APPLE CIDER CINNAMON ROLLS
Feeling creative, I put an apple spin on a traditional cinnamon roll recipe. The results were yummy! A panful is perfect for a weekend morning in autumn.-Kim Forni, Claremont, New Hampshire

- In a large bowl, combine 2-1/4 cups flour, sugar, yeast and salt. In a small saucepan, heat the milk, cider and 1/4 cup butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes. Roll into a 15x10-in. rectangle. Spread remaining butter to within 1/2 in. of edges. Combine the apples, brown sugar, walnuts and cinnamon; sprinkle over butter., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in a greased 13x9-in. baking dish. Cover and let rise in a warm place for 30 minutes. Preheat oven to 325°., Bake until golden brown, 30-35 minutes. For frosting, place cider and cinnamon stick in a small saucepan. Bring to a boil; cook until liquid is reduced to 1/4 cup, about 20 minutes. Discard cinnamon stick; cool cider. , In a large bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and reduced cider; beat until smooth. Spread over warm rolls.

- In a small bowl, dissolve yeast in warm milk. In a large bowl, combine sugar, butter, egg yolk, vanilla, salt, nutmeg, yeast mixture and 1 cup flour; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., In a 10-in. cast-iron or other ovenproof skillet, cook bacon over medium-low heat until crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 3 tablespoons., In the same skillet, combine brown sugar, syrup, cinnamon, nutmeg and 2 tablespoons of reserved bacon drippings; cook and stir until blended. Cool to room temperature. Wipe out skillet; grease with remaining bacon drippings., Punch dough down. Roll into an 18x12-in. rectangle. Sprinkle brown sugar mixture and bacon to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Cut into 12 rolls., Place rolls, cut side down, in prepared skillet. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 400°. Bake on a lower oven rack until golden brown, 18-20 minutes. Cool 20 minutes., In a small bowl, beat frosting ingredients until smooth. Spread over warm rolls. Serve warm.

- Unroll crescent dough into an ungreased 13-in. x 9-in. baking pan; seal seams and perforations. Bake at 375° for 10 minutes., Combine the walnuts, sugar, cinnamon and nutmeg; sprinkle over crust. Spread with pie filling. , In a small bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Stir in coconut and walnuts. Sprinkle over filling. , Bake at 375° for 18-22 minutes or until golden brown. Cool on a wire rack.

- In a large bowl, combine the yeast and flour; add butter and mix well. Add egg yolks and sour cream; mix well. Shape into four balls. Place in separate resealable plastic bags or wrap in plastic; refrigerate overnight. , Combine sugar, pecans and cinnamon; set aside. On a floured surface, roll each ball of dough into a 9-in. circle. Sprinkle with sugar mixture and apple. Cut each circle into 16 wedges; roll up from wide edge and pinch to seal. Place with point side down on greased baking sheets. , Bake at 350° for 16-20 minutes or until lightly browned. Immediately remove to wire racks to cool. For icing, combine sugar, milk and vanilla until smooth; drizzle over the twists. Sprinkle with pecans.

- Heat 1 cup of the milk in a small saucepan over low until it reaches 95°F to 100°F. Pour warm milk into bowl of a heavy-duty stand mixer fitted with dough hook. Sprinkle yeast and 1 teaspoon of the granulated sugar over milk, and stir to combine. Let stand until foamy, about 5 minutes. Add softened butter, eggs, lemon juice, nutmeg, ½ teaspoon of the salt, and remaining ⅔ cup granulated sugar; beat on low speed just until combined.
- Continue beating on low speed, and gradually add bread flour until well combined. Increase speed to medium, and beat until a soft dough begins to form, about 3 minutes. Increase speed to medium-high, and beat until dough is soft and supple and begins to pull away from bow, 7 to 9 minutes.
- Scrape dough onto a lightly floured work surface; knead 3 or 4 times. Shape dough into a ball, and transfer to a lightly greased (with cooking spray) large bowl. Cover with plastic wrap. Let rise in a warm place, free from drafts, until doubled in bulk, 1 to 2 hours.
- Punch dough down, and place on a heavily floured work surface; roll dough into an 18- x 14-inch rectangle. Spread Slow-Cooker Apple Butter over dough, leaving a 1-inch border around edges. Stir together brown sugar, all-purpose flour, and cinnamon in a small bowl. Sprinkle brown sugar mixture over apple butter.
