APPLE CRUMBLE BARS

Dried apples make these fruity bars easy to enjoy any time of year-or any time of day. They're as delicious for breakfast as they are topped with ice cream for dessert. I make these a lot for bake sales, too.

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
  • Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl. Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
  • For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste.
  • Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. Cool completely on a rack, about 2 hours, before slicing into 16 squares.

10 tablespoons unsalted butter, melted and cooled, plus more for greasing
1 cup white whole-wheat flour
1 cup rolled oats
2/3 cup firmly packed dark brown sugar
1/4 cup confectioners' sugar
1/4 teaspoon baking soda
Pinch fine sea salt
Filling:
1/2 cup apple butter
4 ounces dried apples
4 ounces dried cherries, golden raisins or other dried fruit
1/4 teaspoon ground cinnamon

Apple Pancake Bars with Brown Butter Crumble Topping and Apple Syrup image

Steps:

  • For the brown butter crumble topping: Put the butter in a small saucepan and cook over medium heat until amber brown, 3 to 4 minutes.
  • Whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg and salt in a medium bowl. Stir in the butter. Refrigerate the mixture for 15 minutes, then squeeze it to make crumbles.
  • For the apple pancake bars: Preheat the oven to 375 degrees F. Line a 9-by-13-inch baking dish with a parchment paper overhang on the long ends and spray with nonstick baking spray.
  • Whisk together the flour, granulated sugar, baking powder, baking soda and salt in a large bowl. Whisk together the buttermilk, butter, vanilla and eggs in a medium bowl until smooth. Add the wet mixture to the dry along with the granola, lemon zest and juice and apples and mix until just combined. Lumps are ok. Transfer the batter to the prepared baking dish and let it rest for 15 minutes.
  • Sprinkle the crumble evenly over the batter and bake until lightly golden brown and the top springs back when touched, 15 to 20 minutes (see Cook's Note). Let cool for 10 minutes, then remove to a baking rack.
  • For the apple syrup: Meanwhile, combine the apple juice, granulated sugar and apples in a shallow skillet, bring to a boil and cook until the mixture is thickened and reduced by half. Add a splash of lemon juice, strain the syrup through a fine strainer and keep warm.
  • Dust the top of the apple pancake with the confectioners' sugar, cut into bars and transfer to a platter. Drizzle the warm apple syrup over the bars or pass it for dipping.

7 tablespoons unsalted butter
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg

  • Dutch Apple Bread. Kicking things off is this moist and flavorful Dutch apple bread. If you’re not familiar with it, it’s a quick bread loaded with apple chunks.
  • Apple Cinnamon Muffins. Start your day on a delicious but healthy note with these apple cinnamon muffins. Muffins are usually loaded with berries. But in this recipe, you’ll give the classic muffins a fun fall twist with apples and cinnamon.
  • Apple Cinnamon Pancakes. Regular pancakes are great. But apple cinnamon pancakes? These are next-level amazing. The pancakes are soft, fluffy, and spiced with cinnamon.
  • Apple Pie Muffins. They’re muffins, but they taste just like apple pie. It’s the perfect excuse for eating dessert for breakfast. Because this recipe calls for canned apple pie filling, you can make it all year round.
  • Sausage Apple Breakfast Casserole. Apple recipes are mostly sweet, but this breakfast casserole is a mix of sweet and savory. This casserole is a combination of cubed sourdough bread, sausage crumbles, cheese, and apples.
  • Apple Smoothie. Smoothies are often made with berries, but not today. This apple smoothie is smooth, creamy, and bursting with fall flavors. It’s sweetened with apples and bananas, made creamy by almond milk, peanut butter, and oatmeal, and spiced with cinnamon, nutmeg, and allspice.
  • Apple Crisp. If you’re missing your grandma’s baking, this recipe is for you. This apple crisp is exactly the kind of home-cooking goodness your grandma makes!
  • Stovetop Apple Cinnamon Stovetop Oatmeal. I’ll be honest, I’m not a fan of plain oatmeal. I know it’s ultra-nutritious, but I can’t stand it on its own.
  • Overnight Cinnamon Apple Baked French Toast Casserole. I can never say no to French toast. I mean, who can, right? But what I don’t appreciate is the effort required to make it.
  • Apple Brown Betty. Say hello to Apple Brown Betty, the easy way to make apple pie. It’s a pie with an apple filling and a crumble on top. It may not have a crust underneath, but the topping definitely makes up for what’s lacking.
