Steps:
- Divide rock candy among containers. Add fruit and cover with vodka. Seal containers tightly and let stand for 6 weeks, preferably in a cool, dark place. Serve as an after-dinner drink or drizzle over ice cream.
APRICOT LIQUEUR
Sip in cordial glasses or dribble over vanilla ice cream. Probably my easiest liqueur recipe and very good. Since it's made with DRIED apricots, it can be made year-round. Years ago I gave this a couple times in a monogrammed pocket flask as a 21st birthday present. Cooking time is actually infusion time (at 5-7 days, it's a relatively short time for a fruit-flavored liqueur).

Steps:
- Place apricots and sugar in a screw-top jar.
- Add vodka, screw cover on tightly and shake to dissolve the sugar.
- Leave for 5-7 days, inverting the jar daily (test the taste after 5 days and infuse 2 more if you want a stronger flavor).
- Strain liqueur into a decanter through a fine sieve and store in refrigerator.
- Apricots may be saved, chopped and used as a topping on ice cream.

Steps:
- Put preserves in a 1-cup measure. Cook, uncovered, at 100 percent power in a high-power oven for 1 minute. Remove from oven.
- Stir in 1 tablespoon of the lemon juice and the kirsch. Pass mixture through a sieve into a shallow bowl. Set aside.
- Peel the pears and core them through the bottom. As you work, rub the pears inside and out with the remaining lemon juice to prevent discoloration.
- Roll each apricot lengthwise and put one in the cavity of each pear. Coat the pears in the apricot mixture.
- Arrange pears in a circle around the inside rim of a 2 1/4-quart souffle dish. Cover tightly with microwave plastic wrap. Cook 7 minutes. Prick plastic to release steam.
- Remove from oven and uncover. Serve hot or cold. Put each pear on a plate and spoon some of the remaining sauce over.

- Add a handful of chopped pears to a large mason jar. Cover that with a teaspoon of sugar. Add more pears and sugar. Repeat these layers until the jar is full. Or two jars. However much you want to make is entirely up to you!
- for a while, about 30 minutes to an hour. The sugar pulls the juice out of the fruit, and the overall effect on the richness of the cordial’s flavor is worth the extra wait.
- Look at the jar and see how much juice is in it. If it is more than a quarter full of juice, pour some off. If there is too much sweet pear juice in the jar, it has a chance of fermenting in the jar. That can make a fizzy liqueur at best or an exploding jar at worst!

- Preheat oven to 375 degrees. Place the pie dough into a 9" round tart pan. With a fork, dock the shell. (poking holes on the bottom and sides) Place parchment paper over the shell and place dried beans on top to weight down the parchment paper. This will keep the dough from bubbling up when baking. Blind bake the shell for 15 minutes. Remove the beans and parchment paper and cook for another 10 minutes. Remove from oven and cool.
- Peel, core, and half the pears. Immediately place the pears in a saucepan with lemon juice and enough ice water to cover them. Add the sugar and the vanilla bean. Cover the pears with a round of baking paper and simmer over medium heat until they are just tender. Remove pears from the syrup and drain to prevent over cooking.
- For the Frangipane: Cream the butter with the sugar. Add almond flour and mix until smooth. Add the eggs one at a time and mix until each is absorbed. Stir in the all purpose flour and the rum. Use immediately, or can be stored covered in refrigerator up to four days.
- Slice pears 3/8" thick. Fill the cooled tart shell with 12 ounces frangipane about 1/2" thick. Place the pears over the frangipane in a fan pattern. Bake until the shell is lightly golden and the frangipane has risen and colored. About 40 minutes.
