Aunt Annies Chicken Chili Recipes
AUNT ANNIE'S CHICKEN CHILI
My sister, Ann, hates to cook but has several delicious recipes in her repertoire that she makes again and again. This is one of those recipes. It is a little different from most chicken chilis as it includes black beans and beer and olives. Excellent comfort food! Enjoy.

Steps:
- Heat 3 T. oil in dutch oven and saute chicken until no longer pink.
- Remove chicken and wipe pot dry.
- Heat remaining oil and saute onion, garlic, pepper and cumin 5 minutes.
- Stir in chili powder, oregano, tomatoes, tomato sauce and beer.
- Add chicken, cover and simmer for 20 minutes.
- Add beans, corn and olives.
- Simmer 15 minutes longer.
- Stir in cilantro.
- Top with cheddar and sour cream.
- Serve.
ANNE'S CROCK POT CHICKEN
I don't remember where I got this recipe, but it's been a family favorite. The sauce is good over rice, noodles, or mashed potatoes.

Steps:
- Wash chicken and pat dry.
- Brush with butter.
- Sprinkle with salt and pepper.
- Place in crock pot.
- Sprinkle with dry salad mix.
- Cover and cook on low for 5 to 6 hours.
- About 3/4 hour before serving, mix soup, cream cheese, wine, and onion in small saucepan.
- Cook until smooth. Pour over chicken in pot.
- Cover and cook for 30 minutes on low.
- Serve with sauce.
