Desserts were never a large part of the African diet. For a long time, sugar was really expensive. Desserts were usually reserved for Christmas. This is a fairly healthy and easy to fix dessert. Recipe from Angela Shelf Medearis.

Steps:
- Preheat the oven to 425 degrees F.
- Cut off the ends of the bananas and place the unpeeled bananas on an ungreased cookie sheet. Bake for about 15 minutes, or until their skins burst and turn black. Discard the skins (once cooled a bit) and cut the bananas lengthwise.
- Mix the melted butter, brown sugar and lemon and then drizzle it over the cooked bananas. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
- Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.
- Bake in the preheated oven until heated through, 10 to 15 minutes.

- Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
- Serve with a scoop of ice cream and any melted chocolate that has escaped!

- Preheat the oven to 400 degrees. Peel the bananas and slice in half lengthwise. Lay the pieces into a buttered 9-by-13-by-2-inch ovenproof dish. Pour the lime juice and rum evenly over the bananas. Sprinkle on the cinnamon, nutmeg, and brown sugar. Dot on the butter, if using, and bake for 10 to 15 minutes. Serve hot, topped with a tablespoon of fresh cream or ice cream.

- In a small bowl combine sugar, melted butter, lime juice, cinnamon and nutmeg.
- Brush bananas with about 1/4 cup of butter mixture.
- Place bananas on center of a clean, oiled, hot cooking grate. Grill 2 to 4 minutes, turning once halfway through grilling.
- Slice grilled bananas and place slices in a flameproof dish.
- Pour remaining 1/2 cup butter mixture into dish.
- Place dish on center of cooking grate. Cook 5 minutes. Remove dish from grill.
- Quickly pour rum over bananas. Light rum with long matches.

- Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
- Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.
