- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. Meanwhile, crumble sausage into a large skillet; add onion. - Spread the vegetables in a single layer in one or more large shallow roasting pans; do not crowd them or they will not brown.

- Carefully pierce potatoes with a fork. On a baking sheet oil the potatoes well and sprinkle with salt.
- Bake for one hour. If making more potatoes, an additional 15 minutes per potato is needed.

Steps:
- Preheat oven to 375°F.
- Put oil in skillet and place over medium heat until hot.
- Brown sausage on both sides.
- Place sausage in between layers of paper towels to get out as much of the grease as possible.
- Spray deep baking dish with Crisco and place sausage into it.
- Brown potatoes, (but do not fry until done) in the sausage grease left in skillet.
- You may need to add a bit more oil.
- Follow the same paper towel method as you did in step #3. This time with the potatoes.
- Place potatoes on top of sausage in deep baking dish.
- Bake at 375°F until potatoes are soft (about 45 minutes). Check often, as not to burn.
- Place a layer of sliced cheese over top when potatoes are soft.
- Put back in the oven until cheese is melted (about 5 minutes).
- Serve and enjoy.

HAM, CHEDDAR, AND POTATO GRATIN

- Preheat an oven to 375 degrees F (190 degrees C). Butter a shallow 3-quart (3-liter) baking dish.
- In a small saucepan, combine the broth, cream, garlic and sage. Bring to a boil, then reduce the heat to low and simmer, uncovered, for 15 minutes.
- Meanwhile, trim any fat from the ham steak, if using, and remove and discard the center bone. Cut the ham steak or baked ham into 1/2-inch (12-millimeter) dice. Arrange one-third of the potatoes in a layer on the bottom of the prepared dish. Top with half of the diced ham and one-third of the shredded cheese. Repeat the layers of potatoes, diced ham and shredded cheese. Top with the remaining potatoes and the remaining cheese.
- Remove the broth-cream mixture from the heat. Remove and discard the garlic cloves. Season the broth-cream mixture to taste with pepper and pour over the layered vegetables, distributing it as evenly as possible. Bake, uncovered, until the potatoes are tender when pierced and the top is brown, about 1 hour. Remove from the oven and let stand for about 5 minutes before serving.
SAUSAGE AND CHEDDAR BAKED POTATOES
Steps:
- Preheat the oven to 350 degrees F.
- Using a paring knife, poke 3 small slits into each potato. Bake in the oven for 1 hour and 15 minutes. Remove the potatoes from the oven and turn the oven temperature up to 425 degrees F. Let the potatoes cool for 5 minutes.
- Using a fork punch some holes in the top of each potato. Press inward on the ends of each potato so that the tops break open. Divide the apple sauerkraut evenly between the potatoes and then top them with the sausage and Cheddar. Arrange the potatoes on a sheet pan and bake until the cheese is melted, about 5 minutes. Remove from the oven to a serving platter and serve.
SAUSAGES WITH POTATOES AND HOT PEPPERS
Steps:
- Scrub and dry the potatoes, but don't peel them. Slice them lengthwise into sticks and wedges, about 1/2 inch wide (French-fry size).
- Pour the olive oil into the skillet and set over medium-high heat. Scatter the garlic and peperoncino flakes in the oil. Stir and toss the garlic for a minute or so, until lightly colored, then, with a slotted spoon or skimmer, scoop all the cloves from the pan and reserve. Strew the sliced pickled peperoncini in the oil and toast them, stirring, for about a minute, just to get them sizzling, then scoop them out-letting all the oil drain back into the pan.
- Scatter the cut potatoes in the skillet, and toss them in the flavored oil. Season with 1/2 teaspoon of salt, and cook for 6 minutes or so, over moderate heat. Toss and turn them frequently, until lightly crisped on all sides.
- Push the potatoes to the side of the skillet, and lay all the sausages in the pan. Cook for 5 or 6 minutes, rotating and shifting the sausages until they're sizzling and lightly browned on all sides; turn the potatoes as needed so they don't burn.
- Cover the pan, lower the heat, and keep the potatoes and sausages sizzling and caramelizing slowly for about 20 minutes, turning and moving them in the skillet now and then. Remove the cover, and scatter the reserved garlic and peperoncini all over. Taste a potato, and season with more salt if you like. Cook uncovered for another 10 minutes or so, over low to moderate heat, until all the potatoes and sausages are caramelized and crisp on the outside, and tender and fully cooked inside.
- Serve hot (and spicy).
BAKED SAUSAGES WITH POTATOES AND CHEDDAR
This simple, comforting dish relies on the use of good quality sausages as the main seasoning comes from them. I like to use garlic sausages, but choose your favorites. It is easily assembled and with the addition of a side vegetable you have an entire meal. - Cut each sausage into three chunks.
- Peel the potatoes, and slice each the thickness of one finger.
- Mix the sausages, potatoes, onions, olive oil, salt and pepper together in a large bowl.
- Transfer the mixture to an oven-proof baking dish large enough to hold it in one layer.
- Place in oven and bake for 45-60 minutes until the sausages and potatoes are cooked through and browned, stirring two or three times during this time.
