believe how simple it is, as it looks so elegant when served. I serve with "Wheat Thins" crackers.

Layered Torte Appetizer image

Steps:

  • Cream the cream cheese and salad dressing mix together.
  • In separate bowl, stir together artichokes, peppers, salt and black pepper, garlic, and parsley.
  • In a 3-cup bowl lined with plastic wrap, alternate layers of cheese and vegetables, beginning and ending with cheese layer.
  • Invert onto plate; remove plastic wrap.
  • You may garnish the top with additional parsley or with sliced black olives, if desired.
  • Serve with crackers or fresh veggie dippers.

  • Preheat oven to 450°. In a small bowl, cream butter and 1/4 cup sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually beat in flour. Press onto bottom and 1 in. up sides of a greased 9-in. springform pan., In a small bowl, beat cream cheese and remaining sugar until smooth.
