FRESH APPLE SPICE CAKE
Steps:
- Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
- Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

- Place all the raisins in a small bowl with the rum and let sit overnight or at least 4 hours.
- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking pan.
- In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time; mix in applesauce.
- In another bowl, stir together the flours, cornstarch, baking soda, cinnamon, nutmeg, salt, and cocoa. Gradually add flour into the batter, mixing until fully incorporated. Stir in the raisins, along with any rum that was not absorbed, and the walnuts. Turn batter into the prepared pan.
- Bake in preheated oven until a tester inserted in the middle of the cake comes out clean, about 25 minutes. Cool on wire rack.

Wonderful cake, it has a wonderful flavor, goes with anything. I orginally started making this on Thanksgiving. Lots of ingredients but well worth it in the end.

- 1. In large bowl, combine the apples and sugar let stand for 30 mins.
- 2. In a small bowl, whisk the eggs, oil, and almond extract. Add to teh apple mixture and toss to coat. Combine the flour, baking powder,salt, and cinnamon, stir into apple mixture just until moistended. Stir in pecans. (if you like nuts add some more to suit your taste)
- 3. Transfer mixture to a large greased 11-inch x 7inch x 2in baking dish. Bake at 350 for 35 - 40 minutes, or until toothpick comes out clean.
- 4. For sauce, in a small saucepan, melt butter. Stir in the sugar, flour, and salt until smooth. Gradually add water. Bring to a boil, cook and stir for 2 minutes. Remove from heat, stir in vanilla and rum extract. Serve with warm cake. ( I drizzle it over the entire cake, then serve.
