Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray muffin tins with non-stick cooking spray.
- In large bowl, stir together flour, baking powder, soda, and salt.
- In a medium bowl, beat egg whites slightly. Stir in bananas, sugar, oil, and lemon peel. Add to flour mixture, stirring just until combined. Stir in walnuts. Fill muffin pan cups 2/3 full.
- Bake for about 20 to 25 minutes, or until tops are lightly browned. Remove muffins from pan.

CHOICE APPLE AND BANANA MUFFINS
This is an excellent recipe where no butter, oil or any type of fat is added. It is not to dry and not too moist. The best thing about them is you can snack on them anytime you wish and how many as you like and not be worried. They also taste EXCELLENT! The glaze is a must.

- Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
- In a large bowl, stir together flour, 1/2 cup sugar, salt and 1 teaspoon cinnamon. Stir in milk, banana, apples, orange zest and vanilla extract. Spoon batter into prepared muffin cups.
- Bake in preheated oven until golden brown, about 25 to 30 minutes. Check bake time by inserting a toothpick into the center of a muffin. The muffins are done when the toothpick comes out clean.
- While muffins bake, combine 1/4 cup white sugar and 3 tablespoons water in a small saucepan. Bring mixture to a boil and cook for 1 minute. Brush glaze over baked muffins, then sprinkle muffins with as much cinnamon as you like.

- Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
- In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
- Spoon the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean.
- Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

- In a saucepan, melt butter.
- Stir in brown sugar, flour, cinnamon and nutmeg until smooth.
- Add apples; cook over medium-low heat for 10 minutes or until apples are tender, stirring frequently.
- Remove from the heat; stir in nuts.
- Set aside to cool.
- In a mixing bowl, cream butter and sugar.
- Add eggs, one at a time, beating well after each addition.
- Beat in vanilla.
- Combine the dry ingredients; add to the creamed mixture alternating with sour cr eam.
- Spoon 1/4 cupfuls of batter into greased jumbo muffins cups.
- Spoon apple mixture into the center of each (do not spread). Top with remaining batter.
- Sprinkle with cinnamon-sugar.
- Bake at 350° for 25-27 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
- Editors Note: If using regular-size muffin cups, fill cups half full with batter; add a rounded teaspoonful of apple mixture and remaining batter.

- Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
- In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together like you mean it, for a good 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Mix in the dry ingredients just until incorporated. Fold in the nuts and the mashed bananas with a rubber spatula. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
- Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.

- Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. Spread walnuts on a baking sheet and bake until fragrant, about 12 minutes. Cool 15 minutes then coarsely chop. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, eggs, butter, and milk. Stir wet ingredients into dry ingredients then stir in 1 cup walnuts.
- Divide batter evenly between prepared cups using a 2-ounce scoop. Sprinkle with remaining 1/2 cup nuts and sanding sugar if desired. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.
BEST EVER BANANA MUFFINS
These are the only banana muffins I make now. I add chocolate chips to my batter and triple the recipe. These freeze great. I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". (Prep time is a guess.)
