YUMMY APPLE CIDER PANCAKES

I had some cider that was getting sour (hardening?) and I always use powdered milk for cooking and thought why not give it a try? So we had pancakes made with powdered milk and apple cider instead of liquid milk. Surprisingly yummy!

Steps:

  • Sift flour, powdered milk, sugar, baking powder, cinnamon, and baking soda together in a bowl. Whisk apple cider, 1/4 cup vegetable oil, and eggs together in a separate bowl. Stir apple cider mixture into flour mixture until batter is just combined.
  • Heat 1 teaspoon vegetable oil in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Steps:

  • Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.
  • Heat a large skillet over medium heat, and spray with cooking spray. Use about 1/4 cup of batter per pancake. Cook 3 to 4 pancakes at a time. Turn over when bubbles appear in the center, and cook until golden on the other side. Serve immediately with pats of butter and maple syrup.

Steps:

  • Combine flours, baking powder, sugar, and salt.
  • Combine eggs, apple cider, oil, and apples then mix with dry ingredients just until moistened.
  • Spray hot griddle with cooking spray, ladle 1/4 cup batter onto griddle, cook until bubbles form on top, flip, continue cooking until golden.
  • Serve with Cardamom Cider Syrup (posted seperately).

A few weeks ago, we had an informal family dinner with our cousins who had recently returned to the US from teaching in Latin America. Needless to say, we had lots to catch up on...comparing stories of life in a foreign country, discussing the different Spanish words, phrases and idioms for the different countries we'd visited. Anywho...my mom-in-law brought over some apple cider and we got so caught up in all the laughter and conversation that I forgot all about the cider in the fridge! After all were gone, we were cleaning up and discovered the unopened cider...and I immediately started thinking...what else can I do with this, besides drink it?!   • In a small bowl, combine the first six ingredients; stir in apple and raisins. Combine the buttermilk, egg yolk, butter and vanilla; stir into dry ingredients. In a small bowl, beat egg white until soft peaks form; fold into batter. , Pour batter by heaping 1/4 cupfuls onto a hot greased griddle; turn when bubbles form on top. Cook until the second side is lightly browned., Meanwhile, in a small saucepan, combine the sugar, cornstarch and cider until smooth; add cinnamon stick.
