APRICOT BRANDY
My dad loved apricot brandy. He would have loved this recipe which I got from a community cookbook somewhere.

Steps:
- Place ingredients (DO NOT MIX) in a 1/2 gallon flat topped glass jar.
- Turn jar twice a day for 8 days (allowing jar to sit on its top for half a day).
- Batch is ready.
- You may use the same apricots, more sugar, and vodka added to make another batch, but let second batch sit for 12 to 14 days.
APRICOT BRANDY SLUSH
This is so good and refreshing. Nice drink to keep in the freezer during summer. This is great to bring camping if you have a freezer. Cooking time is freezing time. Servings are "guesstimated".

- Dissolve the sugar in the boiling water.
- Add all other ingredients.
- Mix and freeze.
- To serve, spoon some slush into a cup and add some Squirt or 7Up to your liking.
- Can also be served for breakfast with added orange juice or for evenings with added brandy.

Steps:
- In 2 cups boiling water, add tea bags; set aside.
- In a large plastic container, combine 7 cups cold water, sugar, orange juice, lemonade and brandy.
- Add tea and freeze.
- Serve in a glass with any lemon-lime drink.
- Add a maraschino cherry for garnish.
FORBIDDEN FRUIT
Steps:
- Combine sugar, vanilla bean, wine and zests in a medium saucepan. Bring sugar solution to the boil then reduce to a simmer and add the berries. Poach berries for 3 minutes. Remove pan from heat and allow to cool in liquid. While cooling, soak apricots in apricot brandy. Place berries in a food processor along with soaked apricots and peach brandy. Puree until smooth. Whip the heavy cream to stiff peaks. Fold cream into berry puree. Divide the mixture into four 3-inch diameter custard cups. Freeze.
- Make the sauce: Combine the apricots, apricot brandy and 1/2 cup of the simple syrup. Place in a blender and puree until smooth. Reserve until needed.
- Make the sugar cage: Combine the sugar, water and glucose in a small saucepan. Stir once with a metal spoon. Place over medium heat for 2 minutes then turn to high. Cook sugar to a very light caramel. While sugar is cooking prepare a small bowl of ice water, enough to just cover the bottom of the saucepan. When sugar is at desired color, immediately remove to the ice water, taking great care not to get any water in saucepan. This mixture can be used right away or reserved and reheated to use in the future. Sugar is at desired consistency when a metal tablespoon dipped into the mixture runs off in a thread like the consistency of honey. The sugar should not be too thin. To form a cage, lightly grease with vegetable oil the outside of a 6-inch metal mixing bowl. Stand the mixing bowl upside down on a piece of aluminum paper. Lightly grease the aluminum paper outside the bowl. Dip a spoon into the sugar and flick the sugar back and forth over the bowl in one direction. Repeat this across the bowl in the other direction, creating a lattice of sugar. Allow to cool for 1 minute. To remove the cage from bowl, using the whole of the hand, gently twist the cage free. Repeat with remaining sugar to create a total of 8 cages.
- Assemble the dessert: Remove the frozen parfait from the freezer. Run a paring knife around the ramekin to loosen parfait. (If parfait doesn't come out immediately, place the custard cup in warm water for 10 seconds to help loosen.) Place a cage, round side down, in the middle of a serving plate. Unmold parfait in middle of cage and spoon sauce around. Top with another cage to create a dome effect. Place berries around the plate.
APRICOT EGGNOG BARS
One year I thought it would be wonderful to have a caroling party and serve several beverages, include eggnog, which no one touched. Since I did not want to toss out a half gallon of it, I looked for a recipe to use it. - In a small bowl, combine the crushed cookie crumbs, almonds and butter. Press onto the bottom of an ungreased 11x7-in. baking dish. Bake at 350° until golden brown, 8-10 minutes. Cool on a wire rack., Chop 8 oz. white chocolate. In a small saucepan, melt chopped chocolate; cool. Sprinkle apricots over crust., In a large bowl, beat cream cheese until smooth. Beat in the melted chocolate and, if desired, brandy. Gradually beat in eggnog. Add egg; beat on low speed just until combined. Pour over crust., Place baking dish in a larger baking pan; add 1 in. of boiling water to larger pan. Bake, uncovered, at 350° until center is just set (mixture will jiggle), 55-60 minutes., Remove baking dish from water bath; cool on a wire rack. Cover and refrigerate until firm, about 2 hours. Chop and melt remaining chocolate; drizzle over top. Cut into bars. Refrigerate leftovers.

- Halve the Apricots, and remove the stone. Crack one third of the stones and remove the kernels; Blanche by dipping into hot water.
- Place the Apricots, kernels, water and lemon juice into a pan and simmer until it is tender, test for pectin. When a satisfactory clot is formed, add the sugar (sugar is best warmed beforehand) stir until disolved then bring to boil and boil rapidly until setting point is reached stirring occasionally.
- Remove from the heat and immediately stir in the Brandy, remove any scum and pour into hot sterilized jars and cover.
APRICOT BRANDY SLUSH
It takes a good 3 days to form a good slush! Combine 1/2 cup slush with 1/2 cup ginger ale to serve.

- Bring 7 cups water to a boil in a large saucepan; add sugar and stir until dissolved, about 5 minutes. Remove from heat and cool syrup to room temperature, about 30 minutes.
- Bring 2 cups water to a boil in a small saucepan; remove from heat and add tea bags. Steep until water is room temperature, about 30 minutes. Remove and discard tea bags.
- Pour brewed tea over syrup. Add orange juice, lemonade, and apricot brandy; stir well to combine. Pour into a wide-mouth container. Freeze slush mixture for 3 days, stirring twice a day with a wooden spoon to achieve a slushy consistency.

- In a large saucepan, bring 1 cup water to a boil; remove from heat. Add tea bags; steep, covered, 3-5 minutes according to taste. Discard tea bags. Stir in sugar until dissolved. Cool., Stir in apricot brandy, juice concentrates and remaining water. Transfer to a 2-qt. freezer container.
