Steps:

  • Heat oven to 350°F. In medium bowl, combine cake mix and vanilla. Cut in 1/2 cup butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until mixture is crumbly. Reserve 1 cup mixture for topping. In bottom of ungreased 8-inch square pan, press remaining crumb mixture. Bake 15 minutes. Meanwhile, stir walnuts, oats and melted butter into reserved crumb mixture.
  • Spread apple butter evenly over partially baked crust to within 1 inch of edge. Sprinkle with reserved crumb mixture, pressing gently into apple butter.
  • Bake 35 to 40 minutes or until center is set. Cool in pan on cooling rack 1 hour. Sprinkle with additional chopped walnuts, if desired. Cut into 4 rows by 4 rows.

Oatmeal and Apple Butter Bars image

Steps:

  • Heat oven to 350 degrees.
  • Grease 9-inch square baking pan with nonstick cooking spray.
  • In large bowl, combine oats, flour, sugar, salt and cinnamon.
  • Add butter and beat with electric mixer on low until mixture is crumbly.
  • Pat half of the mixture, about 2 cups into baking pan.
  • Spread apple butter evenly over crumb layer.
  • Sprinkle remaining crumbs over apple butter and press down gently.
  • Bake 30-35 minutes or until golden.
  • Transfer pan to wire rack and cool completely.
  • Cut into 16 bars.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 13 x 9 x 2 inch baking pan.
  • Beat butter or margarine until creamy. Add half of the flour, the brown sugar, white sugar, egg, apple butter, baking soda and the apple pie spice. Beat together until well blended. Beat in remaining flour and stir in raisins. Spread in prepared baking pan.
  • Bake for 20-25 minutes or till toothpick in center comes out clean. Cool in pan on wire rack. Drizzle with icing. Cut into bars.

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
  • Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
  • Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
  • For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes.   • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. This was originally a pie recipe that I got from TOH magazine, but I converted it to bars, just for fun! This does make an excellent pie, too, just halve the recipe. I may just post this again, in pie form, so that people who do searches for pies can find it. The crust is quite simple (finally!) I never can make a crust without the family running away in fear of getting hit with flying pastry thrown in frustration. This doesn't look too pretty, but it sure is good!

Apple Peanut Butter Bars image

Steps:

  • Make the bars: Preheat your oven to 350 degrees F with a rack in the center. Spray an 8-inch square baking pan with nonstick spray, line the bottom with parchment paper, then spray the parchment.
  • Melt the butter in a medium skillet and then pour into a medium heatproof bowl, reserving about 1 tablespoon of the butter in the skillet. Add the apples and 1 tablespoon of the granulated sugar to the skillet, toss and cook over medium heat until the apples are softened and slightly shrunken and most of the juice has evaporated, 3 to 5 minutes.
  • While the apples cook, whisk together the oats, flour, salt, cinnamon, and baking soda in a medium bowl and set aside.
  • In the medium heatproof bowl, stir the brown sugar, remaining 1/3 cup granulated sugar, peanut butter and vanilla into the melted butter. Add the egg and mix well to combine. Stir in the dry ingredients, mixing well, and then stir in the cooked apples and apple chips. The dough will be stiff.
  • Spread the dough into the prepared baking pan and smooth the top. Bake for 40 to 45 minutes, until evenly deep golden brown and the center feels firm to the touch. Place the pan on a wire rack and cool completely.
  • Finish the bars: Remove the cooled bar from the pan. Melt the white chocolate chips in the microwave in a small microwaveable bowl in 8 second increments, stirring well after each until melted, about 30 seconds. Transfer to a sandwich bag, snip off a small opening at the tip and drizzle the white chocolate over the surface of the baked bar. Sprinkle with the apple chip pieces. Cut in half and then cut each half into 6 bars. Store covered at room temperature for up to 4 days.

Blue Ribbon Apple Butter Cheesecake Bars image

Steps:

  • Preheat oven to 350*.
  • Grease a 9x13" baking pan or coat with nonstick spray.
  • In a large bowl, with electric mixer on medium speed, beat together the butter, maple syrup and salt until lightened and fluffy, about 2 minutes.
  • Beat or stir the flour into the butter mixture just until evenly incorporated.
  • Firmly press the dough into the pan.
  • Lay a sheet of wax paper over the dough, then press it out to the edges until flat and smooth on top. Peel off and discard the paper. Using a fork, prick the dough all over.
  • Bake in the upper third of the oven for 17-21 minutes or until tinged with brown at the edges.
  • Transfer the pan to a wire rack and let cool briefly.
  • Using a table knife, spread the apple butter evenly over the dough.
  • CREAM CHEESE LAYER.
  • In a food processor, process the cream, maple syrup, egg and vanilla until well blended and completely smooth, about 30 seconds, stopping and scraping down the bowl sides several times or beat in bowl of electric mixer on low speed, the cream cheese, until very smooth, add the maple syrup, egg and vanilla and continue beating until well blended.
  • Pour the cream-cheese mixture over the apple butter, rap the pan or generously shake it to spread the cream cheese mixture out to the edges.
  • Bake in upper third of oven for 25-30 minutes or until the cream cheese layer is beginning to brown and appears barely set when the pan is jiggled.
  • Transfer the pan to a wire rack and let stand until cooled. Sift the cinnamon over the top.
  • Refrigerate until chilled and firm, about 1 hour.
  • Using a large sharp knife, cut the slab into 18 bars, wipe the knife clean between cuts.
  • Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 1 month -- If freezing, leave slab whole, then cut into bars when partially thawed.
