ALMOND CHEESE SPREAD

"I love this dip recipe! It's a great way to use up leftover or different kinds of cheeses I've already got on hand," says Joan Cooper of Lake Orion, Michigan.

Steps:

  • In a small bowl, combine the first five ingredients; stir in green onion and almonds. Cover and refrigerate for at least 4 hours. Serve with celery or crackers.

2 tablespoons mayonnaise
1/8 teaspoon onion powder
Dash pepper
Dash Louisiana-style hot sauce
1 green onion, chopped
1 tablespoon sliced almonds
Celery ribs or assorted crackers

AWESOME ALMOND SPREAD!

This is a very different dip/spread. It's fabulous as a spread for sandwiches and wraps (especially Cauliflower Wraps #124193.) It's also a tasty and healthy dip for chips, veggies or crackers. Steps:

  • Place almonds in a blender with the 3/4 C water and mix well.
  • Add the remaining ingredients and blend for 2 minutes, or until creamy.
  • Almonds may be blanched before blending if allergies or taste so dictate.

3/4 cup water
3/4-1 cup olive oil
1 -2 large garlic clove
1/2 lemon, juice of
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper (to taste)

I have no idea where I got this recipe, but it is awesome! I love almond in anything and they go together quickly.

Steps:

  • Preheat oven to 425 degrees.
  • Line baking sheet with parchment paper and lightly spray paper with nonstick cooking spray.
  • Combine flour, sugar, baking powder, salt, butter, almond paste and almonds in food processor.
  • Pulse until mixture has the consistency of coarse crumbs. Put in a large bowl.
  • Whisk together egg, egg yolk and 2/3 cup cream until blended. Stir the egg mixture into the flour mixture until dough just begins to hold together.
  • Add dough to lightly floured surface. With lightly floured hands, pat dough to 1/2" thickness.
  • Cut scones using a 2" diameter heart-shaped cookie cutter or round biscuit cutter. Gather excess dough and repeat process. Place scones 3" apart on prepared baking sheet.
  • Lightly brush surface of scones with remaining 2 tablespoons of cream.
  • Bake 15-20 minutes, or until puffed and golden brown.
  • Remove from oven and cool on wire rack.
  • Now: I add about 1/2 teaspoon of almond extract or so to my cream and egg mixture. I do not cut these with a cookie cutter and re-roll. I usually just cut them in squares and then into triangles.
  • I also freeze them on a wax-paper lined sheet for several hours before baking and add about 3-4 minutes to my baking time.

  • Preheat the oven to 350 degrees Fahrenheit. Spread the almonds across a large, rimmed baking sheet and toast the almonds for 10 minutes, stirring halfway.
  • Transfer the almonds to a high-speed blender or food processor. Blend until creamy, pausing to scrape down the sides as necessary. You’re going to think it’ll never blend, but be patient! The almonds will go from flour-like clumps, to a ball against the side of the food processor (keep scraping down the sides and breaking up the ball), and finally, it will turn lusciously creamy. If the mixture gets crazy hot along the way, stop and let it cool for a few minutes.
  • Once the almond butter is very smooth and creamy (no sooner!), you can blend in any add-ins you would like. I always add salt, for more flavor overall. You can also add cinnamon for a hint of spice, and vanilla and/or maple syrup for almond butter that tastes more special than store-bought.
