Steps:
- Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together butter, sugar, and 1 cup flour. Press into the bottom of an ungreased 9x13 inch pan.
- Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
- In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared crust.
- Bake for an additional 20 minutes in the preheated oven, or until firm. Cool, and dust with confectioners' sugar before cutting into squares.

Steps:
- Line base of a 18cm x 28cm pan with baking paper.
- Put the cookies in a food processor or blender and grind to crumbs.
- Combine the crumbs with the chopped apricots and coconut in a bowl.
- Pour the condensed milk into a medium saucepan and add the butter.
- Stir over a medium heat until butter is melted and ingredients are combined.
- Pour into dry ingredients and mix thoroughly.
- Press mixture into pan and refridgerate until set.
- Melt the milk chocolate chips gently in a microwave on a low setting.
- Spread melted chocolate over the top of the squares and allow to set.
- Once chocolate is set, cut into squares or bars to serve.

- In a large mixer bowl combine all crumb ingredients.
- Beat low speed, scraping bowl often, until mixture is crumbly, 1-2 minutes.
- Reserve 1 cup of mixture; press remaining mixture into a greased 13x9-inch pan.
- Spread the apricot preserves to within 1/2 inch from the edge of the crumb mixture.
- Sprinkle with crumb mixture and coconut.
- Bake 22-27 minutes, or until edges are lightly browned.
- Let cool completely before you cut into bars.

This is a variation on my Recipe #487220. Came up with this in order to use up some extra dried fruit and to make sure my trays this year looked a little different from prior offerings.

Steps:
- Preheat oven 350 degrees.
- Using a mixer, beat eggs, Splenda and almond flavoring in medium bowl. Blend in in margarine and vanilla.
- Measure out the flour and combine 1 tablespoon with the diced apricots to get the fruit to separate into bits.
- Combine the rest of the flour with the baking powder and salt in small bowl. Stir into egg mixture. Fold in coconut, hazelnuts or almonds, and floured apricots.
- Spread batter evenly in greased 8-inch square baking pan.
- Bake until browned and toothpick inserted in center comes out clean, about 20 minutes. Cool in pan on wire rack.
- Cut into squares.

- In a small saucepan gently heat the coconut oil until it is liquid, stir in the honey or maple syrup. Set aside and leave to cool for a minute.
- Place all of the ingredients in a food processor or blender with strong blades. Blitz for a couple of minutes until you have a sticky dough like consistency. The amount of time needed to do this will vary depending on the strength of your food processor.
- Line a slice tray with baking paper. Scoop out the dough and press it evenly along the pan. You might like to flatten it with the back of a spoon.
- Place the tray in the freezer on a flat surface for 30 minutes. Remove and cut into slices. Sprinkle desiccated coconut on top if desired.

- Grease and line a 20 x 30 cm (8 x 12 inch) slice pan with baking paper, ensuring there's at least 3 cm (1 inch) overhang for easy removal of the hedgehog.
- Lightly crush the biscuits either using a rolling pin or food processor. There should still be some reasonably large chunks of biscuit to give the slice a better texture. Set aside.
- In a separate large heat-proof bowl, stir together the chopped chocolate and butter. Microwave at full power for 1 minute. Stir. Microwave in further 30 second bursts, stirring well in-between, until chocolate is completely melted and smooth.
- Add crushed biscuits, coconut, apricots and sweetened condensed milk. Stir together until very well combined.
