MACAROON APPLE COBBLER

Steps:
- Place the apples in an ungreased 9-in. pie plate. Combine sugar and cinnamon; sprinkle over apples. Top with coconut and pecans; set aside., To make topping, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and baking powder; gradually add to the creamed mixture until blended. , Drop small spoonfuls over apples. Bake at 350° until top is golden brown and fruit is tender, 25-35 minutes. Serve warm.

- Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. Refrigerate while preparing filling., In a large bowl, beat eggs, milk, melted butter, extract and salt until blended. Stir in flour. Reserve 1/2 cup coconut; stir remaining coconut into egg mixture. Transfer to pie crust. Sprinkle with reserved coconut., Bake on a lower oven rack until golden brown and filling is set, 35-45 minutes. Cool on a wire rack. Refrigerate leftovers.

MY GRANDMOTHER'S APPLE MACAROON
A apple cinnamon & pecan filling covered by a crispy crust. This is a farovite of mine that I found in my grandmothers recipe book. When I say recipe book I don't mean a store bought one. This was written in her own hand. I do hope you enjoy as much as I do.

Steps:
- FILLING:.
- Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)
- Mix together the sugar and cinnamon then sprinkle over the sliced apples.
- Next sprinkle on the chopped pecans.
- BATTER:.
- Mix together the eggs, 1 1/2 cup sugar, 1 1/2 cup flour, 3/4 cup shortening and the 3/4 cup butter. Batter will be thick.
- Spread on top of filling.
- Bake at 300 until crust crisps approximately 45 minutes to 1 hour.

This wonderful pie is a variation of macaroni and cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.
- Bake in a preheated over for an hour or until a knife inserted comes out clean.

- 1. In a bowl,combine flour and salt;cut in shortening until crumbly. Gradually add cold water,tossing with a fork until a ball forms. Roll out pastry to fit a 9 inch pie plate. flute edges.
- 2. Toss apples with sugar and cinnamon;pour into crust. Bake in a preheated oven 375 degrees for 20 minutes.
- 3. Meanwhile, combine the 1st 4 topping ingredients in a bowl. Stir in egg,butter and vanilla until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover. Bake 30 minutes longer or until apples are tender.
APPLE MACAROON PIE
My husband loves pies better than cakes so I try to find a lot of pie recipes to make for him. This is an interesting combination and he really liked it.

- 1. Preheat oven to 400. Rub a little egg white or milk on bottom of crust to prevent it from being soggy.
- 2. Place apple slices in bottom of pie shell. Combine the flour, sugar & salt then sprinkle over apples. Dot with the tablespoon of butter and bake on 400 for 20 minutes.
- 3. TOPPING: While pie is baking, prepare topping by combining the sugar, melted butter, coconut, egg and milk. Remove pie from oven and reduce temperature to 350.
- 4. Spread topping on hot pie and return to oven. Bake @ 350 an additional 30 minutes or until pie is done.
EASY COCONUT MACAROON PIE
This is an excellent and easy coconut macaroon pie to make! My family and friends all request it for our gatherings. This pie recipe was given to me when I needed a pie for a bake sale. I usually will triple this recipe and will be able to get 2 deep dish pies.
