CLASSIC SHRIMP SCAMPI
America can't seem to get enough of shrimp scampi: It's one of the 10 most-searched recipes on FoodNetwork.com during the summer (more popular than burgers!) and #shrimpscampi has more than 134,000 posts on Instagram. What's the excitement all about? Do we love shrimp scampi because it's simple but seemingly fancy? Or because it's done in 30 minutes? Or because we just can't resist a buttery wine sauce? All of the above!

Steps:
- Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
- Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
- Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.
BACON SHRIMP SCAMPI
All the "usual suspects" are here in this version of shrimp scampi, plus the addition of bacon! Serve over cooked fettuccine, linguini, or the pasta of choice, and crusty bread, so you can scoop up every drop of the yummy sauce! A green salad, or some sauteed zucchini, will fill out this meal beautifully.

- Preheat the oven to 425 degrees F (220 degrees C).
- Place bacon in a 12-inch oven-safe skillet over medium heat; cook and stir until browned and crispy, 7 to 8 minutes. Remove bacon, leaving the drippings in the skillet.
- Melt butter in the same skillet and add chopped garlic. Cook and stir until garlic is fragrant, 1 to 2 minutes. Pour in white wine and cook for about 2 minutes. Stir in mustard until well combined.
- Remove from heat, add shrimp in a single layer, and bake in the preheated oven until the shrimp are curled, pink, and no longer translucent, 10 to 12 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain.
- Serve cooked shrimp over pasta, sprinkle with bacon pieces, and garnish with parsley.

BACON SHRIMP SCAMPI APPETIZER
This is a very delicious appetizer. Your friends will be very pleased if you serve this at your next gathering. I absolutely love it. The bacon adds a delicious accent to this Scampi dish.

Steps:
- 1. Peel the shrimp,and butterfly it. Do this by gently running a knife in the back of the shrimp. Do not cut all the way through the back.
- 2. Cook the bacon until brown and crisp. remove bacon,and set aside. Chop the garlic and parsley.
- 3. Remove half the bacon drippings. Add the 5 tablespoons of butter until melted. Add the chopped Garlic,pinch of Cayenne pepper, and shrimp. Cook for a couple minutes on both sides.
- 4. Add the wine,and cook for another 2 minutes. If using a cast iron skillet. Sprinkle the bread crumbs,bacon,and parsley on top. Place under broiler until crumbs are browned,or pour the shrimp/wine mixture in to a small casserole dish. Top with the bacon ,bread crumbs,and parsley. Place under broiler,and brown. Serve
BACON SHRIMP SCAMPI PASTA

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until nearly tender, about 8 minutes.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp, about 4 minutes. Drain on paper towels, leaving about 1 1/2 tablespoons grease in the skillet.
- Add garlic to hot grease and cook until fragrant, about 30 seconds. Add shrimp and sprinkle with red pepper flakes. Cook until just cooked through and pink, about 2 minutes per side. Remove from the skillet and set aside.
- Pour chicken broth into the hot skillet, and cook for about 1 minute. Stir in heavy cream, and bring to a simmer, about 2 minutes. Reduce heat to low, whisk in Parmesan cheese, and cook until sauce starts to thicken, about 2 minutes.
- Drain spaghetti, reserving 1/2 cup of pasta water.
- Return shrimp and bacon to the skillet and simmer until heated through, about 1 minute. Add spaghetti and toss all ingredients together. Whisk in some of the reserved pasta water if sauce is too thick. Season with salt and pepper.
- Garnish with chopped parsley and serve with a fresh lemon wedge to be squeezed over the pasta.
