MAYONNAISE BAKED FISH
Really simple recipe that even pleases the non fish lovers among us! My favorite fish to use is tilapia, but any mild, white fish will work nicely.

Steps:
- Preheat oven to 400°F.
- Place fish, in a lightly greased 9x13 baking dish.
- In a bowl, combine mayonnaise, butter, onion, cheese, lemon juice, Old Bay, and pepper. Mix until a thick paste is formed.
- Spread mixture evenly over fish filets, then top with bread crumbs.
- Bake for about 10 minutes, or until fish is flaky.
- To finish cooking, place fish under the broiler, for another 2-3 minutes, or until fish is golden brown.

MAYONNAISE BAKED FISH

Steps:
- 1. Preheat oven 400 degrees Brush fillets with olive oil
- 2. Mix together the rest of ingredients except panko. spread on each fillets.
- 3. Press each fillet in panko bread crumbs and place in baking pan. Panko is only on one side.
- 4. Bake for 10 minutes or until done. Finish in the broiler for 2 minutes
BAKED BLUEFISH
A great, easy way to make bluefish, one of my favorites. Also works with other meaty, firm, flavorful fish. You can vary the herbs, or use a spice mix such as Old Bay or Cajun seasoning.

Steps:
- Preheat oven to 350°F.
- Place fillet in foil lined pain. Salt and pepper to taste.
- Spread mayonnaise over the fillet.
- Sprinkle with dill, to taste.
- Slice lemons thinly and lay slices over the fillet, covering most of the area.
- Bake until flakey and tender, about 30 minutes.
BAKED BLUEFISH

- Pre heat oven to 450 degrees Trim dark areas from bluefish filets. Rinse under cold water and pat dry. Place filets on sheet pan skin side down and slather generous even coating of mayonaise on top of fish. Salt and pepper and geneous sqweeze of lemon juice. Place in top third of hot oven and bake until bubbly and brown on top about 10 minutes depending on thinkness.
BAKED BLUEFISH WITH SWEET MUSTARD GLAZE

- Preheat oven to 375 degrees. Lightly oil a baking dish large enough to hold the fish in a single layer. Place the bluefish skin side down in the dish.
- In a small bowl, combine the mustard, sugar, tarragon and soy sauce, and spread evenly over the fish.
- Bake about 20 minutes, until the fish is opaque when flaked in the center with the tip of a knife. Serve at once.

BAKED BLUEFISH
Steps:
- Preheat oven to 500 degrees F (260 degrees C).
- Trim all of the dark meat from the fillets. Rinse in cold water, dry and sprinkle with salt and pepper. Combine stuffing mix with boiling water and 1/2 cup melted butter.
- Cover a baking sheet with a lightly greased double thickness of aluminum foil. Spread stuffing mixture on top of foil. Place fillets on top of stuffing. Brush fillets with 2 tablespoons melted butter and sprinkle with minced onions. Top with dill springs and crimp together edges of tin foil to seal.
- Bake on center self of preheated oven for 10 minutes, reduce oven temperature to 400 degrees F (200 degrees C) and bake for an additional 60 minutes.

BROILED BLUEFISH WITH TOMATO AND HERBS
Steps:
- Preheat broiler. Line rack of a broiler pan with foil.
- Put fish skin sides down on foil and sprinkle with pepper and 1/4 teaspoon salt.
- Whisk together mayonnaise, lemon juice, dill, and chives in a small bowl. Spread evenly over fish, then cover with tomato slices, overlapping slightly, and sprinkle with remaining 1/4 teaspoon salt.
- Broil fish 3 to 4 inches from heat until just cooked through, 12 to 15 minutes.
SUZANNE HART'S BLUEFISH WITH GARLIC MAYONNAISE

- Preheat the broiler to high.
- Broil the garlic cloves until they are tender, peel the skins and mash to a paste.
- Add the paste, vermouth and horseradish to the mayonnaise. Stir in the cream and blend well.
- Select a flame-proof baking dish large enough to hold fish in one layer. Coat both sides of the fillets with the garlic mayonnaise and place in the dish, skin side down. Place under broiler about 5 inches from the heat. Cook 5 to 7 minutes, depending on the thickness of the fillet. The fish is done when it flakes easily with a fork.
- Sprinkle with tarragon and serve immediately. Serve additional garlic mayonnaise on the side.

BAKED BOSTON BLUEFISH
From an easy recipe card from the fish counter. Boston Bluefish is considered an oily fish with a rich, strong flavor and less white meat. The fat is distributed throughout the flesh keeping it moist during cooking. FYI-If you've never had bluefish before, it's strong taste doesn't work with any preparation the way a milder fish might. I used to have it broiled rather simply, with butter and lemon and a touch of paprika, which is fine but this will be a nice change of pace.

- With the fish opened, place parsley, green onion, herbs and celery on flesh and season with salt and pepper.
- Close fish over but do not tie.
- Place in baking dish and sprinkle with oil and lemon juice.
- Bake 14 minutes in the hot oven.
