Steps:
- In a pitcher, combine the Simple Syrup, vodka, lime juice, and club soda. Pour into ice-filled glasses and garnish with mint sprigs.
- In a small saucepan, over medium heat, combine the sugar, water, and mint leaves. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using, pressing on the mint leaves to extract as much syrup as possible.
FRESH BANANA DAIQUIRI
A nice change of pace from the usual strawberry daiquiri.

CUBAN MOJITO
This is a traditional mojito recipe, very similar to the drinks I enjoyed in Varadero, Cuba. The muddling and the order of the ingredients helps ensure that all the flavors are well blended. Serve with a straw and a decorative stir stick to keep the different flavors well mixed together. Mint sprigs may be used for a garnish instead of lime wedges. Enjoy!

- Place 1 teaspoon of sugar into each of two 12 ounce glasses. Squeeze the juice from a lime wedge into each glass, drop in the wedge, and add 2 sprigs of mint. Use a spoon or muddler to mash the sugar, lime juice, and mint together in the bottom of the glasses. Fill each glass about half full with crushed ice. Pour 1/4 cup rum into each glass. Fill the glasses with club soda, stir, and garnish with additional lime wedges.

THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

- Peel the banana and break into pieces, placing it in a blender with the rum, lime juice, sugar, chopped mint and ice. Blend until smooth and creamy.
- Add the club soda and blend for a few seconds to mix.
- Pour the mojito into two tall glasses. Garnish each with a sprig of mint.

SPICY MOJITOS
Steps:
- For the jalapeno simple syrup: Add the sugar, jalapeno and 1 cup water to a saucepan. Bring to a boil, stirring to dissolve the sugar. When the sugar is dissolved, remove from the heat and let cool for 1 hour. Remove the jalapeno before using.
- For the mojitos: Divide the mint leaves between two pitchers, and muddle. Squeeze the juice of 1 lime into each pitcher, then add the simple syrup, evenly divided. Fill the pitchers with ice and top off with club soda. Add the rum to one of the pitchers. Stir and serve.

"The mojito (mo-hee-toe) was concocted in the 17th century by Sir Francis Drake. While crusading around the Caribbean when his stock of whiskey ran dry (which he always drank with mint and a little sugar water), Sir Francis substituted rum for his whiskey and the mojito was born." Officially, however, Cuba claims to have invented the mojito in the teen years of the 20th century. It was one of Ernest Hemingway's favorite libations when he visited La Bodeguita in Havana. - Place lime wedges and mint leaves in a pint glass.
- Muddle with the handle of a wooden spoon for 30 seconds.
- Add simple syrup and white rum.
- Fill glass with ice and top off with club soda.
- Shake or stir gently.
- TO MAKE SIMPLE SYRUP:.
- In a small saucepan, combine 2 parts sugar to 1 part water.
- Heat until sugar is dissolved.
- Cool before using (this keeps in the refrigerator for 1-2 weeks).
- For a fruity twist to your mojito, use flavored rum, such as mango, banana, or pineapple.
- NOTE: Muddle means to simply bruise or gently pound the limes and mint leaves to release their juices and essence. You can buy a muddler, which looks like a tiny baseball bat or billy club, at any good restaurant store.

- Place mint leaves in a large drinking glass. Add 1 lime wedge; crush together with a muddler to extract juices. Add 1 more lime wedge and sugar; mix with the muddler until sugar is dissolved. Remove lime peels from the glass.
