APPLE CINNAMON ROLLS

This came from the Yankton, South Dakota Press and Dakotan newspaper. My DD does not like cinnamon rolls (my child?) so I thought this might be more like a caramel apple and less like cinnamon. It is very caramel-like and the apples are soft and fragrant. Worth the time to make the filling. If you have a kitchen aid mixer, follow your manufacturer directions to make the dough with the mixer!

Apple Cinnamon Rolls image

Steps:

  • To prepare apple filling:.
  • In medium saucepan, combine apples, flour sugar and butter.
  • Bring to a boil over medium high heat.
  • Cook 3 minutes.
  • Reduce heat to medium low and cook 10 minutes, stirring constantly until thick.
  • Stir in cinnamon and nutmeg.
  • Cool completely.
  • While filling cools, prepare dough.
  • In a large bowl, combine 1 cup flour, sugar, undissolved yeast and salt.
  • Heat 1/2 cup water with milk and butter until very warm (120-130°F).
  • Gradually add to dry ingredients.
  • Beat 2 minutes at medium speed, scraping bowl occasionally.
  • Add eggs and 1 cup flour; beat 2 minutes at high speed, scraping bowl occasionally.
  • Stir in enough remaining flour to make a soft dough.
  • Knead dough on lightly floured surface until smooth and elastic, 8-10 minutes.
  • Cover and let rest 10 minutes.
  • Divide dough into 2 equal parts.
  • Roll each part into a 12x8 inch rectangle.
  • Spread cooled apple filling evenly over dough.
  • Beginning at long end of each rectangle, roll up dough as tightly as you would for a jelly roll.
  • Pinch seams to seal.
  • Cut each roll into 12 equal pieces.
  • Place, cut sides up, in two greased 9 inch round pans.
  • Cover and let rise in warm, draft-free place until doubled in size, about 45 minutes.
  • While dough is rising, prepare cinnamon-sugar topping.
  • Stir together sugar, cinnamon, and nutmeg until well blended.
  • After dough has doubled in size, sprinkle rolls with cinnamon-sugar topping.
  • Bake in 375°F oven for 25-30 minutes or until done,.
  • Remove from pan, serve warm.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

  • Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.

Crescent Roll Apple Dumplings image

Steps:

  • Preheat oven to 350 degrees F.
  • Wash the apples, peel and cut into eight equal slices or segments.
  • Unwrap the crescent roll and separate the triangles.
  • Place a piece of apple on each triangle of dough (on a wider side) and roll it in a croissant. You can wrap it like a crescent roll or you can wrap the dough over the apple slice covering the whole apple (dumpling style), either way.
  • Place each dumpling in an 11 x 13-inch baking dish that has been sprayed with Pam or coated with a stick of butter.
  • In a sauce pan, combine water, butter, sugar, and vanilla and heat to a rolling boil.
  • Pour boiling mixture over the dumpling and sprinkle dumplings with cinnamon.
  • Place uncovered in 350 degree oven and bake for approximately 30 minutes, or until they become golden brown.

Apple Dumplings with Rich Cinnamon Sauce image

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 425 degrees.
  • Mix 3 Tbs. of butter, 1/2 cup of brown sugar, 1 tsp. cinnamon and all the nuts in a small bowl. Spoon a portion of the mixture into each hollowed-out apple core.
  • For boxed pie crusts, unroll one of the dough sheets onto a floured work surface. Pulling on sides of dough to straighten rounded edges, roll it into an approximate 12-inch square, then cut the dough into four 6-inch squares; brush the perimeter of each square with egg white. Set an apple half on each square. Bring up the 4 corners of dough around the apple and pinch edges to seal. Place on a large (at least 18- by 12-inch) parchment-covered baking dish. Apple Dumplings With Cinnamon Syrup image

Steps:

  • Mix flour and salt. Cut in shortening until mixture is crumbly. Add enough water to make dough. Divide dough into 6 equal parts. Keep covered while making filling.
  • Peel and slice apples. Sprinkle with cinnamon and sugar. Set aside.
  • Put syrup ingredients in medium saucepan. Boil for 3 minutes.
  • Roll each pastry piece into a circle. Place apples in center of each circle. Wet edges of pastry and bring up edges around the apples. Pinch to seal.

"APPLE DUMPLING" CINNAMON ROLLS

I found a couple of my long lost small paperback cookbooks that I had purchased sometime back in the 90's...I couldn't believe my eyes when I found them. In finding them I have found a treasure of goodies in these two little books. I had this particular recipes marked to try...never did because I misplaced the books before I could make this particular recipe. In finding these treasures I got a chance to make one of the recipes about 2 months ago...was I pleasantly surprised. These apple dumplings are more like cinnamon rolls so that is why I decided to change the name to the above title...I will tell you this, these are out of this world delicious, bet you can't eat just one...I double dog dare ya!! I am posting what the description in the cookbook shares about the apple dumplings..."These are not your typical dumplings. They look like cinnamon rolls, but really are pastry wrapped and rolled like a cinnamon roll with a shredded apple filling."

  • For sauce, in a large saucepan, combine 2 cups sugar, the water, margarine, 1/4 t. each of cinnamon and nutmeg. Bring to boiling and boil for 5 minutes; set aside (should have about 2 cups of sauce).
  • For dough, in a large mixing bowl, combine flour, baking powder, and salt. Using a pastry blender, cut in shortening until pea-size. Make well in center. Add milk all at once. Stir just until moistened. Knead dough on a lightly floured surface 10-12 strokes or until nearly smooth. Roll out to 12X10 inch rectangle.
  • For filling, combine 1/4 cup sugar and 1/2 t. cinnamon; set aside. Sprinkle apples evenly over dough. Sprinkle with sugar mixture. Roll dough into spiral starting from a long side.
