Steps:
- Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
- In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
- Preheat broiler to high.
- To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
- Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

This recipe was given to my mom by a family friend over 30 years ago and has been enjoyed on many holiday occasions or just on an average Sunday dinner. This dish reminds me of wonderful family gatherings around the table where the only thing that surpassed this comfort food was the laughter and love we all shared. - In a large saucepan saute in extra virgin olive oil (1-2tbs) half of large onion until transparent, then add ground pork and beef season with salt and pepper until cooked. Set aside.
- In another saucepan saute in extra virgin olive oil (1-2tbs) the other half of onion until transparent and then add spareribs and cook for about 10 minutes. Then add whole can of tomatoes, salt and pepper and the tomato puree and cook on medium heat for about an hour-hour and a half. If sauce is evaporating quickly add a bit of water and lower heat. When cooked set aside.
- In a large pot, bring water to a boil and add the pasta, under cook by a minute. Pasta should be a little firmer than "al dente". Strain.
- In a baking dish layer beginning with tomato sauce, pasta, ground meat, followed by velveeta cheese and sprinkling of romano and parmesan cheeses. Continue layering until all ingredients are used. Baked in oven at 400 degress until cheese is melted.
- Stir and serve.

- In a large pot of boiling salted water, cook macaroni al dente.
- Drain and place in the buttered dish.

This magical macaroni dish will make a disappearing act on the dinner table. I've not only served it up as a main dish during the week, but I've served it as a side dish on the Thanksgiving table. This macaroni and cheese is TO DIE FOR. People inhale it and drool over it as it's cooking, the aroma fills the whole house. Once it's on the table, it's gone in 3 seconds flat. It's pretty much AMAZING, if I do say so myself. DON'T skip any steps or substitute any of the ingredients, you have to make it just as it is for it to be amazing. NOT for the faint of heart! Quite an indulgence (look at the ingredients), but it's COMPLETELY worth it. It's the only way to make macaroni and cheese.

- Preheat oven to 325 degrees Fahrenheit.
- Cook macaroni according to package directions, al dente. Drain and set aside.
- Whisk eggs together in big bowl until frothy. Add Velveeta, butter, and 2 cups of the half-and-half.
- Add warm macaroni, mix until smooth.
- Add rest of half-and-half, 3 cups sharp yellow Cheddar cheese, the rest of the various cheeses, salt, and pepper, tossing together.

- Preheat oven to 450 degrees.
- Cook macaroni according to package instructions.
- Drain, rinse and set aside.
- In same pot over low heat, melt the butter.
- Add flour, salt and pepper and whisk into melted butter until smooth.
- Simmer and stir until mixture thickens into a paste and is golden.
- Slowly add milk and whisk into butter mixture until smooth.
- Bring to boil and then simmer until thickened.
- There is no way to tell you how thick, except to say it should be thicker than gravy but not as thick as pudding.
- If you have made basic white sauce, you will know when it is thick enough.
- Remove pot from heat.
- Add cheddar cheese and stir until cheese starts to melt.
- Add macaroni and stir until coated.
- Pour into a 9 x 12 baking dish or 2 quart casserole.
- As an extra indulgence, you can sprinkle 4 oz more cheese on top.
- I only do this if I happen to buy a 12 oz bag or block instead of 8 oz.
- Bake about 20- 30 minutes, when you see top getting a bit crispy and brown.
