- Preheat the oven to 325˚ F. Make the crust: Wrap the outside of a 9-inch springform pan with foil. Butter the inside of the pan and line the bottom with gingersnaps, breaking them as needed.
- Make the filling: Beat the cream cheese, sugar, orange zest and salt in a large bowl with a mixer on medium-high speed until fluffy, 3 to 5 minutes. Beat in the eggs, one at a time, until just combined, then beat in the peach nectar. Pour the filling over the crust and bake until set but the center still jiggles slightly, 1 hour to 1 hour 15 minutes. Transfer to a rack and let cool completely, then refrigerate 8 hours or overnight.
- Make the topping: Toss the peaches with the orange juice and sugar until the sugar dissolves. Spoon over the cheesecake.
BAKED PEACH CHEESECAKE

- Whisk 4 egg yolks with 125g icing sugar and the vanilla sugar until light and fluffy. Scald the orange with hot water and grate off the zest.
- Sift the plain flour and potato flour and tip them onto a pastry board or lightly floured worksurface, together with the baking powder. Grate over 250g of the butter and chop it through the flour with a knife and then rub it in to make the mixture more like crumbs. Pour on the yolk mixture and orange zest and bring the mixture together, then knead to a soft dough.
- Cut off a third of the dough, wrap it tightly and put it in the fridge. Roll out the remaining dough and use it to line the base and sides of a 26cm springform pan that you have already lined with a circle of buttered baking parchment. Put the tin in the fridge for 20 minutes. Heat the oven to 180C/fan 160C/gas 4. Line the dough with baking parchment and fill with baking beans to keep the sides in place, then bake the base for 10-15 minutes.
- To make the filling, push the curd cheese through a metal strainer. Beat the remaining butter until light and fluffy, add the cheese, 8 egg yolks, 80g icing sugar, the pudding powder and orange extract. Mix for about 2 minutes until fluffy. Beat 2 egg whites with a pinch of salt until stiff and beat in the remaining icing sugar to make a stiff meringue mixture. Fold the egg whites into the curd mixture.
- Beat the remaining 3 egg whites with the caster sugar until meringue-like. Unwrap the raw dough and grate it on a large-tooth grater. Spread the cheese mixture into the baked base. Drain the peaches, cut them into smaller pieces and put them on top of the cheese filling. Cover the dough with meringue, then sprinkle a little grated pastry on top. Knead the remaining dough, roll it out, cut out thin strips and arrange them in a lattice pattern. Bake for 50 mins-1 hr. Cool in the turned off oven for 40 mins before removing. Cool completely.
PEACH MELBA CHEESECAKE

- Line the base and sides of a 20cm loose-bottomed or springform tin with baking parchment - use smudges of butter to help the paper stay in place around the sides. Put the biscuits in a plastic food bag and crush to crumbs using a rolling pin, then mix thoroughly with the melted butter. Tip into the prepared tin and press down firmly to create an even base. Chill while you prepare the filling.
- Put the soft cheese, icing sugar and vanilla in a bowl, then beat with an electric mixer until smooth. Tip in the cream and continue beating until mixture is combined. Scatter over 100g of the raspberries and half of the peach chunks. Using a spatula, fold in with just a few folds - as you assemble the cheesecake they'll ripple through more.
- Spoon the cream mixture onto the biscuit base, working from the edges inwards. Smooth the top of the cheesecake down with the back of a dessertspoon or spatula. Leave to set in the fridge overnight.
- In a food processor, blitz 250g of the remaining raspberries, sieve, stir back in 1 tsp of the seeds, if you like, and sweeten to taste with icing sugar. Add enough water or canned peach juice to make it saucy and chill until serving.
- Bring the cheesecake to room temperature about 30 mins before serving. If using a loose-bottomed tin, unmould by placing on top of a can, then gradually pull down the sides of the tin. Slip the cheesecake onto a serving plate, removing the lining paper and base. Scatter the remaining raspberries and peach chunks over the cheesecake, dribble over some of the sauce and serve the rest alongside.

- Preheat an oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish.
- Beat the baking mix, vanilla pudding mix, milk, butter, and egg together with an electric mixer in a bowl for 2 minutes; pour into the buttered dish. Chop the peaches and scatter over the mixture.

NO-BAKE PEACH CHEESECAKE WITH WHEAT THINS CRUST
The salty-sweet crust on this no-bake peach cheesecake recipe is not to be missed. This is the best summer dessert-no oven required.

- Line bottom of a 9"-diameter pie dish or springform pan with a parchment paper round. Pulse 3 cups Wheat Thins (about 6½ oz.) in a food processor until finely ground. Add 1 Tbsp. granulated sugar and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt and pulse to combine. With motor running, drizzle in ½ cup (1 stick) unsalted butter, melted, slightly cooled, and process until combined and crumbly. (Alternatively, you can crush crackers in a large resealable plastic bag with a rolling pin until finely ground. Transfer to a medium bowl and stir in sugar and salt, then butter.)
- Transfer mixture to prepared pan and press firmly into bottom and halfway up sides with a flat-bottomed measuring cup or glass. Chill crust in freezer while you make the filling, at least 30 minutes. Do ahead: Crust can be made 2 days ahead. Keep frozen.
- Using an electric mixer on medium speed or a large whisk, beat 12 oz. cream cheese, room temperature, and 6 Tbsp. sour cream or plain whole-milk Greek yogurt in a large bowl until very smooth. Add 6 Tbsp. powdered sugar, 2 tsp. fresh lemon juice, 1 tsp. vanilla bean paste or vanilla extract, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt and beat until incorporated.
- Using clean beaters or whisk, beat 6 Tbsp. chilled heavy cream in a small until stiff peaks form. Vigorously stir ½ cup peach or apricot jam in another small bowl with a spoon to loosen. Using a rubber spatula, fold whipped cream and jam into cream cheese mixture.
- Spoon filling into chilled crust and spread into an even layer. Cover cheesecake and chill at least 8 hours and up to 12 hours. (If you are in a hurry, you can freeze 2 hours, then chill in refrigerator 3 hours).
- Just before serving, toss 3 large peaches, thinly sliced, ¼ cup (packed) light brown sugar, remaining ½ tsp. vanilla bean paste or vanilla extract, and remaining ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a medium bowl. Let sit until juicy, 30-40 minutes.
- Slice cheesecake into wedges, wiping knife clean between cuts, and top with peach mixture. Do Ahead: Cheesecake (without peach topping) can be made 3 days ahead. Keep chilled, or freeze up to 2 weeks.
