ASTURIAN BEAN AND SAUSAGE SOUP

Asturian Bean and Sausage Soup image

Steps:

  • Put the beans, ham hock, belly pork rib, blood pudding, and chorizo into a pot and cover with water. Skim as the water comes to the boil and cook for 1 hour or until the beans are almost tender.
  • Cut up the cabbage quite finely. Drain.
  • Remove the meat bones returning any shreds of meat to the pot and slice the sausages. Season with plenty of black pepper and salt to taste. Add the cabbage and potatoes, and more liquid if necessary to cover them comfortably. Simmer until the potatoes are tender and check the seasoning. If your chorizos are not very spicy, you could add some paprika. Serve in big bowls with country bread.

9 ounces white beans, soaked overnight
7 ounces ham hock, soaked for 1 hour
5 ounces belly pork rib, on the bone
5 ounces belly pork rib, cubed
3 fresh mercillos or other blood pudding
2 or 3 chorizo sausages
1 1/2 pounds dark green cabbage
Salt and freshly ground black pepper
1 pound potatoes
Pinch paprika, optional

Asturian Bean Stew with Sausages -- (Asturia, Spain) image

Steps:

  • Soak beans overnight in enough water to cover by 2 inches; drain.
  • Cook bacon in large stockpot on medium-high heat 4 min., stirring occasionally. Add onions, leeks, carrots and garlic; stir. Reduce heat to low; cook 15 min., stirring occasionally. Add beans, ham hocks, sausages, bay leaves and paprika. Add enough water to just cover ingredients in stockpot. Bring to boil over medium heat, stirring occasionally. Skim off foam and fat from top of stew. Reduce heat to low.
  • Simmer, partially covered, 2-1/2 hours or until beans are tender. Skim fat from top of stew. Remove ham hocks. Remove meat from the bones. Return meat to pot; discard bones. Remove bay leaves; discard. Season with salt and pepper.

  • Drain the beans and transfer them to a large enameled cast-iron casserole. Add the onion, garlic, pimentón, crushed saffron, ham hock, bacon and 12 cups of cold water and bring to a boil. Reduce the heat to moderate and simmer the stew, tucking the ham hock under the cooking liquid as necessary, until the beans are almost tender, about 1 hour and 30 minutes.
  • Add the chorizos to the bean stew and cook until the meat and beans are tender and the cooking liquid is thick and slightly reduced, about 45 minutes longer.
  • Discard the onion and garlic and transfer the meat to a bowl. Pull the meat from the ham hock and cut it into large pieces. Cut the bacon and chorizos into pieces. Add the meat to the beans and season lightly with salt and pepper.

  • Heat a large sauce pan with a medium heat and pour in a generous tbsp of extra virgin olive oil, after 2 minutes add in the beyond sausages and mix with the olive oil, after 4 minutes and all the sausages have browned up, remove from the pan and set aside
  • Using the same pan with the same heat add in the diced onions & minced garlics, mix with the olive oil, after 3 minutes and the onions are translucent, add in 1 tsp of sweet smoked Spanish paprika and quickly mix it all together, then add the beyond sausages back into the pan, the drained white beans and season with sea salt & freshly cracked black pepper, gently mix together until everything is well combined
  • Add in a 1 1/2 cups of cold water into the sauce pan, a kiss of sea salt and pinch in 1/2 tsp saffron threads, give it a gently mix and place a lid on the pan, after 8 minutes remove the lid and turn off the heat, the water should have thickend up, giving you a beautiful broth and all the flavors have developed together, transfer into shallow bowls and serve at once, enjoy!
